A little too sweet

the recipe is very easy (especially for me, I am not a great cook.) The 7 minute frosting is a little too sweet and very runny, so it makes a bit of a mess. The filling is a little heavy on the sour cream, but I added a little coconut extract to both the cake batter and the frosting, which gave it just a bit more coconut flavor. The cake batter came out very well, I will definitely use the 1-2-3-4 recipe again!

This was my first time making a coconut cake. I had seen it on one of Paula's episodes. I just love watching her cook and eat. The recipe was easy to follow and the cake was delicious. I made this cake for my husband for Father's Day because he made such a fuss over a coconut cake we purchased at Magnolia's baker in NY. I just knew Paula's recipe was going to be if not the same better. My daughter's friends loved it and my son who said he doesn't like coconut cake tried some and then was looking for more. I will absolutely make this cake again. One thing I did learn was not to let the cake cool too long. You have to get that filling in there while the cake is still warm.

I made this recipe the other day and it was outstanding -- moist and yummy. I used coconut milk (not regular milk). The cake was not dry at all like other folks mentioned. The filling was easy and tasty and the 7 min. icing was so easy to make. This will be the only coconut cake that I'll ever make again. I might add pineapple next time and a little coconut extract to the batter.

I just made this cake. My Aunt's 90th birthday is in a couple of days and coconut is her favorite. My layers are so thin...is that the way they are suppose to be or did I do something wrong?

Coconut cake was my great-grandmother's favorite cake, and is also my mother's. For my mom's 60th b-day, I decided to try Paula's recipe. It has become the family/friend favorite!! The only thing that I do differently is use coconut milk (rather than regular milk) for the filling.

This cake is moist, classic and elegant. Yes, it is a denser cake, but there is a balance with the filling that make it moist and creamy. If you want a stronger coconut flavor add more coconut milk to both the cake, filling, and the icing after beating in the double boiler to right consistency. I crave this cake all the time!

I made this cake last night before I read all of the reviews so I missed out on letting the cake "marinate" for 3 days tip but I also got to eat it the same night I made it :)It was awesome last night and even better today next time I make this cake I will definetly let it sit for 3 days because I can see where that would make the to die for. I made it as a test dessert for Christmas and this one has definetly been voted in. Also, I couldn't find coconut milk so i just used skim milk and coconut extract. I recommend this cake highly but make sure you let the filling soak into the layers before eating.

I was hesitant to make this cake even though I love making Mrs. Paula's recipes. I've tried 3 or 4 coconut cakes in the past and none have worked. This one, though, was amazing. I followed the recipe exactly except for 2 things. I used cream of coconut instead of coconut milk (I live in a small town and you take what you can get!) and I didn't level the cake by banging on the counter. I kept my air bubbles right where they were! :) It was a huge hit and I was lucky to get a piece. Future point of reference - when feeding my family make two!

My grandmother made a "from-scratch" coconut cake for my first b'day! Loved them ever since. The 1-2-3-4 cake is a standard white cake. But the cake needs coconut extract, canned coconut cream and skip the sour cream altogether. 7 minute frosting is the one I use, but I also use the real grated coconut, grated finely. No coconut from the bag. And I use plenty of it! I used to do food styling so I know pictures can be deceiving. Hope these tips help.

I like this recipe a lot but I do three things differently. I use 1/2 cup of crisco along with the butter because that helps with the dryness issue. And I make my self-rising flour from scracth. For me self-rising flour makes a more grainy textured cake. It's better when you mix it together in small batches. And for me boiled icing is better than 7 minute. I love the filling and I've tried lemon and pineapple filling in the middle also.

I usually make cakes from scratch using a "white butter cake" recipe from www.joyofbaking.com and it comes out perfect, but this Basic 123 cake is pretty good too, although just a little bit more dry, but still very very good. The cake was moist with the incredible filling and the frosting is like none I've ever tasted. It would've been even more moist if I had let it marinate for another day or two as is suggested. I just left it soaking overnight and it still came out pretty good. It was a real crowd pleaser, everyone loved it and came back for more! I will definitely make again, the cake was awesome!!

