It did not comsume my day like some other bread baking does. I did make a couple of changes...I used 1/2 all purpose flour and 1/2 "white" wheat flour (King Arthur), and I used rapid rise yeast...I simply mixed it with the warm water and didn't have to let it ferment. I baked 3 minutes, turned the bread over and baked one more minute! Perfect! I even saved one ball, rolled it into a rectangle, jelly rolled it into a baguette and let rise again, then baked! I made some plain, brushed butter and cinnamon-sugar on some, and garlic and herbs on others. All were just perfect. This recipe is a keeper! Never again will I buy pitas from the store! But boy are they time consuming!! I recommend saving some dough in the fridge over the week for fresher taste. The directions are forthright and the recipe must be fool proof for I was able to make it without any problems. Remember when in doubt sprinkle or add some flour. It was a lot of fun and very rewarding to finely make an eatable bread product. My sons are vegan and enjoyed this recipe very much. I used a 1/2 white, 1/2 wheat flour that I found at the store and it made for a perfect texture. I will no longer spend the money ($3-4) for those 6 close-to-stale pitas that you can get in the package at the store! |
