Easy prep and clean up 12/31/2005 at 11:31am User: Mary from Langhorne, PA User Rating: This is a really simple recipe that everyone seems to like. If you used canned tomatoes, I recommend the petite cut diced type. Really good over mashed potatoes or with a nice risotto. Good 'n' easy 12/30/2004 at 08:07pm User: JOSHUA from Lubbock, TX User Rating: This is one of the easiet, best tasting recipes I've tried. Very easy cleanup, too. If you like salmon, give this one a try tonight! Delicious! 12/13/2005 at 09:03pm User: Rachael from New York, NY User Rating: I was a little skeptical about tomatoes and shallots, etc. with salmon -- I tend to make brown sugar/citrus/soy sauce/dijon type glazes for salmon and love that. But I wanted to try something new for a change, and to get rid of some shallots I've had sitting in my cabinets. I'm really glad I did -- this was wonderfully flavorful and healthy tasting! Per another reviewer's recommendation, I served it over couscous. Delicious - this is a great change from my usual type salmon! mixed opinion 12/09/2006 at 12:09pm User: Anonymous User Rating: I made this for my husband and it was wonderful. It was so simple and quick, perfect for a fast and healthy meal. My husband said the seasonings didn't seem to go well with the fish, but I loved it. Delicious 12/08/2004 at 12:52pm User: LINDA from chula vista, CA User Rating: I've made this several times and everyone in my family loves it. Its so easy and quick to make, yet tastes like something you would have at a fine restaurant. So good and easy! 12/04/2006 at 04:38pm User: Anonymous User Rating: I love this recipe! It's now in the rotation. I've also used tilapia as a substitute for the salmon in the summer, and I've also added capers and olives to the tomato mixture other times. It's such an easy way to get fish into your diet! Loved it! 11/30/2004 at 01:29pm User: LAURIE from Charlottesville, VA User Rating: Easy and tastes wonderful!! super salmon 11/28/2007 at 04:03pm User: Anonymous User Rating: this is so easy and healthy, a tasty meal even my 3 year old will eat! So Easy and Delish 11/16/2006 at 01:37am User: Sarinee from Los Angeles, CA User Rating: I love salmon and hate washing dishes so I had to try this recipe. As a cheat I just spooned some restaurant style salsa on top instead of the ingredients since I figured the salsa had most of what was required anyway. The salmon turned out great! So moist and tender and full of flavor. Made it twice already and recommended it to my sister too. Easy & Delicious 11/12/2004 at 01:06pm User: Anonymous User Rating: I used parchment paper instead of foil and it turned out very good. Lots of flavor and easy to prepare. Was a little overdone and will decrease cooking time by 3-4 minutes. Better than Bonefish! 11/10/2006 at 08:37pm User: Anne from Charlotte, NC User Rating: Made this for the first time tonight. Used ripe tomatoes, yellow onion, and instead of oregano, used rosemary. Served with lemon spaghetti and a simple salad--great dish! Took all of 5 minutes to prepare and no time to clean up. Tasty with Little Fuss 11/10/2004 at 09:12am User: N from Tucson, AZ User Rating: My family thought this was a very tasty entree. Preparing the salmon in individual foil packets was easy. The simple ingredients of shallots and tomatoes complemented the salmon and kept it quite moist. I substituted tarragon for oregano, and it turned out fine. I baked it for 20 minutes in a convection oven(could have been 17)instead of 25. Wonderful!! 11/08/2004 at 03:13pm User: TARA from Summertown, TN User Rating: I made this for myself and my fourteen year old son and it was a hit!! Easy to prepare. Absolutely Delicious! Not my favorite 10/30/2005 at 09:05pm User: CHRISSY from Austin, TX User Rating: This was okay, but I don't think I'd bother again. I don't know, maybe I overdid the seasonings, but the topping, while delicious, just didn't match well with the salmon in my opinion. My favorite way to serve this is over couscous with a side of asparagus. Delicious and Easy 09/20/2006 at 06:02pm User: IRENE from Bayside, NY User Rating: What a nice and easy way to prepare salmon. I used two