However, now I know using a grater is as good as anything. The recipe is light, filling, and refreshing. To my suprise the lemon zest is amazing; perhaps a bit too many zesties in my opinion. However, one of my guests described this dish with the statment, "couldn't be better." What a great night! I will make this many more times. I also took the suggestion of another reader and added crumbled feta. It was very tasty this way. Next time I will try adding sliced calamata olives to make it a truly greek side dish. It definitely fit the bill! I only made one cup of dry pasta, used the zest of one lemon, dried parsley (1 tsp) and followed the rest of the recipe. My husband, daughter and I loved its light lemony flavor.
