WOW!! I made these burgers for a fourth of July cookout for 14! I was concerned about serving that many not having tested first, but I will use the basis of this recipe from now on! I was concerned about many saying that the meat fell apart on the grill, so I used 5 lbs. of beef for 14 nice burgers, and used the rest of the ingredients as called for. There really was a lot of bubbling and flaming going on because of the grease from the butter pats, so next time I will just put a "sliver" of butter into each patty. The flavor and texture were absolutely fantastic!! In the past, my burgers were always a little dry and not very flavorful, so this is going to be my recipe from now on!! Yum!!

I just used the ground beef and added a little worcestershire sauce and it was so fantastic! And so easy! Toasting the buns (buttered) in a 400 degree oven for a few minutes is a nice addition.

These are the best hamburgers I've ever made. I used to fuss around with all sorts of additions, but keeping it simple is really the key. Make sure you get meat that has some fat in it, if you get it too lean, these won't taste as good.

My husband is always in charge of the grill and burgers, but I told him I wanted to try Ina's recipe. I made these burgers last night on a grill pan on the stove and they were great! Very moist and flavorful. My husband told me that I am now in charge of burgers.

VERY moist burger with good burger flavor. I had to double the recipe the second time I made it as they flew off the grill the first time I made them. I didn't feel the need to run out and buy some Cross & Blackwell steak sauce, A-1 was just fine.

First off, I love Ina's recipes because they always turn out. (Some food network star's recipes do not). I rated this four stars as good, but not orgasmic like I expected. Still, better than most and I will make again.

So simple yet so delicious. I have experimented with it some as I always do and I use very small pats of butter and 4 yolks. Just trying to cut out some fat. They are so flavorful. I toast the buns, and put on a slice of cheese and tomato. I just can't make them any other way now!!! Thanks again Ina, you're simply the BEST!!!

Luv the very classy Ina and her yummy recipes. Tell the food poisoning idiot to wash its hands and buy fresh food. Also a dreadful change to a recipe does not make a failed Ina recipe. The fine art of cooking is often changes to a recipe. However, the ever-expanding size of our favorite chefs and Americans is dangerous. With intelligent well-thought out modifications to fats and/or carbs, I can still have fabulous Ina recipes.

I just found that particular reviewer completely full of it and idiotic to even state something like this. I actually laughed out loud! How does a recipe cause food poisoning anyways unless you are eating it raw or completely undercooked? Last I read you are suppose to cook this burger! So I am to be "bewared" of making this hamburger recipe so that I don't poison myself and my family.... LMAO!

Usually I skip the butter and they are still excellent. I use egg beaters (equivalent to 3 whole eggs) beacuse I am lazy and since they are pasteurised avoids the dodgy issue of food poisoning.

Count me among those who LOVE this recipe and I've made it a number of times. I'd never liked my own burgers before making them this way. Now I love them. I used only sirloin as I was making a very small quantity. I spread the seasoned burger out and put thin slivers of butter all over one side of it, then double it over and reshape it a bit sealing the edges. It is just juicy and delicious and NOT greasy or drippy. For people poisoning themselves and guests, I would check the source of the eggs and meat for quality and freshness as well as your handling of them. Bravo to Ina again!!!

First of all, I can't believe people blame food poisoning on this recipe. Yes, it does say to remove burgers just before they are done..they continue to cook after they are removed from the heat source when covered with foil and left to rest for 5-10 minutes. Eggs cook very quickly. I'd blame either insufficient cooking time or improper meat handling. I also don't understand how people think it's perfectly OK to rate a recipe if they changed it so much that it hardly resembles the original recipe at all. If after reading the ingredients you still don't realize that this isn't such a "heart healthy" recipe then don't cook it. Certainly don't rate it on health issues alone. I happen to enjoy this recipe. After making it exactly like Ina a few times I find that I prefer adding a few tablespoons of onion soup mix after sifting out the onions and omitting the salt.

These were *very* good burgers...excellent tips on mixing/forming, adding a bit of butter in the center, combining chuck & sirloin...I used A1 as I couldn't find what she recommended and was still quite pleased. The only reason I didn't rate it a five was the burgers didn't have my guests absolutely raving, and you'll probably want to "tinker" a bit with the recipe to get it absolutely perfect to your tastes.