I made the cake for my mother's birthday. Everyone LOVED it! It's gorgeous! I wouldn't put this under the easy category, though. It took a while, too. But it's definitely worth it. The fact that it's dense and has ample filling is what makes it spectacular and not just an out-of-the-box cake.

i have made this cake several times and tonight i finally got it right. my icing always turns out "grainy", even though my water never touches my bowl like paula said. tonight i turned the temp of the water way down and it couldnt have been more perfect. i have made it both ways-letting it sit for a few days to soak up the filling and serving it immediately and both ways it is great. the cake is so moist. if your cake turns out dry, then you did something wrong! thanks paula-this cake is a huge hit.

This cake was fabulous! Beautiful, moist, tender, delicious, everything you want a cake to be. Just a great, old-fashioned cake you imagine used to go along on Granny's picnics. I had some trouble with the frosting getting a little grainy on me, but after some research, found out that I probably cooked it too long and that 7 minute frosting should cook only between 5-7 minutes or it can get grainy. Hope this helps others who are having trouble with the frosting working out.

This was a really simple cake to make but it was a little dense then what I was looking for. All of my guest loved it and I've been asked to make again. I make it into a 3 layer cake and filled it with homemade raspberry jam and vanilla custurd. Very yummy. It holds up to heavy fillings really well. To decorate I just lightly frosted it with whipped cream and pressed coconut into it. You can then either drizzle with chocolate or fresh berries. I actually used sugared edible flowers on top and it was stunning.

This is the best coconut cake I've ever made. It was not difficult to make at all and it's so good, I literally could not wait to eat it after my dinner. I love cocnut and sometimes it's hard to get the flavor, but this is great. Not sure I understand the other reviewers comments about it tasting like sour cream? That's just not the case. This was awesome.

This has become my sons favorite cake. I just made it again this year for his 21st birthday. I'm having problems with the frosting!! I've made it twice now and each time the frosting is soooo grainy. I consider myself a fairly good cook although I admit baking is not what I'm best at. Am I suppose to use something other than granulated sugar?? I did make sure the boiling water didn't touch the bottom of the bowl. Everyone loves this cake but politely comment about how it would be even better if the frosty wasn't grainy. Any suggestions?? Thanks!!!!

Paula most of your recipes are to die for, but this one was just okay. The cake looks beautiful but it taste just kind of bland. It needs more coconut flavor and is dry !!!! I made it 2 days ago and kept it in the fridge so all of the filling could seep down into the cake. Well you would think by the 3rd day it would be really moist but it isn't. My husband just walked in and I asked him what he thought of the cake and he said "Dry-real dry" Most of these reviews talk about how moist it is but they must have added more filling or something because I went right by the recipe and it is just not that moist. I would not make this cake again unless I experimented with more filling in between the layers, etc.

I made this cake for a dinner party, and everyone raved how delicious this cake was!! It was so moist and delicious, with just the right amount of coconut. I did have a problem with the frosting....it wasn't thick enough and ran off the cake. Don't know if anyone else had this problem....maybe the frosting needs to be refrigerated for a few hours to thicken up prior to frosting the cake. Despite the mess, it ultimately turned out great, and all of my friends want the recipe!

This was one of the worst recipes I have ever tried. I wasted 2 hours of my life and a handful on ingredients just to toss this thing in the trash. I couldn't taste the coconut. I didn't have near enough frosting to frost the cake. The taste was horrible. I omitted the filling just because I am not a fan of filling in my cake. This experience has been so upsetting I am at a loss for words. t This was also the first recipe of Paula's I have tried and will probably be my last. The people who have tried this cake must be the 1% of the population that does not have any taste buds in their mouth. Save yourself some time and money and find another coconut cake recipe leave this one alone!

I didn't actually make this cake, but I've made this 7 minute frosting on another Paula Deen cake recipe and it's aweful...hard and crustly like a merange cookie, so I would forego this frosting and use another.

This was the best coconut cake I think I ever ate. My grandson likes the flavor of coconut, but doesn't like the texture of coconut. So he got the flavor with the coconut milk. I left off the flaked coconut on his piece. Everyone loved it.

