What a simple and delicious dessert. I love how grilling the pineapple enhances the natural sweetness of it and the rum butter makes it a wonderful dessert. The marriage of that with the mascarpone is out of this world. Highly recommended.

I made this for Father's Day and everyone loved it. I also grilled peaches and it was about half and half as to who liked the pineapple or peaches best. I didn't have a vanilla bean so I used vanilla extract (a good one) and it was very good....got that from a Giada recipe. I will definitely make this again.

Made this for 2 special dinners and got great reviews from everyone. In fact, one guest wanted me to serve it with some type of cookie to soak up the wonderful butter rum sauce

I need to try all the other grilled pineapple recipes out there, but this one is so simple and it rocks my world. Even people who don't particularly care for sweet things will have seconds, thirds, and if you make enough, fourths.

My pineapple was still green and not ready for use, so I substituted white fleshed peaches for the recipe and it worked out great! I added a little sugar to the marscapone cheese mixture due to the fact that the peaches are not quite in season yet and not as sweet as the should be. I put a dollop of cheese on each peach half and then spooned the rum mixture over the entire dessert. HEAVENLY!!!.

I omitted the butter from the basting liquid, and merely brushed the pan with butter before grilling. You don't miss the extra fat, and the result was delicious. I was dissappointed that the cheese topping was so thick, even at room temp. I added some rum, but even that didn't manage to thin out the sauce. My guests just dabbed a little cheese on each bite, and it was delicious anyhow.

What a funny episode and what a great recipe. I had to have this right away. This was very easy and so tasty. I prepared this on a grill pan on the stove and it was still wonderful. I didn't have the blueberries. Will try them the next time, which will be soon.

Thisis a really easy, elegant dessert that you can prepare in no time. My learning point - let the marscapone acclimate to room temperature before working with it!
