I have brought these cookies to two gatherings and it was an enormous hit at both. With the second batch I added an extra tablespoon of Kahlua, otherwise the taste is nearly non-existant. Even with the extra liquor, make no mistake, this is a coffee lovers cookie. I would suggest instant coffee in place of the instant espresso (the recipe says either will work) b/c it is less bitter. These were an enormous hit, and are perfect for a potluck or any group gathering.
Espresso drowns out the Kahlua flavor

I made these cookies precisely by the recipe and I found that the Espresso took over the entire flavor and very little Kahlua flavor was present. I was hoping the Kahlua would be the star and main ingredient present to my tastebuds but I found the espresso was so overpowering that I hardly tasted any Kahlua. Methinks Rachael Ray is a much better cook than a baker.

I've made these 3 separate times, and each time tweaking them a bit. The last batch I made last night was for a cookie contest today, which I won. I doubled the batch, omitted the walnuts, used 4 Tbs. Kahlua and 4 Tbs. Godiva liqueurs. (Double batch, remember) I also used 1 1/2 C. bittersweet choc.chips and 1/4 c. milk chocolate chips. Now here is the secret...it all rests on the kind of coffee you use! I used instant coffe (5 1/2 Tbs.) and 2 T. of German coffee grounds. Makes all the difference. With this recipe, the Judges loved them, took extras and asked me for the recipe! Wonderful cookie, thank you Rachel Ray!

These are one of my absolute favorites!! Instead of using the bittersweet chunks, I use the morsels. I also leave the walnuts out. With those variations, they're much more gooey (the way I like them). People love these cookies!! If you love coffee or Khalua, definite try these cookies out!!

These cookies were so easy to make! And they are so rich! I made these for a meeting and all the coffee lovers were asking for the recipe. I also sent some with husband to work, and since they are not coffee lovers, they said they were to bitter, so I made them again especially for them and used white chocolate chips and an ounce more of the walnuts instead of the bitter chocolate....and voila! They loved them! I am adding these to my Christmas cookie list!

I have made these cookies several times, and they are always a hit. They are very easy to make, though I still can't quite make them as fast as Rachael does! I don't like the texture of the coffee grounds in the cookie, so I leave those out (even though I love coffee). And I use pecans instead of walnuts. YUM-O! Thanks, Rachael!

I would not classify this as just an adult cookie or dessert, as my 4 year old daughter loves them as much as we do!! I have been making these cookies for a few years (ever since I watched Rachael make them the first time) and all of my neighbors and friends love them. Even I love them and I don't drink coffee! These are great when you are in a pinch, and they are easily scaled up. I have made them for my office and friends several times and people rave about them. I double the ground coffee beans and cut the instant coffee since I don't have any of that on hand.

Maybe I'm just a coffee junkie, but it didn't taste enough like coffee for me. I didn't use the bittersweet chunks because other reviewers thought it was too bitter, but for my liking, it probably would've brought out the coffee taste more. I think next time I'll add dark chocolate covered espresso beans instead of the bittersweet chunks or do a half cup of bittersweet and a half cup of the chocolate covered espresso beans. I'd also use Alton Brown's recipe for "crispy" chocolate chip cookies as well. Yum.

I absolutely LOVE these cookies! I cook them only 7 minutes so they are softer. A friend of mine is allergic to chocolate, but loves coffee. I tried this same recipe with Oatmeal Cookie Mix (no raisins!), no chocolate, but more walnuts. They were still incredible...so rich that I almost thought the chocolate was still in there!

Made these as part of my Chistmas cookie batch last year. People that don't even like coffee liked them! I used a box mix that already had walnuts in them (to help cut costs) and they still turned out great. I also doubled the recipe and used a big stand mixer which couldn't have made it any easier - just drop everything in! Used a cookie scoop so they were uniform in size. Let me just say there weren't many left to add to my Chistmas gift baskets - everyone in my house ate them too fast!

I made these for a "dessert party" potluck I had last week, and it was nice to have the shortcut of using the store-bought cookie mix. I substituted white chocolate chips for the bittersweet, which I think added some sweetness to the strong coffee flavor. They're also a nice coffee-substitute for us caffeine-addicts!

I will never make another cookie again. This one will replace all others. Pure heaven. I love coffee-flavor, but don't drink actual coffee. So I substituted the coffee grounds with another tablespoon of the instant coffee powder. I also didn't want to die from chocolate overload so I skipped the additional bittersweet pieces. Still a WONDERFUL cookie!

Great cookies, well liked by all! (At least all who liked coffee). As other reviewers said, definitely an adult chocolate chip cookie. I used sliced almonds instead of walnuts as I'm not a walnut fan. Worked great. I also used decaf instant coffee and decaf coffee grounds since I was planning to serve in the evening.

When I saw Rachael Ray make these cookies on TV, I had to try them, even though I'm not supposed to eat these as I'm diabetic. So, today, I got the extra ingredients I needed and made these yummy morsels. Yes, they are a delicious cookie for the adult taste.I had to try one. The rest will be hubby's treat to take to his office. I don't think I would want to offer these expensive, caffeine rich cookies to children. But for an adult treat, they are very nice. My DH is very picky. I also rarely cook, he raved about these! I don't drink coffee or even like coffee, but these are out of this world. A wonderful kick on plain chocolate chip cookies. I rated this a 4 because it has to be something really special to get a 5, but these are incredible.

Although I was a litle dissapointed because I read the reviews thinking these would be Adult cookies and that my kids would not be interested. Wrong so wrong. I was leery about using bag cookie mix, but they turned out great! The only negative for me, was using the ground coffee beans; I still had grinds in my teeth after I was finished eating. Next time I will use all instant Espresso and skip the ground beans.

This is one serious grown up cookie!!! WOW I ate 3 tonight and can't get to sleep now and it's 7 hours later. They are incredibly decadant and definitly have a coffee kick to them. If anyone remembers the Ben & Jerry's ice cream flavor "From Russia with Buzz" and MISSES it, then this is the cookie for you!

I made these for a Valentine's party and baked them in heart-shaped pans - they turned out so cute and delicious. I LOVE coffee, so I thought the flavor was amazing!! I didnt hear any complaints from non-coffee drinkers and they were the first dessert to disappear. The best part was that I didnt chop the ingredients at all, so the cookies were VERY chunky! I will make these again.

These are THE BEST cookies I have ever made! The Kahlua in them is so good! I only made a few substitutions by just using semi-sweet chocolate chips instead of bittersweet chunks, and 4 tablespoons of instant coffe granules instead of ground beans plus instant espresso. I don't think the texture of the ground beans would be very good but... GOOEY AND RICH AND DELICIOUS!!!!

I made these cookies for my friends 17 bday. He doesnt like coffee, but he loved these. They are rich, but the after taste is great. They got a little to hard for me. Anyone know how to make them softer? I didnt add the walnuts this time, but next time I am going to us them and more Kahlua and coffee. No more chocolate. They were awesome.
