Everyone raved about it. I did the water bath (with 3 layers of foil) and still had some water get to the crust but no one noticed. The blueberry topping was to die for. (I added 3 tablespoons of cornstarch and used fresh berries). After reading many reviews, I decided to bake it for 65 minutes and then let it stay in the oven for 30 minutes after I turned it off. Refrigerated overnight and what I served the next day was divine! Give it a try! It was perfect and very moist. I made it with a triple berry sauce instead. To the crust, I added ~1/3 cup chopped walnuts and removed an equal volume of the graham cracker crumbs. To the filling, I added orange zest. For the cook time, I used 8.5" springform pan, baked for 55 minutes at 325 in the water bath, then turned off the oven and left the cheesecake in there for ~30 minutes, then cooled on the countertop for another 30 minutes, then into the fridge overnight. I had it the next day for a birthday party (no blueberry lemon sauce) and people loved it. It was smooth and creamy, and the center was soft but was still set. Maybe another 5-10 minutes at 325 would help. I took the leftovers to work the day after, and it was gone before lunch! I made lemon curd to put on top instead, but I will say the flavor was delicious! I have only 2 things to note: the first is that I used a 8" springform as directed and had quite a bit of batter and crust left (which I made a few mini cheesecakes out of-which was fine) but I'd use a 9" next time. The other to to realize that for hard-core cheesecake lovers who have specific favorites when it comes to the "texture" of your cheesecake, just know that this cheesecake is VERY soft and creamy. It's very good, but even though I left it in an extra 10 mins, and was barely jiggly like the recipe says it is, once it firmed and cooled, it was still incredibly soft. I say this to warn people who love the firmer cheesecakes (like myself) and are looking for a cheesecake that a fork can stand up to. Now I know, so for flavor I give it an A+, but for my personal taste I will look for a new cheesecake with a firmer texure. Still was a big hit though!! I haIved the recipe and used ~6in springform. I actually like my crust chocolatey (I think it also looks great w/ white color), so I added some melted bittersweet chocolate(30g), then reduced the butter in half. I also recommend covering top by a foil to prevent browning on top. It took more time to bake though. I think it's fantastic idea to put lemon zest because it enhances the flavor by hiding its cheesy-ness? I knew that I had to try it. I made it for a Superbowl Party gathering and the consenus was that this was the best cheesecake ever! I did increase the tempature to 350 degrees and cook for about 1 hr 15 mins and turn oven off and let set for another 15 minutes. I used 4-5 layers of foil around the outside of the pan, so water would not get in. For the sauce I used mixed berries and it turned out great. I also added about 1 tablespoon of sugar in the crust. I do my crust a little different tho.... 1 cup flour, 2 TBS sugar, 1 cup finely chopped pecans and cut in 1/2 a stick of butter flavor Crisco. Work together until it's crumbly and press into the bottom of your pan. Bake at 350 for 20 minutes and let cool before pouring in the cheesecake batter. It gives you more of a pecan sandie cookie crust. Also, for my gas oven, I bake this cake at 325 for 90 minutes then turn the oven off and leave the door shut for 1 hour. Then I put it straight into the fridge to chill overnight. We top ours with cold cherry pie filling. Instead of making my own crust, I buy the premade mini pie crusts. They work wonderfully. I also lighten up the recipe by using Philadelphia's 1/3 less fat cream cheese and light sour cream. The cooking time is about the same, 30-40 minutes. Instead of making the topping, I defrosted some mixed berries and put them on top. No one knew the recipe was light and everyone raved. It has been deemed my holiday treat from now on!! For anyone that is looking for a refreshing, delicious dessert, I highly recommend this one. It is simple, easy and delicious. A little hint...I ran out of mini pie shells so I made a crust out of oats that I ground up in a blender, 1/4 cup brown sugar and 1Tbsp cinnamon and used it in a large spring form pan. I prebaked it for about 20 minutes and no on knew the difference. It adds a wonderfully nutty tast to the cheesecake. It is mostly an easy recipe, as long as you have the tools. You most certainly need a springform pan, and a largeish roasting dish for setting the springform pan in. It seems like a hassle, but this cooking method really makes for a wonderful cake! I did have to cook it a touch longer than stated. I think I left it in an extra 15 minutes. (I did not have the pan filled with boiling water to begin with, only hot tap water). It was not browned on top, which concerned me. But after cooling and setting, it was absolutely perfect! And I've made TONS of cheesecakes before (I love sweets). Every time I make this particular cheesecake, it goes in a matter of minutes. Preparation time is about 10 minutes (it takes me longer to boil the water than to prepare the mixture). Make your life easier by letting the cream cheese reach room temparature before mixing. I questioned whether it was done or not but the recipe did say the cheesecake should be giggly. The blueberry sauce was too thin. A little corn starch remedied the problem. I made this recipe and this is now his favorite cheesecake! He says it is BETTER than any restaurant or professionally prepared cheesecake he's ever had. The consistency is creamy and smooth - absolutely perfect! The flavor is wonderful too. It was a little more complicated than the regular cheesecake I make, but now that I've made it once, it will be simple the next time. Just remember to start heating water when starting to prepare the cheesecake so that it will be ready when the ingredients are mixed. Also, the step to let it cool for 30 minutes in the pan, I left it in the over with the heat off and then removed it from the water and placed in the refrigerator for 30 minutes. The mixture did not set after refrigeration, even after 12 hours. I don't think that 45 minutes at 325 degrees is correct. I might try again at a slightly higher temperature and longer baking time. Also, I found that the graham cracker crust needs sugar added to it, it just didnt have a sweet taste to it. The Cheesecake turned out fabulous, eveyone loved it, and more than a few asked for the recipe. With all that said, before making the cake I read all the reviews and took their advice, I actually made the cake 2 days b4 our party (just to make sure all went well)..... I increased the cooking time to 1 hour at 350 and then let it cool in the oven for 30 mins (it stil jiggled when I finally took it out). After cooking it cooled in the fridge for a full 24hrs. It was as solid (no custard) and smooth as can be. Also do be sure to wrap your pan before pouring the batter, it really helps. All told, the cake went over great and I will definitely be making it again!
