That was the best family meal we've had, ever! The kids even helped make it. It was easy, good, and healthy! After reading the reviews, I doubled the foil and used a cabbage leaf as the bottom layer to minimize leakage (camping trick). The cabbage probably would have worked well enough without the extra foil. We had enough broth to make it like a Japanese noodle soup, which I loved. We used fresh sliced mushrooms, snow peas, and mini-corn. If I didn't have mirin, I would have used white wine. I put the pouches on a cookie sheet and cooked them on the gas grill. It also wasn't salty at all. Did the other reviewers use the seasoning packet from the noodle package? I wouldn't recommend that. To eat this, we shaped the foil into bowls and used chopsticks and spoons. Yum!

I saw this episode on this recipee and tried it tonight..wow I was amazed on how easy it was to cook...and no mess! The oven does all the work for you if you use foil to wrap the ingredients together instead of parchment paper. I used salmon instead of shrimp and used soy sauce and lemon slices instead of wine. It turned out faboulous! The house smelled like a gourmet bistro. Now if only I could teach my husband to cook this..so I could have a few nights off from cooking. Until then, I will keep dreaming of that day. Good Eats!

I modified the recipe with great results. -Shrimp: 1.5 lbs pre-peeled and de-veined -Mushrooms: 1 container of fresh Shiitake (de-stemmed and sliced into strips about 1/8") -Red pepper flake: use twice as much -Leave out the scallions alltogether -Use extra vegetable broth(enough to the contents of each foil basket by about .5") -Add a few shakes of garlic powder to each container. -Increase cook time a little(about 4 min. for me, but make sure shrimp is done). The most frustrating part of the recipe is properly folding the foil to make sure that it doesn't leak all over. I find that the best way is to fold the two sides "hamburger-style" and seal the left and right edges with lots of pressure, folding the bottom edges up onto the seam.

I tried Sandra Lee's version ("Shrimp Noodle Bowl") and I almost gave up on this type of recipe, that's how bad it was. I loved how this was fresh and authentic - like using veggie broth in this. Read the other reviews and threw everything into a pot instead of individual foil packets to avoid spillage in the oven. Worked great and my husband went back for a HUGE second helping. Will be using this for a long time!

This recipe was delicious! It was so easy to make! My boyfriend and I had fun making it together and eating it too! Super easy, really cheap, and absolutely great! I will definately make it again! This recipe is so so so problematic I can't tell you. Firstly, one has to go out and purchase Ramen noodles, dried mushrooms large shrimp, mirin (saike) sesame oil (at least I did) ... that was costly ... then ... I wanted to make it for one ... so I adjusted the recipe accordingly ... when I open my pouch ... the ramen noodles were underdone ... and the shrimp was underdone ... so I closed everything up and placed it back into the oven for 5 more minutes ... it smelled wonderfully ... so then I opened the wonderful pouch ... the noodles were done but the shrimp was still underdone ... so then I thought, the heck with this ... so I threw the hole mess into the micro ... so finally I was able to grab my chopsticks and head for my room ... I decided it would be a fun thing to eat on my bed, while watch the debates ... well, guess, what, I spilled the entire 'mess' unto my wonderful down comforter ... do not bother with this recipe ... the work isn't worth the taste ... the taste was just ok ... but I thought to myself, what if I had made scampi with those fab shrimp or some other devine recipe ... DO NOT WASTE YOUR TIME ON THIS ONE ... IT APPEARS SO SO SO EASY ... GUESS WHAT, IT IS NOT EASY ... IT IS A PAIN IN THE YOU KNOW WHERE> That's all I have to say about it.

The flavors were excellent and the recipe fairly easy to make. In the future, I would probably use 1/2 the liquids called for, but that is a personal taste issue wanting less of a soup dish. This is a new family favorite!

After having made Alton's red snapper in parchment two days before, and being blown away, we were very disappointed in this ramen shrimp pouch dish. We served it to guests, luckily very good friends, and although they typically like anything put in front of them, they were equally unimpressed. Increased the liquid as everyone suggested, but there just really was no flavor. The first word that comes to mind is "boring".

