He did not precook the shrimp and add them at the end. He cooked them in the same pan as the onions after he had softened the onions up for a few minutes. Either way - it would work. I followed the method he used on the show and it tasted great. To all the complainers in these reviews - chill out. In the USA, when you order "scampi," you generally expect shrimp sauteed in a garlic butter, served over pasta or rice. If you are looking for a low fat recipe, check out the tofu-loving cooks on this channel and quit your complaining. This is NOT a real Italian dish. For starters the recipe for pasta ai Gamberi is different. Scampi in Italian means langoustines. This thing is awful!!!!! Real Italian recipes are simple and good, unlike this butter and oil larded pasta. The second time I made it though I subsituted an equal amount of shallots for onions, and chicken stock for shrimp stock and found that I liked the stronger onion/garlic flavor with the more toned down shrimp flavor in the second version, but the original recipe would be great for shrimp lovers. Suggest you consider removing the tails- too much trouble to eat. Perhaps fully peeled shrimp. Even the "easy peal" variety took 1/2 hour just to clean. Oh, I also lightly floured the shrimp while I seasoned them- I saw this in a French Cookbook this morning, I think it added some body to the sauce, and some covered the shrimp and pasta well.
