The wild mushrooms really make the quesadillas different than the average, but the salsa is what makes the dish!! The BBQ sauce really gives the salsa an unusual burst of flavor which totally enhances the heat of the spices and nuance of the mushrooms. The salsa would be great over rice or on a salad too! The only special ingredients that I did not have was the fresh wild mushrooms, I used crimini, and fresh thyme, which I found out keeps for a month or so. So even though it costs a little bit, it does last so you can use it 3 or even 4 times. Fresh is the way to go, do not used dry herbs for this one, it will NOT taste the same. She has been combining the most unexpected flavors but all of the dishes have been exceptional. Unexpected in the sense that I never would of thought to combine them. What I like about her recipes is that the combinations of flavors are fantastic but it's usually stuff I already have in my fridge or pantry. Love that! The sharp white cheddar really pops against the thyme sauteed mushrooms. And the salsa was sizzling with the sundried tomatoes and BBQ sauce! A great South Florida dinner! I always use Rachael's recipes as a guide. I add or delete things that I like or dislike. For this recipe, I used much less BBQ sauce in the salsa. I also used less cheese to keep it on the lighter side. The warm salsa is a big hit with me. I like it with or without the BBQ sauce. For a non-veggie meal, try pan frying a little onion and diced chorizo sausage then add it to the rice. Very tasty! Stop the lies. Please. And I prefer to cover the entire tortilla with the mushrooms and cheese, then top it with another tortilla and finish it in the oven. I also used my own recipe for salsa, included some cilantro-lime creme fraiche, the meal wasn't bad. The ingredients were all such strong flavors that they didn't meld well.