pieces of slamon for the recipe and added the extra sauce evenly between the two pieces instead of four. What a delicious dish for a quick meal. Tomato over-kill 09/18/2005 at 08:09pm User: Anonymous User Rating: The salmon was very moist, but the tomato just drowned out the flavor and the dish seemed bland. My fiancee said it was OK, but nothing I'll cook again. Clean-up was very easy. no more restaurant salmon 09/18/2005 at 03:45pm User: Jessica from Newark, OH User Rating: My dad always orders salmon when we're out. Lots of gold stars.... too much thyme 08/28/2006 at 11:42pm User: Anonymous User Rating: For some reason I'm not really crazy about the thyme flavor. The topping wasn't that great, maybe because I used onions instead of shallots (I didn't have any). My husband didn't really care for it, and I ended up eating most of it. It did kind of grow on me after eating it for 2 days. Easy Easy Easy 08/21/2004 at 06:02pm User: HELENE from Park City, UT User Rating: Such an simple recipe that gets great reviews. easy and taste is great 08/21/2004 at 09:08am User: Anonymous User Rating: easy to make , great taste, best way to make Salmon in my Kitchen. Baked Salmon in Foil 08/08/2005 at 01:02pm User: SHIRLEY from CHICAGO, IL User Rating: Giada-Girl, had this Friday and it was excellent! OK, I did add some sun-dried tomatoes and used it's oil on the salmon along with vine-ripe tomatoes, fresh oregano and thyme; the sun-dried kicked the tastebuds.Won't salt salmon next time and will have a little bread to mop the liquids and more tomatoes-had to have some on each piece of salmon.Plan to prepare for Mom at Thanksgiving. Go Giada, Go Giada! The Best Way To Cook Salmon 08/07/2004 at 10:41am User: JOEY from Bowling Green, KY User Rating: At one time, I thought the only way to cook salmon was either on the grill or by smoking with Alder chips. That is until I found this recipe on Foodtv.com. When I saw this recipe, it sounded like it could be good, so I tryed it one evening. The result was far beyond our expectations. As the tomato mixture cooks, it mixes with the natural juices of the salmon. The result is a wonderful, buttery taste that keeps the salmon very moist and tender. There is no need for a dipping sauce with this recipe. super easy 08/01/2006 at 06:46pm User: Anonymous User Rating: I am always looking for new ways to cook salmon. This was super easy and the salmon was so moist. Thanks Giada Good Review 08/01/2006 at 02:54pm User: Anonymous User Rating: The salmon was so, so good. It appears like more work was required of you than actual. And most importantly it tastes delicious. easy and excellent 07/25/2006 at 02:40pm User: Anonymous User Rating: I am happy to say this was one of the quickest ways to prepare swordfish. I think my only mistake was not adding enough salt to bring out the flavors. Even kids like this fish 07/21/2006 at 12:50pm User: Gena from Canton, MI User Rating: My kid's loved this salmon recipe and have asked for more. It is sooooooo easy too! Thanks. Great 07/20/2006 at 08:07pm User: Anonymous User Rating: Delicious and easy recipe. tin foil + tomatoes = yech! 07/20/2006 at 04:53pm User: DAVID from Denver, CO User Rating: I am totally surprised that this recipe received so many favorable reviews. When tin foil and tomatoes or other acidic ingredients make contact the result is inedible. Chemisty 101. The recipe would be fine done in parchment which admittedly requires slightly more work to seal but doesn't result in metalic tasting fish. Delicious! 07/20/2006 at 12:31pm User: Anonymous User Rating: This recipe was delicious! I'm not a big fan of thyme, so i substituted with fresh parsley. I also used fresh oregano instead. Fresh tomatoes are better than canned, but overall, the biggest problem was serving the salmon. After your guests open up the foil, the juices run everywhere and it is a big hastle to open and such. I suggest baking the salmon in a dish and covering the dish in foil. This recipe was very tasty, though. salmon baked in foil 07/19/2005 at 11:50am User: Anonymous User Rating: very good. used red onion instead of shallots and left out the thyme. still flavorfull. i