Once I saw this recipe on Good Eats I knew I had to make it. After reading the reviews on this site I couldn't wait to get to the store and get cooking. I marinated the steak overnight and made about 3 pounds of it, sliced thin for fajitas. I turned my back for one minute, and when I turned back my 8 closest friends had devoured it like a pack of wolves. Needless to say, it's been requested over and over again since then and is always a hit. The sweetness of the brown sugar is what really makes it so good in my opinion. Make sure to make extra as this steak never lasts very long with a hungry crowd!

This is an absolutely wonderful recipe. The only I changed, was a gas grill, marinate for at least 4 hours and do not blot the meat. We cooked for 4 minutes and it was phenomenal!!

My boyfriend and I have always enjoyed watching Good Eats and making recipes provided by Alton Brown--but this recipe was one of the best I have ever used. We marinated the skirt steak for 8 hours and the meat melted in my mouth when I ate it. I have to say that I will be making this again and again to show off for friends & family.

Alton you are my favorite. I made this steak this evening. Marinated for about 4 hrs. It was delicious and my husband who never liked flank or skirt steak absolutely loved this. We made it in the gas grill, 2 minutes per side. Perfect medium rare. I'm curious to see how it will taste if I marinate overnight so will try it that way next time. Definitely good eats! Hey Alton, The Tri-tip you mentioned as not good is a matter of not tried. This is fast becoming a California Staple for large or small family gatherings. It's been here for 20 years. Arizona now has it. East coast bias I guess. Come out here to the San Juaquin Valley and you will be introduced to Good Eats. Crockpot, bar-b-que, or smoking does the work for this prime piece of meat. Stop by and I will show you. "Good Eats" is the best show on Food Network.

I am an Alton Brown beliver, however this recipe let me down. I went with the brown sugar, but in all reality this recipe needs some salt. The coal method useless, unless you like to eat sand.

This is just wonderful. We skewered peppers, onions and mushrooms to go with the delicious skirt steak. Made it just as the recipe says except (sorry) we did a regular charcoal with a rack and didn't blow dry the coals. A big salad to accompany the steak and veggies and what more could one want?! You know when you have a great entree (meat) it really makes the whole experience elegant. Thank you Alton. You are the BEST!!!

This turned out to be the most delicious steak that I've ever made in my life. The steak was so succulent and full of flavor that I didn't need or want the A1 steak sauce that I always have. The steak had a great flavor with this marinade. I marinated it for 24 hours. I also used a grill pan, which made it a little too greasy. I also cooked it about 10-15 minutes per side. I think I needed a thinner cut of meat.

Marinated only one hour--still was tender and succulent. Used hellishly hot cast iron pan. The one problem is the sugar, can't eat it for health reasons. Haven't figured that one out.

I marinated this for 6-8 hours and added extra soy and some ginger. Also s/p'ed the steak before adding it to the marinade. My husband said it is a definite make-again (although I would marinate it for longer, like 24 hours). Keep in mind I very, VERY rarely make the same thing twice! (Okay, unless it is actually THAT good, enough to make it into my books!) I can see this in a fajita, definitely, but not without a bit more spiciness like sriracha or tobasco added to the marinade. It was too Asian a flavor for me to consider a Mexican dish.

For skirt or even flank the meat should be marinated overnight, because the citrus needs the time to break down the slightly tougher cut of meat. I marinated for 24 hours - 4 pieces of skirt steak, the thickest being about 3/4 of an inch thick... I cooked them on gas, very hot at first, flipped after about 3-5 min, turned to medium and cooked for about 7 more minutes for medium/medium well (do about 3-5 min for medium-rare). ONLY FLIP ONCE! It's divine. Beyond divine. The flavor is the best I've ever had! AMAZING!!!!

One of the best marinades I've tried in a long time. Beautifully balanced with the sweet/salty/spicy. Compliments the meat but does not overwhelm. EVERYONE in my family loved it. Would also be good with tenderloin filets or flank steak (although quite frankly my family is growing tired of flank steak). Give me a juicy skirt or hanger steak any day! I should also state that I did NOT use Alton's cooking method. Can't quite bring myself to place anything directly onto the coals and the whole hair dryer thing is just too much fuss. I WOULD recommend the good-old charcoal grill, however, for acheiving a superior sear and overall great grill flavor. THIS IS A MUST MAKE!

I watched the show and followed your advise to blow the ashes away then lay the steak right on the coals. That was awful! The steak picks up pieces of the charcol regardless if you blow the area clear of ash! There was no way to get rid of the gritty charcoal crunch with each bite! We couldn't believe you gave this advise!

Unbelievably good!!! I'm just speechless....these fajitas are amazing. We didn't do the direct coal method...just your ordinary grill but the marinade makes such an amazing flavor! We were concerned about whether or not to marinade overnight...and decided to just let the meat sit for a couple of hours in the marinade and it came out perfect! Cutting the meat against the grain definitely made a difference in the tenderness of the meat.

this is the best marinade for skirt steak that I've ever used. Used it just for skirt steak, served w/a Martha Stewart cold rice salad & some greens, yummy. I have made this dish or a variant of it many times. I often vary the spices somewhat, as I am fond of chipotle I often add that. I have never cooked it directly on the charcoal, I always grill it on my gas grill and have never had problems with flareups.