I made this cake for my husband's MeeMaw, who is just about the sweetest lady in the world, so I had my fingers crossed that she'd enjoy it. I read all the reviews (and I do mean all) so I knew to put it in the fridge over night...Fabulous dessert! I used WAY more coconut in the filling, and it turned out well. (And am I the only one who has a ridiculous 13 year old girl crush on Jamie??)

i made a few variations to this after reading the reviews that said it needed more flavor. i had used my coconut milk for curry the same day and didn't realize that i hadn't purchased another can for this recipe, so i made the 1-2-3-4 cake with regular milk and to add more flavor i zested one lemon and mixed it in the batter. also instead of sour cream i had yogurt, so i used that and squeezed a little fresh lemon juice onto the layers of cake to make it more of a lemon coconut cake. i made these variations for my sister's birthday cake and was afraid that it wouldn't turn out well, but let me tell you that it was sooo delicious! the cake was so moist and not crumbly after it soaked in for a few hours. my sister could not believe how easy this cake was to make after i told her how and she said i had to make over and over. next time i'm going to try it only with coconut, but the lemon was another variation that some of you might want to try. the two flavors complemented each other perfectly! thanks for this recipe paula! we love your show!

This was my first attempt at this cake or any cake from scratch. I read every review written. Today, Easter, was my mother-in-law's birthday. She loves coconut so I decided to try it. The recipe was easy to follow. The only thing I did not do just as the recipe says was to poke holes with the back of a wooden spoon. I used a knife instead. I wish I had used the spoon. The filling did not soak into the cake as I had hoped. The cake was still great but could have been a little more moist. Everyone loved it. I'll definitely try it again.

I did about everything wrong a person could do, and it still turned out de licious. Go figure...... In reading some of the other review I noted comments made about the cake being dry, heavy, too moist, etc. Well, one of the things I did wrong was not to read the entire recipe first. My printer only printed out part of it so I interpreted a 1-2-3-4 cake as being a cake mix. Well........ it worked beautifully. Use a cake mix of your choice, if you think the pound cake is too heavy :()

thought that this was great. but how would you substitute for the sugar content for a diabetic or someone who uses splenda? this is a major product in my home as i and my familyare diabetic and we are watching our caloric intake.

I'm not much of a cake baker, but I simply followed all directions exactly as it stated on the recipe for my grandmother's 92nd birthday a couple of days ago. Thinking only the adults would eat it, I was much surprised when even my son, who is not a cake or sweets person, asked for and ate an entire piece. This recipe is wonderful, not too sweet yet flavorful. The cake layers even came out perfectly because I followed directions on leveling the cake. Today I'm going to try Bobby's Caramel Cake, which also sounds delicious.

I am not very experienced with baking three layer cakes. I usually stick to cookies, brownies and single layer cakes, but a friend of mine is a huge fan of coconut. I made this cake for a party in his honor. The recipe was very easy to follow and the result was spectacular. I especially love the 7 minute frosting. MMMM, so good! Although the finished cake was beautiful, once we started cutting into it, it was very crumbly and fell apart quickly. I think I was the only person bothered by that. Everyone else just ate it and raved. Definitely recommend this recipe

This cake is great! but if you are looking for a traditional, fluffy light coconut cake you won't get it here. This cake is deliciously dense, sort of like a good vanilla wedding cake. I agree there isn't enough coconut flavor here, so add more grated coconut in the filling and a little coconut extract in place of vanilla (be careful though, coconut extract can taste very fake!, use moderately). The frosting was easy, and I had to use a hand whisk because I was at a cottage without a electric mixer, one tired arm , but well worth the trouble!

The coconut icing was amazing. The cake was definitely dense. I did have some of the filling left which may have made a difference if I had used it all. It was sort of strange to ice the top of the cake when there was filling all over the top of the cake.

Alright, I know this one can be tricky. Just make sure you follow the recipe exactly. Grease and flour the pans well, and MARINATE the cake for at least 2-3 days, covering it well in the fridge. I did this, and the cake was just beautiful and tasted awesome. I made it for my husband's birthday. That filling is to die for. Mmmm. And the icing is really really good. I thought it was amazing how easy it is to make it. It has a great texture, that's almost like melted marshmallow, and even almost tastes like it. It's a great alternative to regular icing and isn't too sweet. I looked forward to having a piece (or two) everday until it was gone. Everyone did. The flavor of the cake is wonderful. It looked like I had purchased this from a bakery.

This recipe was not only easy but was to die for!!! I made it for the holidays actually for Christmas last year and it was a hit times four. I brought some to work because I just had to share with my co-workers and they ate it like a pack of hungry wolves saying it was the best cake they have ever tasted. I did omit a few ingredients and put my own in there such as cream of coconut for the sugar and coconut extract instead of vanilla and made my own buttercream icing with powdered sugar, butter, coconut extract, and milk. If anyone's cake came out dry that means you were doing something terribly wrong it is impossible to be dry when you have a filling that is somewhat liquid based and in order to get the results you want you have to play with the recipe a bit...if you want more coconut then add more coconut flavor. My cake was so moist that in one day 3/4 of it was already gone the rest went to my job so that says enough about the recipe itself. Now everyone is anticipating me making another one. I do recommend this recipe to everyone to try. It's fabulous.

