Can occasionally find them at Whole Foods, but, need to venture out to our Asian Markets. Also, I use the boxed broths. One time, I didn't use the "reduced sodium" broth and found the finished soup was too salty (even though I love salty things). Still good, but, too salty. As a former New Yorker, I depended on takeout for my Thai cravings. Now that I live in the country I make this recipe instead. It is delicious and can be prepared in the time it used to take the delivery guy to reach my door. When I follow the recipe as is, it tastes hot, but still a little bland even with the lime & kaffir leaves. I've been using about 2 tablespoons of tamarind paste along with this recipe. This gives it that tang that it needs. For those who really like it hot, I half just a single thai chile, mouths will burn!! It's one of my favorite soups. The underlying taste of the chile gives such a great kick to the soup. Really easy to make! For the kaffir lime leaves, freeze the rest you don't use. It was easy, full of flavor and quick. I did make this time w/chicken, cooked in another pot of water , shredded then added to the soup at the end. I went to 3 local Asian stores but couldn't find the kaffir leaves. No problem, the soup was excellent so don't let this stop you. For anyone who loves Thai food, I highly recommend this recipe.