Alton has done it again. Great taste, easily available ingredients (for those who couldn't figure out what mirin was, there's this thing called google), and my kids (4 & 7) loved making their own pouches. I changed a few things. I made sure to buy reduced sodium soy sauce & the lowest sodium veggie broth available & eliminated the kosher salt. The dish was perfectly seasoned this way. Also, I weighed all the pouches to make sure that I had distributed the liquid evenly (each pouch weighed 1 pound to 1 pound & 1/4 to 1/2 ounces; yes I am a former lab geek). At 15 minutes, the noodles were still slightly firm, but at 17 minutes, they were perfect. I used heavy-duty foil in double layers & had no problems with noodles poking through. It's been a long time since the dinner table was that quiet. Thanks, Alton!!

The cooking method is the only part of this that's tricky. Just use the heavy duty foil, and it's a snap; doable over a camp fire... A bit too much mirin for my tastes, but very adaptable. Fun for the kids, too.

This is very good and very fast. You must use better quality aluminum foil or your get holes (and leaks). Simple and you can customize it for people on special dates or those who have particular tastes. We've made it 5 or 6 times now.

Super easy and really good! The first time I made this I made the pouches too small and some of the broth seeped out and the noddles didn't get all the way cooked. So make sure you have plenty of room for all the ingredients and and the broth.

We've made these pouches several times now, and the flavor and tender shrimp amaze every time! Truly excellent! For those thinking about making this, two tips: 1) break the ramen down the middle so that you have two thin "plates" of dry noodles, as this really is the only way to stack up the other goodies. 2) lay the shrimp out in a flat layer. If its in a wad, it won't cook through.

This was really great. The ony change I made was to use fresh shi-take mushrooms instead of dried, as well as a couple of cloves of garlic (divided out between the pouches). We really enjoyed this! Servicd with Sara Moulton's Watercress Sesame Salad for a delicious meal. Thanks again Alton!

followed the ingredient list, but put it in a casserole dish w/ a lid. Had plenty of liquid...Probably used 3/4 of it. Set the oven @ 450..once it started boiling I let it cook for 3 minutes...It was terrific.

I really loved this recipe -- it turned out yummy. However, I've made this twice and had lots of trouble with the foil leaking. I made just one serving for myself tonight, and ended up putting this in a pyrex measuring cup and covering with foil, and poking a hole in the top. It turned out great -- no extra liquid (1 cup broth was enough), and no extra time. I tried to think of a sturdier alternative to foil, and I think next time I will try making these in the mini foil bread pans, and covering with foil. Also, I used low sodium broth and soy sauce (I never buy the regular stuff).

If I was just rating this on fun, creativity and healthiness, it would be a 5. The mirin did add an intriguing (but not overwhelming) sweetness, but for my family's tastes, this needed one or two more ingredients for extra depth and spice. I followed the recipe exactly and yes, this does need that much liquid. Read your vegetable broth labels; the first one I read included corn syrup. Why?? We settled on a carton of organic veggie stock (no corn syrup added, thank you) and it was great. Two of our pouches ended up with holes in them; we just poured the lost broth back into our bowl, repacked the dish and put the liquid back in. Everything was cooked great Make sure you are only using 1/2 of the ramen block per dish! One last thing: I don't recommend red onions for this, as they turned an unappetizing purple during the cooking process. Use yellow ones.




Leakage Will Occur

This dish is tasty and super simple. The only trouble with mine was that the aluminum foil leaked and when I doubled (okay.. and tripled) the layers, my food didn't cook as fast. I had to put it back in for a few more minutes so that my shrimp could cook. I also don't know how to get this out of the aluminum foil gracefully. So I made a little mess. But very tasty!

I enjoyed this dish and the fact that it breathes new life into an old college favorite . . . Ramen. By only using half the package, it cuts down on the fat and carb content but still contains a lot of flavor. I might recommend a low sodium soy sauce and/or chicken stock, but other than that, the dish was great and definately worth a try.