I have made this recipe every other week for the last year, and it has never failed me yet. We grill the steak as we would any other, without laying it directly on the charcoal. I understand why he proposes this cooking method, but I just can't get past the grit. If you can't take a chance, cook the steak on the grate. Instead of brown sugar, I use Rapadura (natural sugar) and it comes out great. If I feel like a lighter meat, I use a flank steak and try to marinade it overnight. 4 hours isn't enough for the thickness of the flank steak. Leftovers are great for sandwiches. Great meal, one of my family's favorites.

This is by far the best recipe for fajita meat I have found! It obviates the need for anything beyond the optional peppers and onions. To be fair, we do this on a normal gas grill (sorry Alton, but we're busy folks) for about 5 minutes per side and it's perfect.

Maybe my charcoal doesn't get as hot as "TV charcoal"? Better cook it for 2 to 3 minutes per side unless you can get your hands on the hotter stuff.

I have used this marinade on serloin, chicken, pork. I didnt like the skirt steak, too tough. The marinade has awesome flavor. When I do fajitas, I marinade serloin for several hours sometimes overnight, and then I grill the meat to a rare/med rare doneness. I take the remaining marinade and incorporated it into the veggies that I sautee on the stove. The last 2 mins of cooking the veggies I add the beef to reheat. (I slice it into fajita strips first after letting it rest). I get RAVES galore. It is a keeper, very southwestern flavor.

Alton Brown is a total genius. This way of cooking fajitas gives you better than resturant quality fajitas in your own home. WAY better than resturant quality. The only thing is that it may take more than 1 min on each side depending on the thickness of the meat and how many coals you have.

With full faith in Alton, my daughter made this marinade without trying it first....she made it for a mexican dinner at her sister and brother in law's house, with a prospective boyfriend as a guest..the meat ended up being marinaded for 5 hours, then was cooked on a BBQ grill for 2 minutes on each side..the meat was not done quite like they wanted it, so they wrapped it in heavy duty foil and placed it back on the grill for 3 more minutes, then removed it..they let it sit, still wrapped in the foil, for the 15 minutes...she then unwrapped it and sliced it against the grai, as directed...they made burritos with the meat, using other ingredients and fresh home made salsa...everyone that ate it proclaimed that is it indeed, GOOD EATS!! and their guest, who kept commenting on how good the meat was, asked for the recipe...try it! you will love this!!! thanks Alton!

We made this recipe tonight, to the letter. The recommendation was to get natural charcoal, but Kroger?s only had briquettes. We got the hair dryer out and blew off the ash. It didn't work. Total grit, like eating sand. It was then that I found all these reviews - I have to agree, the marinade was excellent, but next time I'll use a grill over the coals or a cast iron skillet. The vegetables were awesome.

AB.. amazing results! After reading the reviews here, I decided to set my GRILL on the coals and cook the steaks on there. They came out wonderful. Cooked it for a date.. there WILL be a second date!! LOL. Just a note, though: This recipe doubles well, just back off on the red pepper flakes if you do, unless you like it hot! Also.. that 15 minute wait is HELL!!

I followed the recipe except I grilled the steak per suggestions. It looked perfect, nice and pink and the marinade was delicious but the steak was so tough. I will try this again but I will definitely marinate the skirt steak overnight not for only one hour!

This was excellent. I used the ingredients as a marinade (overnight) and grilled the skirt steak. I did not have scallions on hand, only had light brown sugar, nor did I use the blowdryer technique. The meat was tasty and tender. thanks for a great one.

Indeed the inside skirt steak is a tasty and mostly grislte free cut (though flank steak from costco costs the same per pound). The method is shockingly effective, producing perfectly seared exterior and nice rare interior. For those without external power outlets or who don't want to look silly grilling in their backyard, no hair dryer necessary; a compressed air can (the kind used to clean computers) works just fine for blowin off ash.

This marinade is quite excellent, as is the recipe. The only factor I left out, as did many others I see, is placing the meat on the coals. I agree with everything that has been said about this technique, even though I did purchase chunk charcoal. Regardless, this is a great beef marinade, and will be my marinade of choice for all camp cookouts.

i am a true fan of skirt steaks.we eat them often. i marinated about 8 hours. i think way to long. the recipie calls for an hour. i guess alton know what he's doing, because the marinade was all i tasted. no steak taste at all.if i try it again i will marinate for an hour only.

