Nice, but I prefer basil pesto.

I made this for my friends and family. We all enjoyed it, although I also make a traditional homemade pesto (with basil, pine nuts and garlic) that I serve with shrimp and I prefer that flavor to this one. Although, this is a very good dish!

MUST TRY

I tried this recipe last night and my boyfriend and I loved it!! It is so easy to make and tastes so good. What I like about this recipe is that you don't need pine nuts; they are pretty expensive. The lemon zests and persely REALLY bring up the flavor well. I added a good amount of kosher salt at the end because it was a bit bland. humm...I can have it tonight again!!

I enjoyed making this meal. I've never used arugula before. It was interesting. I really enjoy this site for many reasons, but mostly for these great recipes. This is a tasty meal that my 3 year old loved. Plus this recipe makes some nice size portions. Three of us ate, and still two good platters left. I also enjoyed the lemon zest.

An easy, simple and refreshing recipe. Love the arugula as pesto. The half cup of olive oil wasn't too much with the amount of pasta involved. Only change would be to increase the garlic, to at least 1 tbsp worth.

Arugula pesto tastes "grassy"

User: Almasa from Durham, NC    User Rating:
Normally Giada's recipes are my favorite; however, I cannot say this was the case with arugula pesto. Arugula pesto was too bitter and "grassy" for my taste. I guess it is an aquired taste.

I just made this for dinner tonight, and it was awesome. It is one of the easiest dinners to make, and it was so inexpensive too. I didn't have the shrimp so I grilled a steak and layed the slices on top of the pasta. It was wonderful. I will be making this one again for sure.

Enjoyed It

Made this recipe for family guests - it was easy and tasted great! The pesto seemed very strong when I made it, but once mixed with the pasta it was wonderful. (I added extra cheese and one more clove of garlic to the recipe.) The lemon zest is a must...it really makes the dish pop!

Like some of the other reviews, my husband and I found this dish a little bland. Even the arugula didn't "spice" it up much. I would definitely make it again, but add more cheese and possibly some hot pepper flakes or more salt & pepper. Also had a problem with the pasta cooling off very quickly, even though the shrimp and pesto were "ready to go" when the pasta was done. It also wanted to "clump together."

I love Giada and I make it a point to try and watch her EVERY day, even when my 5 month old baby would rather have me watch her. I was really skeptical of this recipe but I read the reviews and decided to go for it. I was very disappointed. I also love arugula but it was so bitter I could barely eat it! I tried!

Not a lot of flavor

This dish was "just o.k." -- I expected more flavor from the arugula and really from the shrimp as well. It is nice and easy, though, so if we try it again, I'll add some seasoning to the shrimp and maybe some herbs to the pesto.

Basil vs Arugula
07/31/2006 at 05:19pm
User: SANDRA from Sierra Madre,, CA    User Rating:
First off, I have never cared much for traditional pesto. Using the arugula, for me, made all the difference. And no pignollis. I used what I had - a blend of walnuts and a few tablespoons of pecans. Added the walnuts (toasted slightly) first, and then decided to try a little pecans. It made the taste more complex, a deeper flavor. Also really liked the lemon zest and added more garlic . Want to try adding a few dried tomatoes in olive oil the next time.

Great Dish!

This menu produced a very tasty entree despite the problems I created. At an advanced age I have been forced to learn to cook because the one who cooked for me for many years can no longer do so due to illness. This was my first attempt at pesto, and it was really exciting for me to watch those chopped greens and garlic convert to pesto as I slowly added the oil. The recipe calls for one pound of shrimp. I read some place that a pound was about 36 shrimp. That seemed like a lot (for two people), so I only grilled 18. They looked rather meager up against a pound of pasta. However, since we shall be getting several lunches out of the leftovers, I can grill some more shrimp and add them. I took seriously the admonition to crank up the grill to high heat. I could not possibly have kept those shrimp on for three minutes on each side, or they would be smoke by now. But they turned out to be quite tasty anyway. All in all, it as an exciting and tasty adventure.

This arugula pesto is a wonderful alternative to basil-based pesto we're used to (and certainly lighter without the pine nuts!) The grilled shrimp really add more substance and color to the dish and the lemon zest is wonderful. I added a bit more garlic to my pesto, and I also garnished the dish with about 2 tablespoons of the parmesan cheese. I would make this again in a heart beat. Very simple, and satisfying. My family was pleased.

Oh man, this dish was amazing. I made it for my mom for mother's day, and she LOVED it. I didn't have quite enough arugala, so I used half arugala and half basil for the pesto. It turned out great. And I grilled the shrimp on my grill pan on the stove, also amazing. This one is going in my recipe book for sure.

Loved the pesto, will make it often, especially since it's so easy! I had to "grill" my shrimp in a cast iron skillet because it was raining, but they were still great. I thought the spaghetti with pesto was slightly bland. As another reviewer commented, the lemon zest gave this dish a huge flavor boost - I think I might try using a little lemon olive oil in the pesto next time (I have a whole bottle from Giada's delicious pasta with feta and herbs!).

I made this with my first crop of fresh arugla this year. It was fantastic. I think it would go even better with sweet grilled scallops. I grilled fresh asparagus in the grill pan to serve on the side splashed with lemon juice. My guests were asking for more bread to sop up the left over sauce in the plate.

Arugula Pesto horribly bitter
03/16/2006 at 07:27pm
User: Jill from Fort Polk, LA    User Rating:
My husband and I love arugula, so we thought this recipe would be great. We were severely disappointed as the arugula pesto was so bitter that we could not eat the pasta. Something needs to be added to counter the bitterness. Instead of shrimp, we seasoned flattened chicken breasts with lemon pepper seasoning and kosher salt. We then grilled the chicken and served the chicken sliced into strips over the arugula pesto pasta with the lemon zest. The grilled chicken strips were absolutely delicious, but the pasta had to be thrown away. We love Giada and her recipes, but this one was quite the disappointment.

My husband and I thought that this was a nice recipe. It was quick and easy, with great taste for our lovely midweek dinner. I did make a couple of additions to the recipe. First I took the comments of other cooks and added more garlic (3 cloves total). I also added 2 tablespoons of pine nuts to the pesto. It turned out wonderful. The pasta has great flavor and the shrimp were a perfect compliment. This is a keeper recipe. Thank you Giada for great recipe.

I took several other reviewers' suggestions and combined half arugula/half basil and added 3 cloves of garlic. The end result was still quite bland and dry, even with the addition of the pasta water. I squeezed some extra lemon juice over the pasta, but it wasn't enough to save it. Don't think I'll be making this one again.
