I made this for dinner, but only marinated for an hour. Even still, my husband thought that it was the best chicken that I have ever made. I added a few other spices, such as curry powder, and I thought it added a great addition to the original dish. Anyway, this is a very good dish which everyone should try!

Very Lime-y

User: Sarah from Franklin, TN    User Rating:
You can definitely taste the tequila and lime juice in the grilled chicken. It's worth marinating overnight, for sure. I made this last night for a Mexican themed dinner party and served it with spanish rice, black beans, and corn on the cob. It was a definite hit!

Wonderful Chicken Recipe... Great for Salads

User: Anonymous    User Rating:
I have made this recipe many times over the past 2 years, and it always comes out delicious. Because of my husband's preferences, I make the dish with boneless, skinless chicken breast and without jalapeno. Sometimes I refrigerate overnight to marinate, and other times I only marinate for a few hours when I am in a hurry. We like to slice up the grilled chicken breasts and serve on top of Caesar salads or mixed green salads with mandarin oranges and toasted almond slivers.

Pretty good!

User: Yoko from San Francisco, CA    User Rating:
I'm not a huge tequila fan so I wasn't quite sure how this would turn out but it was pretty good. I switched the breasts for thighs, and I didn't marinate quite as long as suggested (just 4 hours), and passed on the additional seasoning while grilling. With all that lime juice, the chicken had started 'cooking' just like ceviche!

I made this for a party it was so yummy. the more time it gets to marinate the better it is.I adore Ina she creates the best stuff.I added lime zest and orange zest to intensify the citrus flavor other than that it was perfect.

I made this dish a year ago and misplaced the receipe! So glad I saw it on Ina's TV list of programs. I think the folks that thought it too dry need to pick up an instant read thermomiter. A cook's best friend---no more guessing. I also grilled up avacado halfs that were dipped in oil, lemon, salt & pepper to make Michael Chiarello' s fab guacamole from his "Marinated Avacado" receipe. Margaritas definitely required!

User: Nancy from inglewood, CA    User Rating:
This is the best chicken I have ever had, I tried poking the chicken with a toothpick so that the marinade would go into the chicken and I got the best tasting most juicy chicken I have ever had. Be careful mincing the jalapeno or you will end up with burning hands.

some parts of recipe worked; some didn't

User: joy from manchester, MO    User Rating:
I marinated my chicken for 9 hours but I think it could have been longer OR the flavors need to be amped. Overall I was disappointed in the lack of flavor except in the skin which I didn't eat--just tasted. Next time I will use boneless breasts because skin was burning by the time the breast meat was done due to the bone and then we just cut meat off the bone so bone-in was not that essential to this recipe. I do think the flavor direction was going in the right direction (loved the lime and tequila) but as it stand this recipe will take some work to make it phenomenal.

Moist!

User: Linda from Pearland, TX    User Rating:
I thought this was great. One little note, though. I used six limes, and it came out to be about half a cup of lime juice, not a full cup like the recipe suggests. But, it looked like enough. And, the chicken was great. We marinated it overnight, and it wasn't one bit dry.

This chicken recipe was the best! All my 4th of July celebrants loved it (and some are very hard to please). I made the entire menu from this episode and NOTHING disappointed! Keep up the great work, Ina. I just love your style. P.S. I was amazed when I read the poor reviews. This seems to underscore my belief that people have varying tastebuds. Why else would there be turnips in the produce section? Ha!

After using this recipe with bone-in chicken (you can't find boneless chicken with the skin on), I was a little disappointed with the lack of flavor. Even after marinating for 24 hours, it just didn't soak in enough. It does however, work well with dark meat.

Very moist!

I marinated the chicken overnight for the best, most intense flavor. It wasn't as spicy as I expected with the jalapeno and the chili powder but still had an awesome taste!!! Tender but NOT flavorful:-(
05/08/2007 at 02:56pm
User: SHAN from Franklin, TN    User Rating:
I got this recipe out of Ina's Family Style Cookbook and was really excited to make it yesterday. We only had 4 breasts, so I only squeezed 5 limes and omitted the jalapeno (not into heat). I only was able to marinate the chicken 5 hrs, but it came out really nice and tender. The low rating comes from the major LACK of flavor. I really love most of what Ina does, but this recipe should NOT be in her cookbook. My husband and I agreed we have better recipes. Not sure what magic those who said they loved it did to the chicken...I followed the recipe very closely and the low reviews are very accurate unfortunately!! Chicken was perfect in terms of tenderness, so no need to marinate more, but too acidic...that coming from a lime fanatic. Pick another one for dinner:-(

I use boneless skinless breasts and marinade them 8 hours. I have used OJ from a carton when I don't have any fresh and no one ever knows. I grill the breasts with peppers and onions, basting with the boiled down marinade. Makes incredible fajitas. This marinade keeps the chicken from getting too dried out on the grill. Thanks again, Ina!

