I cut the recipe in half since there are only two of us and it worked great. The biscuits are delicious on top and don't get soggy at all. It's also a perfectly seasoned dish. I used low sodium organic chicken broth and the chicken boullion as written and it wasn't too salty. Ina is the queen of making the most of simple ingredients. Try her jam thumbprint cookies. I halved the recipe for a dinner party of 4, and wished I had made the whole thing. I roasted the chicken the night before, shredded it, and threw it in the fridge. I also used fresh peas and sliced baby carrots, as I had them on hand. Like many others, I cheated and bought refrigerated biscuits, which I sprinkled with the chopped parsley and then brushed with egg. I didn't have the soggy biscuit problem that others did, but my stew was pretty thick. If you've made this before and it was too runny, cut the amount of broth you add to your roux (the flour and butter part). I also made the summer berry pudding to go with this. I had zero leftovers! Then while mixture was cooking on stove top I added 2 small fresh bay leaves. Other than that everything was status quo to recipe. Next time will do as others suggested & buy a cooked chicken. Make sure you measure your ingrediants. My large onion was 2 cups when chopped. I also had to thicken the stock a few minutes longer than the recipe calls for on a higher temp than low. I did not add the pearl onions, there's no way my son would eat it. Instead a added some frozen corn. Don't skimp on the salt, you'll need it for the flavor. The carrots were blanched for 2 minutes, but were a little hard still. Next time I will blanch them longer or just use the pea/carrot frozen mixture. The pearl onions were a little too firm for my DH so I will cook them a little first. The last thing is that I thought the sauce was a little too thick (it was the consistency of mashed potatoes), so next time I'll use more stock or less flour. The end result is great. Very rich and filling, and tasty! I might eliminate the pearl onions next time as it already has onions. I used store-bought chicken stock, and half & half instead of cream. You could save time by using ready biscuits, although the fresh parsley is key here. I may try this again when I have leftover chicken instead of roasting them, to save time. All in all, it was worth it and I'll make it again. To save some time (mid-week after work), I substituted a couple of rotisserie chickens, instead of roasting my own, and used Pillsbury bisquits (which I baked separately so they wouldn't have soggy bottoms). Turned out great that way as well. My husband loves it, but asked me to leave out the pearl onions after the first time, and we both liked it better without them. I make extra to put in the freezer. For added convenience, I use the meat from a store-bought rotisserie chicken (Costco), boil up the bones and skin for stock with aromatic vegetables for stock. In place of the blanched carrots and frozen peas I use a 16 oz. package of frozen mixed vegetables (peas, carrots, string beans and corn). It turns out perfectly every time and everyone loves it. Also I added 3/4 tsp. of dried thyme. I also used refrigerator biscuits (regular size not the Grands)but still brushed them with egg wash. I made the biscuits separately until almost cooked and put them on top of the stew for the last 5 minutes. Tasted better than any pot pie type dish I have previously made. I decided to take the easy route and use canned refrigerated biscuits instead of making them from scratch. Baked the biscuits on top of the stew for the maximum time suggested on the biscuit can. Biscuits were done on top, but incredibly doughy on bottem. If you do this, suggest you bake the biscuits separately and place them on the stew after they're baked. It was simple to prep and very easy to cook. I had 4 good sized boneless, skinless breasts in the freezer, so I substituted those for the split breasts and boiled them until they were done (about 40 minutes). Once cooled, I just continued to follow the directions. One suggestion; follow Ina's direction on using parchment or wax paper on the sheet pan. It will save you clean up time. My girlfriend had a baby and I took it to her without the biscuits on top. She popped it in the oven herself and put the uncooked bicuits on top for a quick dinner. The recipe is time consuming because of the chicken prep. In the future, I might buy some rotisserie or pre-grilled chicken breasts from my local gourmet store to cut down on the time. I would also use much less salt as I found it to be too much and so did the rest of my family.