think this recipe would go well w/ halibut and others too. Perfect for the BBQ 07/18/2006 at 11:49pm User: Maddy from Tehachapi, CA User Rating: I used just a pound of Salmon and left the piece whole it's faster and when cooking for just the two of us it works out fine. Excellent and Easy 07/08/2004 at 03:37pm User: LAURA from Marlborough, MA User Rating: I love salmon but I am not an experianced cook. I tried this recipe out for my family and we loved it. I then cooked it for my boyfriend. After eating it, he remarked I was the greatest cook ever. I recommend fresh ingrediants and smaller fillets of salmon. The veggies liven up the salmon and compliment it well. I was unsure which is the "oiled side" to put down on the foil. I generally put the side with the scales down. Delish! 07/07/2004 at 09:45am User: LINA from ARLINGTON, VA User Rating: This was so easy and so delicious! I'd highly recommend trying it! I substitute spinach instead of arugula for a milder flavor. I also add pine nuts. It is delicious, quick, and easy. To save time and money, sometimes I buy frozen, deveined and peeled shrimp. Super Fresh!! 06/19/2006 at 12:10pm User: Anonymous User Rating: Great refreshing way to serve salmon. It was bursting with flavor! You can modify the herbs and veggies to your heart's content. This is also great when you don't know how many people are coming for dinner. Cook a slab of salmon in one piece. Open the foil of the finished dish, put the veggies aside and cut the fish into however many portions are needed. Then put the veggies back on top of the individual portions or serve them in a serving bowl. Phenomenal 05/31/2005 at 08:57pm User: Candice from Charlotte, NC User Rating: This is the first time that I've ever made salmon so, needless to say, I was a little nervous. I served it with couscous. To make it even easier, I just throw everything in a casserole dish and toss it in the oven for 20 minutes. I also use the diced tomatoes that already have Italian spices for some extra kick. It is tender and flaky and so delicious. Definitely a keeper! Excellent and too easy! 05/24/2006 at 12:25pm User: Anonymous User Rating: My spouse asks for this every week; it's become a household favorite and a great way to entice non-fish eaters into a great dish. The diced tomatoes and I used green sliced onions really gave it a kick! I will make this summer again and again. Fast and Healthy! 05/11/2006 at 11:07pm User: Anonymous User Rating: This went together quickly. Excellent flavor with visual appeal. Easy clean up, too! Reviewers who commented that this was bland must have only partial use of their taste buds...or else they need to get some fresher herbs, a real lemon, and some good olive oil! Tried it once with tomatoes w/ diced chilis for my husband who likes some heat but it was just a bit too overpowering. Mabye just a pinch of pepper flakes in the future? Garlic instead of shallots works fine. A can of artichoke hearts makes a nice addition. Thanks for another lovely recipe, Giada! lucious 05/11/2005 at 07:19pm User: ROBIN from sarasota, FL User Rating: This was easy, fast and so good. It was very moist. I didn't have much time and my boyfriend had never had salmon. He loved it. I am also a big fan of Giada and I've yet to not like something she makes. pretty good 05/06/2005 at 04:08pm User: A. from Cumming, GA User Rating: It was better the next day, surprisingly. The best of two recipes 05/05/2005 at 04:50pm User: Anonymous User Rating: This recipe for salmon is outstanding. Giada is one of the best! But I took one of her other recipes and blended the two. I added some spinach under each piece of salmon, then poured about 3 T of white wine around the salmon. Wow, it was outstanding. Hope you enjoy too. Excellent 05/04/2006 at 11:32am User: Anonymous User Rating: This was simple, and came out very moist and tasty. It's a great, slightly different way to prepare salmon. It's simple to prepare and filled with flavor. I used fresh tomatoes. Absolutely delicious! to liz from valencia, ca 05/02/2006 at 10:45pm User: JACKIE from berwyn, PA User Rating: I have not yet tried this, but judging from the review, it