We tried this recipe a week ago and the burgers were fine. We tried it again for 4th of July cook-out (only 4 of us, so food was straight from the fridge) and we have all suffered from food poisoning. No fun!! I am thinking that eggs carrying the salmonella baceria may not have enough time to be killed off in the grilling process. You will be wise to exclude the raw eggs. uggggg

We could not stop eating these! Moist and delicious, a little tricky to grill but entirely worth it. I substituted steak sauce with worchestershire that was what I had on hand. Awesome burgers!

This was my first attempt at making burgers. What a difference, this east reciepe was fun to follow and produced excellent results. Even my wife who only ever eats veggie burgers was smitten with these succulent burgers. I did place a slice of cheese on top of the burger as I plated them at the end before covering with tin foil and it turned out just right.

Great moist hamburgers. I used Worcestershire sauce as my steak sauce which worked out great. Next time I think I might add another 2 TB of sauce. I was a little hesitant on the butter so I only put in a sliver in the middle of each burger, but wish I would have added more.

I tried this with extra lean ground beef, egg beaters and spray butter. I am sure that the original version is much tastier, however, Ina's ideas made my low-fat burgers extra moist and flavorful.

I made these yesterday and thought they were pretty good, however, I can't find the recommended Steak Sauce Crosse & Blackwell. I've searched almost every store in my area, Bristol Farms, Whole Foods, Ralph's, Vons, Trader Joe's. Then I checked their web site and they didn't list a steak sauce. Will A-1 do the trick?

We all know the expression, Keep It Simple Smartie. These burgers are a perfect example. Only 2 non-traditional ingredients. We tossed in a bit of onion powder and flat leaf parsley. WOW! Great! For those of you who complained about the eggs, butter etc., I have just one thing to say: Stick with your dried out turkey or Boca burgers! I'm clueless as to why you would even TRY a recipe like this with your obvious paranoia. Go back and stick with your soy stuff. You might live longer, but we'll have more fun on the way!

I was a little nervous to try these out on a crowd after reading a few of the bad reviews. Well, they were easy! Easy and moist, and got several compliments. Who knew egg yolks could make a burger that tender...I can't figure out how anyone could mess up this recipe and call them awful. They're wonderful.

Can you say heart attack on a plate? 6 egg yolkes? She said that the yolkes were supposed to make this really moist, so then why did she need to put a pat of butter into each burger to "keep it moist." the butter just made them greasy and unappetizing. Sorry Ina, I usually live your recipes, but this one was not a winner.

I made the burgers today and they were delish. I used A1 sauce instead of the kind recomended but it was all good. The only thing is the butter dribbled out while cooking and when you bit into it but hey, who doesn't love butter! Anyways my pint is they were delicious and you should try it too. Tata~*~*

I didnt follow the recipes to the letter, I made them bigger then I think was suggested. I've never tried cooking a burger with the slice of butter in it, but it kept it more flavorful.

These were the best burgers! I've made them on 2 occasions and both times people have told me these were the best homemade burgers they've had. The only change I made was to allow the meat to flavor in the fridge for several hours before forming and grilling. Also used Heinz 57 brand steak sauce (its what we had on hand). I highly recommend these for the grilling season!

i made these for memorial day cookout but didn't actually eat a whole one - just grabbed a corner of one to taste. i was not impressed. it may however have been to the fact that the person on the grill cooked the crap out of them and they looked like hockey pucks!

Although I have not made this recipe, one good trick you can use in lieu of the butter is ice chips in the middle of the meat. Adds moistness without additional fat.

The steak sauce really made the burgers. I thought the butter did a great job keeping the burgers moist, and I didn't notice any flavor problems at all, contrary to the previous reviewers. My only complaint was that my burgers shrunk a little too much during cooking. Otherwise, we all loved this recipe!

I made these hamburgers today (July 4th). Five people had a burger. Four of the five absolutely hated them. The primary complaint was that butter and hamburgers do not mix in terms of flavor. Yes, the burgers are juicy, but who needs greasy butter in the middle of a burger? Try this receipe out before you serve it to guests!
