Excellent "Eastern NC" BBQ flavor 07/13/2008 at 07:11pm User: Anonymous User Rating: I have been looking for a recipe that would be close to the Eastern NC BBQ that I used to eat when I lived in Chapel Hill, NC. Tyler provided that with this recipe. The final product is wonderful. Vinegar based BBQ is very hard to find outside of Eastern NC and this recipe will let me make pulled pork the "right" way anytime I like. The flavor of the pork is wonderful and the sauce is tangy with a kick. It enhances the flavor of the pork without over powering it like a sweet sauce can do. I buy a boned pork shoulder roast and cook it uncovered for several hours, depending on the weight. I usually make the mustardy sauce, because my husband loves it, but you can certainly substitute your favorite. I also make a horseradish mayo cole slaw, but decided to try the spicy one yesterday, and that was also delicious. Don't forget to use kosher salt in the rub. I add onion powder, too. This recipe can be made any time of the year - rain, snow, or shine - and it always tastes fabulous. What great party fare! Tyler's recipes never disappoint. I tried it after 5, the top layer was tender enough to pull but once I got below that layer it was ready to be pulled. Put it back in oven for another hour and it nearly fell away as I pulled it apart. Served it for our annual BBQ this memorial day weekend and everyone raved about it. Will include it again next year along with the slaw recipe which is killer!! When you put your meat in the pan to cook, put about a 1/2 a cup to a cup of chicken broth, a TBS of Lemon Juice, and a TBS of Distilled Vinager.... and Cover and cook for about 2 hours. Unfortunately, the pork turned out too dry. I can make better pulled pork roast in the slow cooker. The sauce was absolutely dreadful; I was actually choking as I made the sauce (too much vinegar). But I made the mistake a mixing in some of the the BBQ sauce with the pork. I mixed in much less that the half sauce in the recipe, and wished I put in even less. I not only found the vinegar taste too strong, but way too much mustard flavor too, and I had cut back on the mustard in the sauce recipe. So I suggest cooking the pork as described but finding a better BBQ sauce recipe. I've always thought the sauce had entirely too much vinegar in it, but I don't want it to be too sweet. After the first time, I only added 1/2 cup of vinegar (instead of 1 1/2 cups) and I double the amount of ketchup in the recipe. If I'm feeding people who I know enjoy sweeter BBQ sauces , I add just a touch of molasses. Hope this helps! I slow cooked a 4.85 lb boneless pork butt (crockpot) for 6 hours and it sliced beautifully. Next time I would slow cook for 10 to make sure it falls apart at the touch. Make sure there is liquid in the slow cooker so the meat does not dry out. The first try with the Vinegar BBQ Sauce was a bust for us - too vinegary as stated by some reviewers. I took one reviewers advice and used ? cup cider vinegar, ? cup yellow mustard, ? cup ketchup, ? cup of brown sugar but used 2 minced garlic clove (used a garlic press), ? tsp. cayenne, salt and pepper. It was wonderful - even my daughter liked the sauce (on her chicken fingers anyway). The sauce I will make again for sure. I've used this recipe three times for special celebrations when family and frieds come for lunch and they all inquire about the recipe. The best feature is the how simple it is to prepare using spices commonly found in everyone's kitchen. I have used two minced garlic cloves in place of garlic powder or garlic salt and it is just as delicious. I always prefer to use garlic cloves instead of the powdered. The spicy cole slaw is outstanding and a great complement to the pulled pork sandwich. I love this recipe and have shared it upon request. I was fortunate to be able to attend a Tyler Florence demonstration in Cleveland, Ohio at a food expo. Outstanding just like his recipes. For those of you who thought the sauce had too much vinegar: thats the style! I think if you are not expecting Vinegar based sauce or have never had it before, it would be overwhelming, but give it a shot - you can taste the meat so much better with this kind of sauce as opposed to a sticky, sweet barbecue sauce that drowns it out. The rub made a nice blackened crust on the outside and once pulled, those bits became little treats! The total time was about 5.5 hours (for 9lbs), with the first 3 hours wrapped in foil (to keep it moist) never turning it and then the last couple hours in a pan while basting it with it's own juices every 20 minutes. Instead of having my oven on for 6 hours, I put the pork in my crock pot on low for the same amount of time and it worked great. Meat is SO tender. The dry rub the night before is definitely worth it. The cider vinegar bbq sauce is also awesome and easy to make, but this would work fine with ANY bbq sauce you want. In fact, the meat is good enough all on it's own. The slow cooking causes the pork to fall apart. It's extremely tender! I like to freeze this in ziplock bags, so it's on hand for quick sandwiches. Everyone enjoys it; just in case, have some traditional Kansas City Barbecue sauce for those who don't like the mustard-based sauce. We love the mustard sauce, so I usually make 2 or 3 batches of it at once; it's great on chicken, etc. To make the sauce really exquisite, add a ladleful of the meat drippings & take a hand-blender to it to smooth it out. This pulled pork recipe, with the exception of the barbeque sauce I rate a 5 Star. I was cooking for a huge crowd and did not want to be in the kitchen forever. I took a chance to make this the same day as my gathering, and it was so simple and tasted so delicious. No one like the accompanying recipe so I had to quickly make a ketchup based recipe which was great. It only took me 4 hours to cook the actually pork and I was cooking 12 pounds. The pork needs to be rotated once or twice as well. The bbq sauce had entirely too much vinegar and needed to simmer for at least an hour. I cut the amount of vinegar in half, added a bit of worchestershire, and a can of beer. Delish! Also, I cooked the meet and then pulled it apart, placed it in a crock pot, covered it with sauce and then sprinkled about 3 tablespoons of brown sugar on top.