will be very very soon...but to address your concerns with using foil...I would recommend using parchment paper instead...I believe the results would be just as good... p.s. I'm giving this a five star rating judged by the many rave reviews...I'm sure I'll agree.... Salmon ala Italiano 05/02/2006 at 07:54pm User: Moniesa D. from Beaverton, OR User Rating: Delicious, easy to prepare and a favorite of the family Delicious 05/02/2005 at 09:46pm User: JOANI from Denver, CO User Rating: Initially I was hesitant about the combination of salmon with tomatoes, but this was delish! It is simple and impressive--will definetly make this again! horrible 05/01/2007 at 11:07pm User: Anonymous User Rating: I love making fish, and it usually turns out fantastic. This was awful. It was watery, and soggy, and added horrible taste to the fish. A Must 05/01/2007 at 05:57pm User: Anonymous User Rating: Incredible and just as incredibly easy! A slight change 04/30/2008 at 02:05pm User: Anonymous User Rating: I didn't like the idea of having so much acidity in aluminum foil, so I made it in parchment. It was a little harder to manage, but still tasted quite good. GREAT 04/30/2005 at 04:38pm User: Anonymous User Rating: We loved the fish It was very tasty Best Salmon Ever 04/26/2007 at 03:02pm User: Shirley from St. Albans, VT User Rating: My entire family from the 4 year old twins to my husband is has never really liked Salmon - loved this dish. So Good! 04/23/2007 at 11:43pm User: Anonymous User Rating: I was not sure about baking in foil or how the tomato would go with the fish, but I loved it. I thought the flavor of the fish came through. The fresh tomatoes did not over power it at all. The foil was fine and made clean up easy. Thanks! YUMMY!! 04/23/2007 at 04:25pm User: Anonymous User Rating: This recipe was quick and yummy. My kids loved it! Good, but... 04/22/2007 at 12:30pm User: Jennifer from Shakopee, MN User Rating: This salmon was very easy, that's for sure! However, while it was pretty good, it didn't have quite as much flavor as I thought it would/as I would have liked... Great, Great, Great!!! 04/19/2005 at 04:34pm User: MORGAN from Valparaiso, IN User Rating: I love this recipe! Baking the salmon in the foil pockets is such a great way to keep the salmon moist and super juicy and the tomato mixure hot and tender. The juices that reside inside the foil are great for dipping the salmon into and you will want to savor every bite. Again, this recipe has a presentation that will make guests think you put more time and effort into the meal than you actually did. This truly is a great alternative to the typical ways of cooking salmon. A+ Easy and very tasty 04/18/2006 at 08:45pm User: Jack from Manassas, VA User Rating: This is a great way to prepare salmon with an Italian flare. We had to cook it a bit longer than the directions; but, you know how it is with these ovens! Thanks GD Easy and Delicious 04/13/2006 at 09:26am User: CHRISTI from Norman, OK User Rating: This was so easy to make and turned out great. I agree that you need to shave a few minutes off baking time, it was a bit overcooked for me. It also needed a little salt and I bet adding minced garlic next time would make it even better. Try that if you love garlic. Super easy 04/09/2006 at 08:31pm User: LIZ from San Jose, CA User Rating: This was a cinch to make and turned out delicious. My husband ate every bite and has already requested I make it again. Great for Entertaining and Camping 04/08/2007 at 05:14pm User: Barbara from Hillsboro, OR User Rating: I've made this recipe many times for both family and friends. It has a great taste, and it can be made up ahead of time, making it a great recipe for entertaining. With so few ingredients, it's also good for camping. I use the extra-wide heavy duty foil to avoid leakage. Very good - 04/08/2007 at 12:54pm User: Anonymous User Rating: Very good and too easy! Great for a weeknight meal. Have done similar dishes with orange roughy and tilapia, added a little chop of a marinated arti heart. Kind of prefer the mediterranean topping with a milder white fish, but certainly can't complain as I love salmon prepared just about any way! Delicious and EASY 04/07/2008 at 06:39pm User: Jennifer from Austin, TX User Rating: This was so easy to make and so delicious. Really easy to put together. Make sure you put the foil packets on a cookie sheet! This might be good with tilapia too! DELICIOUS! 