My husband and I really didn't care for this recipe. Something in it was just not right. We ate the chicken but I didn't even finish my piece. My husband said it was too harsh, and yet we had marinaded it overnight. Would oil have helped, as most marinades have oil in them? Don't know, I just feel the recipe is good enough to be worked on and revamped.

This was a great recipe! Loaded with tons of flavor and great as a leftover served cold from the fridge on a salad. I also used leftover chicken in Paula Deens Poblano Chicken Chowder and it was great paired with these flavors.

Esay to prepare. Looked good and smelled good. Tasted more like a Margritta than chicken. My family did not like it. I served it at a Sunday family dinner. I usually love Ina's recipes, but this one dissapointed. I marinated the chicken overnight, and had to grill it an additional 20 minutes (15 is *not* enough!) for it to be cooked, and it had practically no taste from the marinade. I tasted a bit of the chili powder, but on a whole, it just tasted like grilled chicken. Don't waste your time and $$ with this one.

The result was very disappointing since I usually like Ina's recipes. With all of the flavors that went into the recipe, some ingredients overpowered others and there wasn't a good balance(but it was moist though). I think it was a waste of good tequila and I won't be making this again.

Despite my wariness, I marinated the chicken overnight...and the results were as I expected--chicken ceviche. So, the chicken was ruined before it got to the grill. Still, we tasted the marinade beforehand and liked it and decided to try again. Next time, I marinated chicken and shrimp for just an hour prior to grilling. Both grilled beautifully and tasted great. My husband and I wanted fajitas, so I sauteed slices of red and green peppers and an onion, added some of the marinade and a tablespoon of brown sugar, then the sliced chicken to half of the vegetables, the shrimp to the rest. With grated cheddar, sour cream and the other typical fajita garnishes, the dish was a real winner. We liked the repaired result so much, we're having it again this weekend. It's now "company food."

OK, it would be easier if I had a juicer, it took a bit of time to get all the fresh juice in the marinade. But the rest of the recipe is a snap to prepare, and the results were definitely worth it. My chicken was moist and flavorful. To those who found it dry--make sure you're using chicken with the skin on, otherwise it will dry out more in the cooking. And watch the times carefully--I've never had a problem with dry chicken on my gas grill, as long as I don't cook it too long!

After reading the reviews I was excited about trying this recipe. I stuck with the exact recipe. But to say the least, my wife and I were disapponted at the results and flavor. The chicken did turn out moist but taste-wise it was just so so. I expected more flavor with all of the ingredients that were involved. I would have better enjoyed seasoning with just salt/pepper and garlic salt and drinking the tequilla straight up. I don't feel it was worth the effort. We also made the corn pudding which I liked and the key lime pie was excellent

This was not a bad recipe, but it wasn't as flavorful as I thought it was going to be. I have other marinade recipes which give a much better flavor and I will continue to use those. I don't think I'll ever use this recipe again, simply because I've made better chicken than this, but I must say that it's not a bad recipe. I could taste a faint hint of the Tequila in the chicken, and I could taste a little of the lime. Just not as flavorful as I thought it was going to be. It's just kind of average chicken.

I let this marinate for 24 hours, and it was excellent. I did change a few things though: 1. I tripled the recipe, as the original amounts didn't provide enough marinade 2. Lessened the amount of lime juice by 1/2 c. (so triple Ina's recipe, minus 1/2 c) 3. Increased the amount of OJ by 1/3 cup As with most of Ina's recipes, this one was a hit. I'm kind of put off by the time-limit thing though; where you can only get recipes for a limited time. It's sort of arrogant, and had I known that a few weeks back I would never have bought the Barefoot Contessa cookbook. It's a shame, because I love the show.

I found this recipe very flavorful, moist and juicy. I did make changes. I only marinated about five hours. I cut the recipe in half and marinated two boneless skinless chicken breasts (what I had on hand). I grilled them 10 minutes on each side (what she said to do on the show). They had a beautiful coloring and were surprisingly moist and tender. My husband did comment that while eating the chicken, he hit stronger pockets of lime flavor. I will definitely try this recipe again and use the boneless breasts with the skin still on and marinate overnight. I'll report if this makes a difference :). I made a "Traditional Black Beans over Rice" recipe from the back of the Bush's Best Black Beans can and served over rice. Very good compliment. Happy Eating!

This chicken my husband loved. I used a scott bonnett pepper just cut in half with seeds and white membrane removed. I used boneless, skinless chicken I already had on hand and it worked wonderful. We had rain so I used my grill pan inside. But this is the neat part I made red beans and rice with it. My husband always uses hot sauce, instead he used the marinate from the chicken. (I boiled the marinate and reduced it by half for health reasons, the raw chicken issue.)This make a wonderful sauce, do not throw it away with out trying this once. A real keeper.
