This dish was easy to make and great on the first bite, but any more than that is just too overpowering with the mushroom. Only good as bitsized appetizers.

I made these for a brunch yesterday. They came out wonderfully, even though I nearly messed them up. You have to be careful when cooking the eggs to a "light scramble". It says to do it on high, but that scrambled mine too fast and I had to add two more eggs to make the whole thing "set". I also ended up with more squares than 24, so I chopped my proscuitto slices in half after cutting them into thirds, so I would have enough for all the squares. I honestly thing the 15 minute prep time was made by some super-chef, because it took me alot longer than 15! All in all, it was WELL worth it and very tasty.