Just the best marinade for fajitas that I ever had. I didn't follow the recipe completely - made the marinade and put separate baggies in the fridge with both boneless chicken breasts and skirt steak. Cooked them on a cast iron stove grill pan whole - then sliced. In a separate pan sauteed onions and peppers then added the sliced meat and chicken briefly to the same pan with some reserved sauce. Warmed the tortillas and with some avocado and sour cream - Oh my God, what a great meal. Better than the best Mexican restaurant where we used to go when we had a craving for fajitas. Just try it!!! Love to watch Alton - but this was the first recipe of his that I tried and I think now I'll try a few more!!

These were without a doubt the best fajitas I've ever had. I had hesitated making this after watching the show because I wasn't so sure about putting the meat straight onto the charcoal. So I eschewed that and put the meat on a low grill over high flame as others had suggested. Everyone LOVED this, even my husband who doesn't typically like this kind of meal.

ordinarily, i love your recipes... and i'm sure the marinade for this one rocks... but you really need to put someplace on the page for this dish that you need to use chunk charcoal. if that's not possible, use the rack and get it as close to the coals or heat source as you can.

I had just about given up on beef fajitas because everywhere I have had them they were tough or chewy. I saw AB making them and thought I would give it one more try. These are the BEST fajitas I ever had !! I made these for my mom and the in-laws and they loved them. We even made them over the holidays to take up to the in-laws. We didn't do the meat on the coals, but just had the gas grill HOT and they grilled on the rack just fine. Great job AB !!!!

I love this marinade. I marinaded the steak for longer (12 hrs) and cooked over a gas grill on high for about 3 minutes per side. The steak comes out tender and so juicy. My husband and I enjoy it so much that this is the only steak for us. I've made it for friends and families and all of them want the recipe. Thanks Alton Brown for making me a star.

I couldn't believe how perfect the steak came out. Alton hasn't let down before, but I was a little leary about the brown sugar. I had a hard time putting salsa and sour cream on them, because it took away from the taste of the steak.

I tried this recipe with the on-the-coals method first and my family had to deal with lots of grit (the kids really hated that experience). I tried it again with a cast iron pan on my weber kettle and it was great! My family now loves this dish!!

This tastes amazing. Try it with another cut called "flatiron steak" and it is also amazing! Any intense heat source is fine. Just crank up your grill for 1/2 hour or use lots of charcoal and then lay 'em on for 1 1/2 to 2 mins per side.

This is absolutely the best marinade we have ever had for fajitas. I didn't give it 5 stars because of the cooking method. Being big Good Eats fans, we were very eager to try the meat-right-on-the-coals method. The first time we did this, we used regular charcoal. It was complete grit. The second time, we used chunck charcoal. This time there was moderate grit, even with the blow dryer. The most recent time we grilled fajitas, we put the rack right on top of the coals, MUCH BETTER. This marinade has replaced all the other receipes we had for fajitas.

This marinade is great but the sauce it renders is outstanding. I did the skirt steak and then tried it on lamb. Both were worth every bit of the effort. Only modification was an increase in marinade times- both meats set for over 24 hours.

We tried this recipe twice. The first time I ignored the gentle, low-key recommendation to use only natural chunk charcoal. The result was wonderful to taste, but horrible to chew. We ended up dumping it. Two days later I secured natural chunk charcoal and tried again. "Magnifique". Alton, you must re-write that receipe and stress the importance of the natural chunk charcoal.

I doubted this marinade would be any different from others and only at the last minute decided to make it. I was going to go the the fridge and grab a bottle of you know what, but I said if Alton made it I must try it. I must say, it is wonderful. It has a suttle zing and a sweetness that enhances every bite of the meat and keeps you wanting more. This is one of the best marinades ever. Let me first say,this is a great recipe and the marinade is awesome...but please let me stress..DO NOT put the meat directly on the coals as Alton did on his show. I did everything he did and the ash still got all in to the meat...kinda like if you dropped it in sand then tried to eat it! four thumbs down on that cooking method..everything else worked great!

I made this recipe over the weekend. I did not do it as Alton said and lay the steaks on the charcoal, because I have a gas grill. I did use the marinade on some skirt steak and WOW!!! I was very impressed. Extremely flavorful and perfect for fajitas. I will use this marinade again and would definitely entertain with it. Try this one, folks!!

I tired this recipe, with couple of changes. I marinated meat about 6 hours and instead of cooking on the coals I put the grate right above them and cook the steaks one and half minutes on each side and followed the rest of the recipe. It turned out delicious, juicy and very tender. I did the peppers and onions on the iron skillet over coals too. What a meal. Thanks Alton.

An very hot gridle works just as well. The char-wood thing we tryed the first time and its purdy messy. But wow its gone in no time. If the meats a little on the tuff side be sure to cut cross grain and quite thin.

Im not a food critic or anything but this is recipie is just great. I didnt put directly on hot coals like he suggested, i just put a gridle inside my propane grill and got it as hot as i possibly could. The thermometer on the grill went way off the scale, probably about 700 degrees. i put the meat on for about 60 seconds on the first side, and about 1:30 on the second side because it seemed to have cooled down a lot, and it came out great. the meat was gone within minutes at which point people found some bread and soaked up all the juice left on the cutting board.
