I hesitated in trying this recipe for fear of being overpowering, but I was pleasantly surprised! I can't wait to try this rub on other meats. It was delicious! In fact, it will be on my Xmas menu.

I make this rub all the time now and keep it in a jar ready to use. My husband and I love it. It is great with so many things as Michael Chiarello suggests. Try sprinkling some in even when scrambling up some eggs!

Absolutly the best rub known to mankind. I was hesitant at first when pulverising the fennel seed but it paid off in the long run. I sprinked the rub on boneless skinless chicken breasts (which had been brined for 30 minutes in 6 cups of water with 3 Tablespoons of salt). Then I sauteed the breasts in a pan with 2 TBLS butter and 2 TBLS olive oil for 3 minutes a side. Hubby was ill in bed but got out and ate three!!!

rubbed it on some ribs and marinaded for four hours. baked and ate. really good, wife loved it.
