These yams were absolutely the best thing on the table and, as my dinner guest described them, were the "star" of the dinner. Following the advice of the other reviewers, I reduced the amount of water by about 1 cup (but increased the Jack by about 1/4 cup). I already have another batch of yams waiting to be bathed in Jack! First off, I was tripling this recipe for a big party and let me tell you, it wasnt cheap. Jack Daniels and the potatoes alone were $40, without the other ingredients. I took the advice of others and reduced the water slightly and increased the bourbon slightly, but I don't think I altered it enough. It never reduced properly and I let it go for almost an hour. Also I ended up with way more than I think was necessary. I am starting to think the gal that said 1 c water to 1 c bourbon ratio had it right. After all that money I wanted to taste the bourbon and I couldnt.For future, I will buy the cheapo stuff. Lastly, I guess I had to watch the show. The title said "Yams" but the recipe called for sweet potatoes, I thought they were interchangeable but there seems to be a difference. The color was wrong when I looked at the picture. I didnt know how to slice them, length wide or what. It all ended looking like a soupy, mushy mess. I realize that this all sounds like a personal problem, but normally I am a pretty good cook. I guess I am use to candied yams with more of a cinnamon flavor and also vanilla flavoring. After tasting the sauce my husband asked me to doctor it with cinnamon and vanilla, but the flavor never did reach our expectations. My sauce never really thickened the way I thought it should have. I actually let it simmer for an hour. I have loved all of Paula's recipes that I have tried except this one. I'm not much for alcohol, but I found a tiny bottle of Jack Daniels at my liquor store... perfect! These yams were beautifully caramelized and tastes absolutely scrumptious. As I thought, the whiskey is a very subtle flavor and doesn't overpower this recipe. Next time, I'll try and cut back on the water, so it gets a little "stickier" (the way I like it).
