The strong flavor of the goat cheese pairs beautifully with the bland chicken. I cant, but if you can find chicken without the bones but with skin, that would be optimal. Definitely a keeper!

I made this dish 2 nights ago, and my husband loved it! I add some slices of tomatoes with the cheese, and it turned out delicious! Also, I made one with blue cheese since my husband doesn't like goat cheese too much. He said it was the most delicious chicken dish he's ever had! :) It is very juicy and tender! Thank you for such a wonderful recipe!

The goat cheese adds a wonderful tang to the chicken. The combination is delicious. Definitely a good recipe to serve guests on a cold winter night.

Truth be told, I DID over cook the chicken a bit as I am deathly afraid of under-done poultry as a rule. (I am a reformed vegetarian) But it was excellent. I love goat cheese, so this was right up my alley. I am not a big fan of chicken, but with this dish I am now. THANKS INA. planningon purchasing "Barefoot in Paris" soon............

A very tasty and savory dish....so easy to make! The great thing about the goat cheese is that it doesn't melt away to nothing, so you don't feel cheated! My bone-in chicken breasts were quite large, so I baked mine for 60 minutes. In addition to putting the cheese between the skin and the meat, I made a pocket in the chicken and added more of the cheese. I was generous also with the olive oil, salt and the pepper and used toothpicks to hold the skin and meat together. Will keep this recipe for my next company meal! Thanks Ina!

I do think Ina has a lot of good recipes however this was not one of them! I lover how juicy the chicken was but i would have liked if the skin was more crispy. And I also would have liked the chicken to be more flavorful! I do like her roast chicken recipe and thoose yummy coconut cupcakes.

This is a simple and savory dish that basically cooks itself. You spend 5 minutes getting it ready, put it into the oven, and in 40 minutes you have a delicious meal that looks much harder that it was. Great for company too!

This recipe is fantastic. I made it for a dinner party and was so pleased with the results. The chicken was incredibly moist and the goat cheese and basil really flavored the whole breast. My guests loved it and I did the whole thing the night before so there was no stress at all before the party, just like Ina said!! Even better this meal is very affordable, I bought 4 chicken breasts for less than I would have spent on 1 steak and my guests LOVED it!!! Thank you Ina!

I love making this dish. It is so easy and everyone loves it. Great flavors. Sometimes I make it with boneless/skinless chicken and sandwich the cheese and basil between a thin pieces for a lower fat option.

I think this is a good meal for anyday or company b/c it's quick and easy to make but looks and tastes special, giving chicken a new twist. I might slice the goat cheese a little thinner next time; I believe it would not alter the flavor in any compromising way and would even stretch the meal further. I would make this dish again.

I just served this for a small dinner party and it was a big hit! It was so easy to make and the cheese really made the chicken moist. The only thing I did differently was to marinate the chicken with the salt, pepper, 4 tbsp of olive oil, about a tbsp of Herbs d'Provincal (excuse my spelling) and massaged the chicken that way. I let it sit in the fridge for about 1.5 hrs while I prepared other things. It was really really good! Thanks Ina!

I didn't have herbed goat cheese, only the plain kind. I also didn't have basil, but this was still great. I served with couscous and peas. It was a delicious easy weekenight dinner.

I did not think this recipe was difficult at all! My husband loved this quick and easy chicken dish served with a salad for lunch. He thought I had gone out of my way to prepare a special meal for him. It only took minutes!! I also tried cooking it on the grill and it was fabulous.

I made this exactly as the recipe said the first time and loved it, but wanted to serve to a large dinner party and eating chicken breast with bones is not easy... so I substituted skinless boneless chicken breasts, brushed them lightly with olive oil and kosher salt, put the basil leaf on top, then two slices of the herbed goat cheese, and it came out perfect and was a hit with all my guests.

Made chicken with herbed goat cheese for dinner this evening. Quick and easy. Husband rated it "a keeper." I added sun dried tomatoes as a garnish. Next time I will also add oven roasted tomatoes (my favorite recipe is Martha Stewart's) or sun dried tomato spread to the stuffing under the chicken skin.

I tried this recipe last night and was quite impressed. The recipe was simple, not expensive, and a change to regular chicken. I never had goat cheese before so I had to get used to the taste but it was good. 2008 is the year for new and different things for me so this was a good way to start.

Made the recipe exactly as stated. It was moist and flavorful.The chicken breasts were large so it took about an hour for them to cook. If I could find boneless with skin on , I would use them.My husband doesn't like goat cheese so on his portion I used boursin cheese which turned out very nice. I will make again.

This is perfect for a weekend night when you want something quick. This was so incredibly succulent and surprisingly very easy to prepare with very little clean up afterwards. Thanks, Ina, for such a great dish. I followed the instructions to a "T", and it worked perfectly. I served it with her roasted cauliflower with parmesan and a bit of gruyere. Scrumptious - try these two - you'll love it. Jamieson was ill, so he wasn't able to try it, but Aaron Heinsman loved it (although he is a bit like Mikey, he'll eat anything!)
