Excellent for Coffee Lovers 12/31/2007 at 10:19am User: Anonymous User Rating: I have brought these cookies to two gatherings and it was an enormous hit at both. With the second batch I added an extra tablespoon of Kahlua, otherwise the taste is nearly non-existant. Even with the extra liquor, make no mistake, this is a coffee lovers cookie. I would suggest instant coffee in place of the instant espresso (the recipe says either will work) b/c it is less bitter. These were an enormous hit, and are perfect for a potluck or any group gathering. I was hoping the Kahlua would be the star and main ingredient present to my tastebuds but I found the espresso was so overpowering that I hardly tasted any Kahlua. Methinks Rachael Ray is a much better cook than a baker. The last batch I made last night was for a cookie contest today, which I won. I doubled the batch, omitted the walnuts, used 4 Tbs. Kahlua and 4 Tbs. Godiva liqueurs. (Double batch, remember) I also used 1 1/2 C. bittersweet choc.chips and 1/4 c. milk chocolate chips. Now here is the secret...it all rests on the kind of coffee you use! I used instant coffe (5 1/2 Tbs.) and 2 T. of German coffee grounds. Makes all the difference. With this recipe, the Judges loved them, took extras and asked me for the recipe! Instead of using the bittersweet chunks, I use the morsels. I also leave the walnuts out. With those variations, they're much more gooey (the way I like them). People love these cookies!! I made these for a meeting and all the coffee lovers were asking for the recipe. I also sent some with husband to work, and since they are not coffee lovers, they said they were to bitter, so I made them again especially for them and used white chocolate chips and an ounce more of the walnuts instead of the bitter chocolate....and voila! They are very easy to make, though I still can't quite make them as fast as Rachael does! I have made them for my office and friends several times and people rave about them. I double the ground coffee beans and cut the instant coffee since I don't have any of that on hand. I didn't use the bittersweet chunks because other reviewers thought it was too bitter, but for my liking, it probably would've brought out the coffee taste more. I think next time I'll add dark chocolate covered espresso beans instead of the bittersweet chunks or do a half cup of bittersweet and a half cup of the chocolate covered espresso beans. I'd also use Alton Brown's recipe for "crispy" chocolate chip cookies as well. Yum. I used a box mix that already had walnuts in them (to help cut costs) and they still turned out great. I also doubled the recipe and used a big stand mixer which couldn't have made it any easier - just drop everything in! Used a cookie scoop so they were uniform in size. Let me just say there weren't many left to add to my Chistmas gift baskets - everyone in my house ate them too fast!