04/06/2007 at 03:40pm User: Catherine from Bettendorf, IA User Rating: My family and I tried this recipe the first Friday during Lent...we continue to eat it almost EVERY Friday evening. Yum! 03/24/2007 at 03:43pm User: Anonymous User Rating: This recipe is easy to make. Perfect over a bed of rice. Great presentation, delicious, and so easy 03/23/2007 at 11:22am User: Megan from Chicago, IL User Rating: This was a cinch to make and really made an impression on our guests! I served the salmon over some simple Olive Oil & Garlic Couscous. Wow! Giada's recipe for Spinach Salad in a Parmesan Frico Cup was a perfect complement. Very moist fish 03/23/2007 at 12:19am User: Anonymous User Rating: I made this exact recipe minus the vegetable on top of the fish and boy what a difference this recipe makes. I also didn't do individual foil packets but put it in one big dish and covered it with foil. Definitely going to be one of our family favorites. Fantastico! 03/20/2006 at 11:24am User: Anonymous User Rating: To die for!!!! Sooooooo moist! 03/17/2008 at 07:04pm User: Johanna from Portage, MI User Rating: I couldn't believe how moist this was! It was a wonderful alternative to the dried out salmon on the grill! I used onions instead of shallots and added some garlic (beause you never can have enough :) ) and it was sooo good! Best Salmon Ever!!! 03/15/2008 at 06:41pm User: Tina from Elk Grove, CA User Rating: I don't particularily care for salmon that much unless it's smoked, so I was primarily making this for my husband and daughter. I was a little skeptical about how the salmon would taste with tomaotes on it, but I wanted to try the baking in foil technique with it. It turned out to be one of the best things I have ever made!!! Absolutley delicious! I used her instructions from her "Everyday Italian" cookbook (which are a little different from these) almost to the letter except for only doing 2 fillets and it was cooked perfectly. The flavors went well together. My husband loved it. It was quite easy and she says the foil packets can be prepared about 6 hours ahead, so I'm going to make this for my daughter's birthday in a few weeks. Simple and Elegant 03/13/2007 at 02:28pm User: Laura from Brookhaven, PA User Rating: This dish was so easy to make and so delicious. The salmon was tender and flaky and the shallot tomato salsa( that is what I call it)was a perfect partner to this dish. Thank you!! Simple and SO delicious! 03/13/2007 at 12:47pm User: Katie from Simsbury, CT User Rating: I made this after reading the recipe in the 'Everyday Italian' cookbook. I had been wanting to cook salmon at home, but was always worried about drying it out. This recipe was fantastic! The salmon cooks in a pouch of liquids and vegetables, and is moist and delicious. I loved it! Very easy but needs more flavor. 03/11/2006 at 03:34pm User: Anonymous User Rating: Very easy but use a little kick in the flavor department. Tasty & Delicious 03/11/2005 at 08:17pm User: JOANNE from Huntingdon Valley, PA User Rating: This dish was so easy. I even got great raves from my in-laws. Really Simple, Really Good 03/09/2005 at 08:42pm User: Anonymous User Rating: This was really easy to prepare. Excellent taste. I think this would be even better in the summer time with fresh tomatoes (I used canned). Would be a great entree to prepare when entertaining because it is so quick and delicious! A Keeper! 03/07/2008 at 12:38pm User: Anonymous User Rating: I've used this recipe many times now and practically memorized it. I prefer using fresh tomatoes it adds a little more flavor than canned. My salmon came out moist and delicious. The only thing I would change is the cooking time. Depending on how thick your salmon is, I bake it for 15 - 18 minutes. Also remember that even after you take it out of the oven, it will still continue to cook a little in the foil. | ||||||||||