Oh my goodness, this cake was scumptious. I watch Paula Deen's cooking show daily. I have bought all her cookbooks. I retired in April 2005 and moved from Calif to Alabama. We bought a nice house on 6 acres of land. My neighbor mowed our front yard for us one day with his riding lawn mower, so I wanted to do something nice for him. I have been wanting to bake this cake and this was a good reason to do it. It called for 3 layers, so, in order for me to taste it, I gave my neighbor a two layer cake and we kept one layer for ourselves. It looked so pretty after I put the coconut all over it, just like a snowball. It was delicious, Paula, you are one in a million,thanks again.

This recipe was obviously not tried by food network bec if you follow it, you'll end up w/ a pile of sour cream filling on top of your cake over which you are to spread the frosting. Talk about a mess! The missing direction is that you are supposed to refrigerate the cake for at least a day [and up to 2] before frosting so the filling can soak in. [see p. 120 of "The Lady $ Son's Savannah Country Cooking"] Prep time is seriously misleading as this is not a cake to make and eat in the same day.

Paula Deen's coconut cake is excellent! I made this for my dad, who has wonderful memories of coconut cakes made from scratch by the ladies in his family as he was growing up. I messed up the first cake by using creme de coconut, which I mistakenly thought was coconut milk. That one had to be scrapped. The next I made with regular milk. It was delicious and he has already requested another one.

I found this cake to be moist and delicious. It is not too sweet, I would perfer it to be a little sweeter. I think the secret is not to over cook it. Anytime I didn't have a box of cake mix on hand I would not hesitate to use this recipe. Another thing that I liked is that it makes a 3 layer cake. Who wants a dinky little two layer cake?

The seven minute frosting in a double boiler is very difficult to get right for your average baker. I was very disappointed when I made this cake and the frosting did not come out right. I would not label this cake at an easy baker level.

I simply baked the batter in a 13x9 inch pan. I can't remember how long I baked it; I think I just kept an eye on it after 30 min. I was far too impatient and I only let the filling sit on the cake for 1/2 a day before frosting it (and eating it!) I'd never made a 7 minute frosting before and it was easy and a lot of fun. I always get a kick out of cream or egg whites fluffing up. I've been a coconut cake lover since I was a little thing and this was such a winner! At first I thought the divinity frosting was too sweet, but by the time the cake was finished off a couple of days later all the flavors were beautiful together. I can really see why I should have wrapped the cake with its filling in foil and left it for a few days in the fridge as Paula instructed; I just may never be able to wait three days!

just to let you kow. paula suggests to leave this cake in the fridge for three days when you have added the filling in order for the cake to really soak up the filling. this may be why alot of people are complaining of a dry cake. hope that helps.

I followed the recipe for the cake and filling to a T and it came out wonderfully. I did have some trouble finding coconut milk in the grocery store since it was a new ingredient for me but I found it in the international aisle (Thai). I was concerned when the batter looked more like bread dough when it went into the pans but thirty minutes later the whole house smelled like cake and they were all golden brown. I didn't make the frosting and used two store bought cans instead. I'm not a coconut fan, even the smell turns my stomach, but this cake was great and the coconut lovers in my family went back for seconds. This is going into my book of recipes to make more often.

The cake itself didn't have a strong coconut flavor-I would definitely add coconut extract and coconut flakes. However, it was moist and firm. The filling was absolutely disgusting. The outside frosting was pretty good, especially the next day when it had cooled.

If you made this cake and it came out crumbly you did something wrong! This cake is so moist and delicious!! When you were making the cake, did you sift the flour? Did you add the eggs one at a time, and alternate the flour and coconut milk? Did you leave the cake in the refrigerator for several days to soak up all the filling? If your cake came out dry or crumbly try it again. This cake is AWESOME!

The filling made the cake moister than I like--I would cut back on the quantity. I think it would have helped to toast the coconut for the filling as I did for the frosting. Read all the reviews--I did not see the show and I understand the recipe left out a few tips that Paula included on the program.
