Chicken not my favorite
12/27/2005 at 07:50pm
User: Jenny from Madison, WI    User Rating:
Well, sorry but I can't give this one a higher rating. I liked the dressing, but my husband took a few bites and asked if he could use his normal ranch dressing. As for the chicken, I had a hard time making sure that the chicken was cooked through (we like ours very well done) without burning the coating. The coating didn't seem to have a lot of flavor.

Another good recipe

User: Brent from Springfield, IL    User Rating:
Ok i substituted the pecans for walnuts because the place i went the pecans were 9.00 for 1.5 cups which there was no way i was going to spend that much for pecans so i used walnuts instead. The chicken fingers were very good. Not as crunchy as i thought they would come up but still dang good. The salad dressing was awesome too. I definitly use the dressing for other things. Overall rachel a very good recipe that i will definitly fix again.

Made this tonight and it was really good, we all liked it. Made the bread too, and it was good as well! I think next time I might use spicy bbq sauce in the dressing to give it a little kick. Really yummy! Thanks!

I just tried this recipe and it's going into the "keeper" file. The combination of flavors used for the breading results in a delicious new twist on chicken tenders. The salad with the tangy BBQ dressing complements the tenders very well.

Pecan Perfection

Easy & so tastey we eat this while still hot, and enjoy the leftover chicken as a chilled snack! I wouldn't pour the dressing over the lettuce. It wilts super fast. Keep it in a seperate container for dipping & dressing when needed.

This was very good. The prep and clean up took a little longer than expected, but with helpers it is a nice family meal. The fingers need to be really toweled dry, otherwise the meal is heavier than it should be. The dressing is really good.

Ok, here's the trick to this recipe, make it with candied pecans. It really adds a lot of flavor. My boyfriend makes me make this at least every other weekend and whenever I go to potlucks this is requested. And if you take the oil out of the dressing, you can just use this for the chicken strips, no salad needed.

I can't believe how delicious this was! Actually, I should, since everything I copy from Rachel is out of this world! My son described it best. The chicken on it's own "needs something" the dressing is strange by itself. Together in a salad, they are WOW! To die for! We find ourselves discussing the food during dinner as if we were food critics. My husband thinks I should make "Rachel" my middle name since I don't have one. HA! We love you girl!

I made this last night. My husband scraped the plate clean. I cut up the left over chicken and dressed it with a sauce made from plain bbq sauce, honey, and Crystal's hot sauce. I toasted the leftover French bread, covered it with sharp cheddar and chives, and broiled until bubbling. Together, the bread and chicken made an out of this world sandwhich!

User: Anonymous    User Rating:
I loved the dressing of the salad, I used the pancake maple syrup (I dont know if its the same thing), but anyway, the chicken tenders turned out perfect. I would rather use another dipping sauce, and I think the tenders need something to kick the flavor, but it was really good still.

Husband calls it "Best Salad Ever"
09/11/2007 at 04:28pm
User: Anonymous    User Rating:
This salad with chicken tenders is so good! The combination of orange juice, maple syrup and BBQ sauce for a dressing is so weird, but makes a very good dressing that compliments the chicken very well. The chicken tenders are awesome, and the radishes and green onions work well to balance the sweet flavors of the dressing. My husband says this is the best salad he's ever had, and the recipe will be going into my keeper file.

Wonderful Flavor
09/04/2007 at 09:20pm
User: Janet from St. George, UT    User Rating:
This salad is a winner! It is easy to make and tastes absolutely delicious. I didn't have any "tangy" barbecue sauce and so used a honey barbecue, which gave the dressing a wonderful flavor. The chicken was very tasty and required only a few minutes to brown. I think 6-7 minutes is a little much for the chicken pieces I had, but I'm sure there are all types of thickness in different tenders. We will be having this salad again SOON.

the coating actually sticks

User: Anonymous    User Rating:
i love this recipe! i have the hardest time getting breading or other 'coatings' to stick to chicken and i had no problems getting the pecan mixture to stick. i'm also picky with my salad dressings, but loved this dressing with the salad. everything tasted great!

I loved this recipe. It was so delicious. I was not fond of the orange zest in the pecan coating though. Thankfully, I made 2 batches, one with and one without. The orange zest makes it taste strange. The maple dressing was pretty good. I will definitely make this again!

User: Ann from Royal Oak, MI    User Rating:
I took the advice from another review and baked the chicken at 425 degrees for 20 minutes and this was perfect. A very tasty chicken strip that wasn't greasy. We served it over salad and really enjoyed it. I think I will also try this alone, making the dressing without the olive oil and using it as a dippig sauce. Everyone, including my 2 year old, loved this dish.

My husband and 2 boys aren't too thrilled about salad for dinner, but my husband rated it "pretty good". Doesn't sound like much, but for a salad, that's an excellent rating! One of my son's loved the chicken, the other said he preferred the chicken nuggets from the freezer (gee, thanks). I loved it, and thought it was one of the best chicken and salad recipes I've had. We don't like radishes, so I skipped them, but added sliced avocado and a little shredded sharp cheddar. Yum-o!