I have served this as an appetizer and as a main dish. Everyone prefers the main dish because they get twice as much of the excellent shrimp, noodles and sauce. This is definitely a keeper. I have had to copy the recipe for friends or they get mean. :) Easy, flavorful so very good cook on the grill or in the oven. Thanks!!!

This is a great way to use Ramen noodles! We are ready to make this while camping. I made sure I had enough liquid for the noodles. Also, I used seasoned frozen shrimp since that's what we have on hand. I did not know what Mirin is, so I didn't use that. I also used the seasoning from the Ramen pack. I made sure that the foil I used was big enough to hold everything and still have extra room should the food want to move around to prevent tears. This has been a great recipe for all of us! Thanks!!

After watching this episode, I was determined to test this recipe. It seemed to simple. And guess what? IT WAS. One tip: use heavy duty aluminum foil. I am not sure whether or not the noodles pierced the foil or I didn't use a large enough piece, but my liquid leaked out. Glad I caught it in time. Had to doule line the foil. GREAT recipe.

The flavor was great and the quick cleanup was even better. Didn't have any shrimp in the house, so I used the fish fillets I had in my freezer. Also had a problem with the ramen having hard spots. Next time I'll break it so I get 2 wide, thin pieces instead of short, fat ones. It was a little salty and a little spicy for my family, so I'll cut back a little next time. Still, this recipe's a keeper!

I think the only problem was that I didn't distribute the liquid evenly, otherwise it was a success. I actually tried it with beef broth and without any shrimp, but I thought the flavors were great. I also do not use any alcohol cooking or otherwise, so I didn't use the mirin either.

I agree with other reviewers who have stated the cooking time is a bit too short. I would suggest leaving it in the oven for at least five to seven minutes longer (much longer if you put in beef, chicken or pork). My picky eatting two-year-old ate ever drop of this dish and my husband loved it too. It makes for a very quick, inexpensive, healthy meal for busy week nights. I put in peas and carrots for my veggie and that tasted great. It's a very versatile dish. There's a lot of room to be creative.

I?ve made this twice. The first time I followed the directions on this web site; It was a lukewarm runny soup. I went back and watched the episode and noticed that the amount of liquid was 4 times less in the show. The second time I followed the directions on the show and it was perfect. The show calls for 5 tablespoons of liquid per pouch: the web recipe 20! Someone needs to correct this. This is the 4th Good Eats recipe that I have found where the web directions were so different that they yielded a poor or failed result yet the show directions were great!

I don't understand using the pouch. I tried using the pouch and I got the dry noodles problem that has been mentioned. It turns out wonderful in a small pan using a lid. I have a pan that perfectly fits two packs of the noodles unbroken and four or five shrimp plus the rest of the flavoring components. I have this for lunch at least once a week. The dehydrated mushrooms can be any variety and the variety pack you get at the store really gives you some variety.

The liguid in the recipe needs to be increased. My first attempt, forced me to add more liquid after the required 15 minutes of cooking time, which made the ramen noodles finally soft, but the shrimp was overcooked. My second attempt was a resounding success. Increase the liquid by using the whole can of veg. broth. The noodles are done and the shrimp is excellent. Make sure you use raw shrimp, not the precooked kind.

Talk about versatility! You can substitute just about anything in it (in moderation) and it turns out great! I've found that if you make the pouch hole no larger than a pencil's width, you can keep in most of the moisture and prevent the noodles from having "dry spots"

My Family and I just got done eating this meal, it is delicious. I orginally saw this recipe on "Good Eats" and told my mom about it. Tonight she made it and my dad would not stop raving about how good it was, especially the shrimp. Based on other reviews she did double the amount of liquid and break up the ramen noodle before cooking the pouches; it did take 20 minutes. My dad doesn't like hot stuff so we left the red pepper flakes out of his. The only suggestion we have is to serve fresh fruit as an accompaniement.

This was both easy and tasty. I did double the amount of total liquid mixture. For those unfamiliar with it - mirin is a Japanese rice cooking wine, not a vinegar. You cannot substitute rice wine vinegar, the results will be completely different. Mirin can usually be found in the same section as rice wine vinegar.

The recipe sound really good, but you have to check the romen noodle very often, they dont cook has fast and you can over cook the seafood. If you do it correctly is ok.

