Definitely a recipe to keep. It's very easy to make, tastes wonderful, and appealed to everyone i served it to (a mix of meat eaters, vegetarians, and vegans). Definitely make sure you use very good oil to dress it and I stirred the basil in right before serving so that it had a fresher flavor. I also served it in a bowl with pieces of picholine olive bread and my guests ate it like a bruschetta. Also, the left overs make a wonderful sandwich with a slice of cheese. Really a keeper! Thanks Giada!

The purpose of antipasti is to stimulate your tastebuds before the meal, waking up the appetite, and making you yearn for more. 'antipasto misto', or mixed antipasto - a little taste of everything: endless choices of vegetables cooked in every way; pickled, roasted, grilled, marinated, baked and fried. Cold meats such as prosciutto and salami are displayed along with platters of seafood salad, steamed muscles, and clams. Not to mention cheese (which can also be marinated), olives, nuts, etc, etc. I marinate tuna, place on a bed of mixed greens, surrounded by veggies that I have prepared in different ways; Italian deli meats, cheese (some I marinate). Follow with light desserts! Serve with red & white wines. Have plenty of pane (bread).

I've made the Red Pepper Salad a couple of times for different events and both times it was a winner. Everyone seems to love these ingredients by themselves so combined, they're even better.

Absolutely wonderful on toast - as an antipasta or just a quick lunch. Colors are gorgeous, too. Definitely worth a try, even if you're not partial to roasted peppers (because neither am I usually, but I've made this three times already!)

Easy and delicious