We prepare this recipe often. We add craisins, sugared pecans, crumbled Danish bleu cheese, golden raisins, celery, green onions, and Granny Smith apple to give it even more ingredients. It is a great salad and better than the pecan chicken that I have ordered in restaurants. The dressing is also flavorful and my children love it, although they are persnickety about their salad dressings.

For being pretty simple, this has a lot of flavor. I used a Stonewall Kitchen Barbeque sauce which worked really well. I tried to make the whole 30 minute meal together and it took me much longer than that...mostly because I am not as organized as Rachael. The Chive bread and apple cake were also really simple but tasted great!

User: Janet from Cave Creek, AZ    User Rating:
I was very disappointed with this recipe. It took a lot longer than 30 minutes to fix, and it was very messy to prepare. The frying was the worst part. It would be much better to bake the chicken after it's coated at 425 for 20 minutes.

Wow!

User: CARA from charlotte, NC    User Rating:
Very yummy! I substituted Enova oil and that worked just fine. I've never deep fried anything before so I underestimated how much oil I would need & ran out - oops! I was only able to fry one batch of six tenders in far less than an inch of oil, so I had to cook them a few extra minutes & flip them over half way through. My husband was super impressed & loved the presentation!

I made the chicken and just a small amount of dressing on the side. I could have used twice as much chicken with the amount of breading mixture. Not a huge fan of the dressing. Here's how I made my salad the next day: chicken, craisens, mandarin oranges, extra pecans, bleu cheese and a balsamic vinegarette. This was excellent! Give it a try! (I got the idea from a salad that I had at a restaraunt once.)

Also I left the dressing on the side, wasn't sure if everyone would like it. It turned out for the best because some enjoyed the dressing while others passed on it.

Nice change of pace

This is a nice change of pace from the usual chicken recipe. I had whole chicken breasts rather than tenders so I cut them into strips. I would recommend using the tenders rather than doing this, or if you cut up whole breasts, made sure that your pieces are not too thick. I had a couple that were too big, and the nut coating burned before the pieces of chicken were cooked all the way through. The majority came out great, though

college girls love it-so will you

I made this for myself and 4 of my college girlfriends for our monthly dinner and it was a total hit. It was fun to make together and the chicken turned out perfect-tender, juicy, and just crunchy enough. We used the dressing as a dipping sauce for the chicken instead of on the salad. After dinner was over, everyone asked me to email the recipe ASAP!

I didn't make the chicken yet but tried the salad dressing. This dressing needs to be bottled. It is great!! Highly recommend.

I am constantly looking for new salads. I am not a big fryer, but this salad was awesome, especially the dressing. It was filling and took only about 25 minutes from start to table.

I have been making this recipe on occasion for some time now, my husband who is so picky it is incredible loves it. This is a man who never eats dressing on his salad but this recipe is different it is definitely a keeper and so fast. I have not served it to anyone yet who doesn't rave about it. Thanks Rachel I absolutely love your shows but especially 30 Minute Meals.

This was the absolute best salad I have ever tasted! My husband and daughter loved it as much....my son wouldn't even try it....he's 7.:) That night...I dreamed of it. It was that good! Only drawback... took me about an hour from start to dinner. Thanks so much!

I hate to cook. This is something that even my husband likes to help me make. He makes the salad and fries the chicken while I dredge it in the goodies. It's easy and really does take about 30 minutes - though with 2 people doing the work the total is about 35-40 minutes really. Plus, it's really good. We usually make it when we have company and there's always leftovers. Easily feeds 4 adults with big appetites.

I make a lot of Rachel Ray's dishes because I am always so pressed for time. They don't always rate high on my list - but this one is a winner! The chicken tenders with the pecan crust is delicious. It is a good mix with the maple dressing salad. My whole family enjoyed this one.

We loved this recipe! We substituted walnuts for the pecans and added arugula to the salad. What an unbelievable taste. To ensure a crispy chicken coating, make sure the oil is well heated prior to placing the chicken in the pan.

This recipe is delicious and really impressive for casual entertaining. The orange zest in the breading is wonderful, as is the dressing, which sounds odd, but is truly perfect for this salad. I agree that this takes longer than 30 minutes. This is one of RR's recipes that I actually follow to the letter every time because every ingredient adds something. This recipe made me a fan! I do wish it was healthier...then I could eat it all the time! Make this for friends! They will be amazed.

Made this recipe a few times as is which is great. I've also just made the pecan chicken tenders alone in place of my original chicken tender recipe and the kids eat them up. My husband likes me to make the dressing on the side so he can dip. Thanks Rachel

skip the salad

This is my husbands favorite recipe. When he's had a hard day at work I make this for him and he forgets all about his hard day. As another review says I would also skip the salad and the olive oil. Make the tenders and use the rest of the sauce for dipping. The secret to this recipe is a perfect medium heat for frying.
