I doubled the minced garlic and used the couscous with the garlic and olive oil flavor packet. After I pureed the mixture, I added in the seasoning packet along with some, (I know, I know), gratd Parmasean cheese. (Gasp!)...a no no on seafood dishes but it went really well with the couscous. And I agree with someone else's post that it is filling. No side dishes necessary. Very nice presentation too with some finely chopped Parsley sprinkled over it and around the plate. It definetly had a great flavor and the couscous worked well with the shrimp. I cut the amount of olive oil in half to cut calories and it still worked out well. Also be sure to make sure the tomatoe mixture is cool before you puree it. Otherwise the blender lid gets quite hot when you are are holding it down. We made the couscous in a dutch oven and the canned tomatoes add a ton of flavor. I think the key to the shrimp was the lemon juice at the end. Can be made lower calorie by omitting the extra olive oil without any noticable difference in flavor. a splash of lemon juice and a quick addition of lemon zest more that compensated for the lower fat. My husband said what the heck is couscous??? He got up for a second serving of it that night. This was the second time I've tried it. My husband had thirds and says "You know hon...I like this Couscous stuff...you should make it more often"! It was a little work preparing the broth but well worth it. The shrimp was also delish! Don't leave out the lemon or the red pepper flakes...that really gave it a little kick. Does not taste like traditional "Red Lobster" scampi though...not near as buttery or garlicky. My greatest critic (finicky five y/o daughter) enjoyed the shrimp but wasn't big on the couscous. I think it actually may have been a little too flavorful for her..she likes simple tastes. So...if you like shrimp, are OK with bold flavors and are looking for something quick and easy-easy to prepare (about 30 mins) try this. Oh..and I also took a tip from a prev. reviewer....get the shrimp already deveined. I got it that way from Walmart so should be available pretty much anywhere. I was really nervous about using the clam juice, but it didn't have a fishy smell to it at all. It just added that certain something extra to the dish that made it great. I did have a lot of extra couscous afterwards. This dish is a lot more filling than it would appear to be, so don't worry about making any other side dishes. Seasoning your Shrimp in the end is the key. The lemon and red pepper give it the boost. I used wet, crushed red pepper(portuguese)instead of the dry. I love very flavorful food and I was worried that this would be too bland. I am so glad that I tried it anyway! This is a wonderful recipe - it is absolutely delicious! I did make a few minor changes that I don't think were even necessary. I added a bit of butter (about 2t.) to the oil when I sauted the shrimp. I also used Italian-herb flavored chopped tomatoes. My husband loved this recipe as well - he kept raving about it all through dinner. This will become a standard at our house.