I thought this dish was very fast to make and had an excellent flavor. The only downfall was it needed more liquid. Some of the noodles did not cook through and were chewy.

Man, not only does this taste good enough that I could eat it every night. It is also relatively cheap and easy. I go to college so I'm crazy over quick, simple and inexpensive recipes, especially when they taste this good. It would work well for any college kid since it can also be prepared in a microwave, plus, if there's one staple students have in abundance, it's ramen noodles.

Normally, every Good Eats recipe I make comes out as "the best I've ever made", but this one was very disappointing. A lot of the noodles were still dry and uncooked, and the recipe itself was too salty. Maybe next time I'll add some more water or low-sodium broth to the liquid and see if that helps things, but I wouldn't make this recipe again in its current form.

Once I got this on the table, it was quite tasty, but as others said, the noodles were not done in the time allotted. I cooked them separately in a little water, then added them back in. Better. Also, as other described, the nooodles poked holes in the foil, causing the need for a double layer. Mirin substitute can be "made" by adding suger to Sake, and briefly boiling.

I tried this one, it looked delicious. But the ramen noodles poked holes in the foil (I used the heavy duty kind) and the juice dripped out. I caught this right away and wrapped then in a second layer and added some more of the liquid. This helped but then the noodles still weren't done when the shrimp was. I ended up microwaving the veggies, and noodles with some more chicken broth. When all was said and done. It tasted delicious, but was more hassle than it was worth.

My husband and I tried this one and we both loved it! Fast, tasty and NO cleanup...what more could you want?! Instead of splitting the ramen into halves, we each used one full brick and used half the shrimp for each. If you do this, you will probably need to use 1.5 times the liquid. We added some sliced celery for crunch and plan to add shredded carrots and some snow peas next time to make it a one-stop meal. Note: Mirin is a Japanese rice wine that you can find in the Asian aisle at any market. Also use the dark sesame oil, not the clear.

If you make this, add some extra water, and cut back on the salt. Very salty and not enough liquid, and the ramen noodles weren't done at all. Too bad I had to throw it away, no one would eat it!

I love this recipe. I usually add fish and some extra broth, since I don't have mirin. The great thing about it is that you can customize each pouch for your family and they all come out tasty.

I agree that the noodles were not cooked thru. I think doubling the liquid would fix that, maybe by adding 1/2 cup more broth. I think if you doubled the soy and mirin it would be too strong. I will also break up the noodles next time. I used canned mushrooms because I didn't have dried ones. The taste was great and it was easy to prepare - a keeper!

conceptually it was a good idea. flavor wise it was excellent; but the liquid didn't get to all the ramen and I had dry spots which became a nightmare to get moistened. Perhaps there isn't enough liquid in the recipe or perhaps I didn't create the pouch properly.

I added a little extra on the spicy side because I always do. It was really yummy and I will definately be making it again- also it's really easy to mix and match stuff in the pouch. Just make sure to break up the ramen really well or soje pieces stay crunchy.

I agree with the other poster, mine also needed more stock because my noodles kept coming out a bit crunchy. It had a good flavor, but I don't think it was quite worth the effort. If anyone is interested, Central Markets have the dried onions in the bulk section. They sell them in post it note size bags and I got mine for $1. It was a perfect size for 2 packets.

This was really good-- especially since we could each put as much red pepper in our own pouch as we wanted, but I would suggest making sure your Ramen noodles are completely covered in liquid to ensure they actually get soft and cook. We will definitely make this again!

I didn't have all the ingredients from Alton's original recipe so I had to make some changes but none the less it turned out great! I used the ramen noodles and suggested liquids but I used salmon and edamame to which I added 2TBS each miso paste and fresh cilantro and 1TBS each of garlic and ginger. I also cooked the packets an extra 5 min. They turned out great!

I used instant packet noodles with its seasoning & water instead of vegetable broth. However, I decreased the amount of soy sauce to half. Despite adding about a cup of water, some parts of the noodle remained uncooked. It still tasted good & is real simple to prepare. Would definitely try again.
