Despite that I forgot the garlic (for shame!) I still think it turned out good. Should be even better with garlic! Also, I omitted the pasta and the pancetta and it still turned out fine. wintery and delicious 12/29/2005 at 05:00pm User: jamie from yakima, WA User Rating: this was delicious. i loved it. i couldn't find some parmiango-reggiano so i used romano cheese instead, it was still a hit. i served sourdough bread with it, it was great for dipping into the soup. i also used regular bacon instead of panchetta, since my local grocery store didnt have it either. my husband thought it was alright, he was a little disappointed that i didnt add meat to it.. hes a meat guy. but i will defintely make it again here and there. thanks rachel again, for great recipes! I didn't want to use the kind of meat she suggested because of it containing nitrites (preservatives), so I used Applegate Farms brand chicken and turkey sausage in the spinach and feta variety. I chopped up two links and used it as directed in the recipe. I followed the other instructions, though, and it made a really good soup. I did not put the basil or green beans in as I did not have them on hand and I used frozen spinach instead of fresh. The flavor was amazing. I have to admit, I did not have enough chicken stock so I included one can of beef stock so this may have altered the flavor significantly but we all loved it. I sauted the vegies at least twice as long and cooked the soup for about an hour and fifteen minutes. The consistancy and concentrated flavors made for an incredible soup. I also added a rind from parm/reg. cheese while it cooked and what a wonderfull flavor it added. Just cook everything a little bit longer and enjoy the best green minestrone you ever had! It was so good we all took to sopping up the last bit of broth in our bowls with our bread. I varied the recipe slightly to fit our vegetarian diet. Eliminated the prosciutto and substituted vegetable broth for chicken broth. I also used 4 cups of water and 4 cups of broth instead of the 8 cups of broth that the recipe calls for and the salt level turned out perfect! Very filling soup that will become a permanent part of my repertoire. I love all the ingredients, so decided all together they would be great, and they are. Except that I'm not fond of zucchini, so I substituted carrots which provide great color contrast to the greens. I made sure the carrots were chopped small and added when zucchini should have been to give them adequate cooking time. Overall, this soup is delicious and made at least 6 servings. I've already stored it in separate dishes in the fridge for lunch at work this week. Thank you, Rachael, for your show and wonderful recipes. I watch and enjoy you almost daily when I get home from work - a good way to wind down and relax! Luckly for me I had fresh green beans, and a bag of spinach. Looks like alot of people deviated a little from the recipe, so Here are the changes I made. I used elbow macaroni instead of penne. I only had 3 oz of prosciutto so I added some sandwich ham (chopped) to make up the diff. I also threw in some fresh broccoli late instead of zucchini (I didn't have any and neede to get rid of the broc.). The broccoli doesn't cook for very long before it falls apart, but it still worked well (it IS a green soup anyway). I'd suggest to anyone to cut and refridgerate your items BEFORE you start.
