Although this recipe uses blueberries and peaches, other fruits can be used. This is a rather easy recipe to make and the results are satisfying. Just the right amount of sweetness with a little bit of tartness! No problems with the dough, I let it rest in the frig for a little over 1 hour before rolling, worked quickly, made sure no folds had openings and used enough floor on my board so that it would slide off easy. I had difficulty getting the dough onto the pizza stone with the heavy weight of the fruit. Even though I worked quickly, I believe my marble counter may have been too warm to work with dough. Next time, I will place a bowl of icewater on my marble work surface prior to rolling out the dough and I may use frozen fruit to take the weight off the dough so that it will slide off my pizza paddle onto the hot stone without coming apart. Definitely tasty though! I cooked it on a pizza stone and apparently the stone was not hot enough...adjustment needs to be made for a pizza stone as more viewers would have access to a pizza stone that a pizza oven...although both my Italian husband and I would love one...
