I used this recipe for a charity event called "Men Can Cook". I used 8" tortillas, an electric griddle to finalize the pre-cooked mushrooms with the cheese and salsa. A home run.

The sun dried tomatoes in the salsa really add a nice flavor along with the smoky BBQ sauce. Tasted just as great re-heated the next day!

I made the salsa with a few alterations - only a tablespoon of barbecue sauce, 1 1/2 cups of corn and I made the quesadillas w/o the mushrooms. It's hearty enough to be a nice lunch or finger food for parties!

The quesadillas were very good, but I didn't like the barbeque sauce in the black bean salsa. I will make this recipe again, but I will try using a bit of picante sauce instead of BBQ sauce.

I followed the recipe using fresh thyme from my garden and one large portabello mushroom to make two large quesadillas. They were fabulous. My 16 yr. old daughter loved them. I plan on making these to take to my next ladies bunko night. We eat before we play. All members are fine cooks and I know this recipe will get raves from all.

A very tasty and unexpectedly filling dish. If you're from the Southwest, be sure that you're adding enough heat to the salsa. (Green chile goes well in it.)

This recipe was easy to make and so tasty! People loved that I had something so different at a bbq instead of just the standard side dishes. I had a lot of the salsa left over because I made a double batch and I used it later over cooked chicken tenders.

This really should be a 4 and a half star review because the quesadilla isn't anything to write home about but the salsa is out of this world worth six stars really. Make the salsa but find something else to dip in it.

What a colorful and easy recipe. The wild mushrooms really make the quesadillas different than the average, but the salsa is what makes the dish!! The BBQ sauce really gives the salsa an unusual burst of flavor which totally enhances the heat of the spices and nuance of the mushrooms. The salsa would be great over rice or on a salad too!

This recipe was terrific! My husband is a vegan but I'm not so on his quesadilla I added Tofutti cream cheese as the "cheese" and I got to keep mine with real cheese!

Both the warm black bean salsa and the quesadillas are easy and YUMMY. The only special ingredients that I did not have was the fresh wild mushrooms, I used crimini, and fresh thyme, which I found out keeps for a month or so. So even though it costs a little bit, it does last so you can use it 3 or even 4 times. Fresh is the way to go, do not used dry herbs for this one, it will NOT taste the same.

Rachael Ray is really on a roll lately! She has been combining the most unexpected flavors but all of the dishes have been exceptional. Unexpected in the sense that I never would of thought to combine them. What I like about her recipes is that the combinations of flavors are fantastic but it's usually stuff I already have in my fridge or pantry. Love that! The sharp white cheddar really pops against the thyme sauteed mushrooms. And the salsa was sizzling with the sundried tomatoes and BBQ sauce! A great South Florida dinner!

This meal was super easy and very good. As usual, I made some changes to suite my personal taste. I always use Rachael's recipes as a guide. I add or delete things that I like or dislike. For this recipe, I used much less BBQ sauce in the salsa. I also used less cheese to keep it on the lighter side. The warm salsa is a big hit with me. I like it with or without the BBQ sauce. For a non-veggie meal, try pan frying a little onion and diced chorizo sausage then add it to the rice. Very tasty!

All of these are cultivated mushrooms, not "wild" mushrooms. Call it an exotic mushroom quesadilla if you want. Stop the lies. Please. And I prefer to cover the entire tortilla with the mushrooms and cheese, then top it with another tortilla and finish it in the oven. I also used my own recipe for salsa, included some cilantro-lime creme fraiche, the meal wasn't bad. But, they were my recipes.

There is no need to oil a flour tortilla. Further, each ingredient was oiled prior to going into the tortilla. The ingredients were all such strong flavors that they didn't meld well. It would have been better with one strong ingredient and a mellow cheese.

amigos, TRY THIS RECIPE! it is SOOOOO worth cutting up all those mushrooms. and the salsa is delicious too, but i didn't use barbeque sauce in mine. by the way i actually WASHED the mushrooms (gasp) but they were perfectly fine! so have no fear of mushroom-washing.

the quesadillas were delicious, and I added chicken as someone else suggested. my husband and I hardly touched the salsa; we didn't even think the quesadillas needed it, although it was complementary and delicious. I used a regular tomato instead of the sun-dried, and I also subsituted some green pepper for the jalapeno.

I made this recipe for my family and they loved it! I am a vegetarian so I kept my quesadilla's mushroom-only, but for my family I added steak strips to them and they were enough for a main course. The beans were so so good... and I couldn't get enough of them.. Try this recipe.. you won't be disappointed

The dish was excellent, but we used a partial can of Rotel instead of the sundried tomatoes. Also suggest adding chicken strips. Overall, the dish was very easy to make and very tasty!
