It is not necessary to use so much EVOO, just a splash in the pan (it dilutes the great drippings). Use smaller sprouts or cut larger ones in half so they cook evenly and quickly, no need to parboil. Roasting tends to do that so I think this is a better alternative. There is enough fat in the bacon that I would think there would be no reason to add the olive oil and it keeps the flavor simple. I would like to comment that you should not attempt to "soften" the sprouts in oil - they have a tendency to burn which absolutely ruis the dish - even a slight browning gives the sprouts a burnt taste. Instead caot and warn them in the oil, but braise them to the tenderness you desire in the liquid before serving.
