Smoky, sweet, a little hot, but none of the qualities were overwhelming. It's just an excellent, nicely balanced side dish.

Best Way to do Sweet Potatoes
04/18/2008 at 08:59am
User: Andrew from Roanoke, VA    User Rating:
I made this dish to go with a tequila marinated chicken. It was delicious. Not sure many people realize sweet potatoes really aren't that sweet, unless you bury them under cinnamon and sugar like the steakhouses do. The smoky chipotle flavor really goes well with the sweet potato. Even though I reluctantly followed the recipe and used just ONE pepper, my wife and son complained that they were too hot (If you can handle Mild salsa in a jar, then you can handle this). Next time I'll try to remember to add an extra pepper to spite them ;)

these are incredible and quite easy. we did not have a steamer so put the cubed potatoes in a sieve and the othe half of them in a colander over an inch of water. thank goodness other reviewers noted that it is ONE pepper from the can and NOT ONE CAN! :)

I hate candied sweet potatoes, and I was kind of wary of this recipe before I tried it. When I finally got around to making it, it was love at first sight. It was very easy to make, and it's very flavorful and very original. I added 2-3 extra peppers because I really like spicy food, but I think it would also be great even if you make it with 1/2 a pepper. Don't omit the pepper and the sauce completely- they add an amazing twist

awesome technique, not a fan of the Chipotle

I have made sweet potatoes several ways in the past, but never steamed them. I was so surprised on how good the steamed potatoes tasted and the texture was perfect. I made this recipe twice, once with the pepper and sauce and once without. The taste and heat were too much with the pepper and sauce. Next time I will try it with half a pepper and half the sauce. But overall, this is an awesome recipe and technique.

If you really like sweet potates as they are meant to taste

User: Paula from Port ST Joe, FL    User Rating:
This is awesome, fantastic, indescribably delicious. And it is so easy... I loathe those sweet, syrupy, marshmallowy sweet potato dishes that seem to be an excuse to have dessert with the main course. I was bored with the same old baked sweet potato I usually cook. I found this and it was the perfect side for my chicken thigh recipe (Emeril). One chipolte and the tsp of sauce in the can is all it needs. I knew better than to use the entire can, having cooked with them before. It was wonderful. Do not be afraid to try this. You will be surprised and maybe win some converts from the marshmallow generation.

When I made these for Thanksgiving, I tasted it and thought I needed to add some extra spice. I used 2 whole chipotles and extra adobo sauce. Way too much, especially when it got stronger as it set as leftovers! But the flavors were wonderful together. I never would've thought to combine those two things. Next time I'll use the correct amounts. But I DEFINITELY will make these again!!Alton always has the best ideas!

I made this recipe and served it with steak. 'Excellent' cannot even do the recipe justice. I added about 2+ tablespoons heavy cream to the recipe and mixed them in a Kitchen Aid stand mixer until smooth with some lumps. My wife thought they were the best smashed potatoes ever, beating my garlic mashed and twice baked potatoes. I will make these for Thanksgiving to add a little zing to the turkey. Thanks Alton!

User: BRIAN from Bellevue, WA    User Rating:
I followed the directions as-written, but added 1/2 tsp salt, 1/4 cup heavy cream (which I just happened to have in the fridge and needed to be used up) and used two large chipotle peppers, instead of one. My family likes picante and the second chilli gave it an extra bite. Quick, easy, and delicious recipe.

Great heat

User: Anonymous    User Rating:
I've never been a fan of sweet potatoes, but this recipe is wonderful. The chipotles and the adobo sauce add a great dry heat to the potatoes. I didn't have a steamer so I boiled the potatoes, and they came out just fine. Someone asked what to do with the can of chipotles, just put some foil over it and keep it in the fridge, it should keep for a while, add them to whatever you want.

I made this for a dinner party. The people who like a little spice/hotness, enjoyed it. I only used two chipotles out of the can, and trust me, that was enough. I can't see using a whole can, it would be way too much, in overpowering the dish. I would make it again.

User: MICHAEL from glendale, CA    User Rating:
Having never used the chipotle pepper and not knowing it's heat potential, I am embarassed to admit I misread the instructions and used a whole can of chipoltle in adobo sauce and needless to say ruined the first batch of this side dish. I only say this because I read another reviewer that did the same. The second batch was perfect as the recipe clearly says "1 whole canned chipotle pepper," not 1 whole can. Oops. Anyway, this is a very nice way to break the sweet traditional way to make sweet potatoes. Additionally this would be a nice compliment to additional southwestern dishes or to the traditional holiday meal. Way to go AB.

This is such a great and easy recipe to make. If you chop the peppers finely into almost a paste like consistency the heat of the dish is multiplied. Add a couple of peppers and take the seeds out before chopping into a fine consistensy if you want more of the pepper taste and less of the heat. It's a must try and will soon become a real favorite.

At a Thanksgiving potluck I just hosted, in addition to doing the turkey and dressing, I got drafted into handling the sweet potatoes at the last minute. My partner said just go to the store and get something from the deli. But I'd just seen the Sweet Potato episode and figured that I could squeeze in the sweet potato preparation while the other dishes were cooking. Sure enough, it was all done in a matter of minutes. I didn't have time to set up the steamer, but the diced potatoes cooked fine in the microwave with a little water to steam them. The chipotle flavor caught folks by surprise (I only told them I had a secret preparation for them *grin*), but the dish received rave reviews!

I've always thought that the traditional sweet potato dish with syrup, and/or brown sugar and maybe marshmallows was a little too sweet for a side dish. Yummy, maybe, but shouldn't it be served as a dessert? Well, this chipotle mashed sweet potato dish is delicious in a more savory way, with fewer carbs and calories, and so it wins my approval. It's also very simple, you'd have a hard time messing this one up! And yes, in case you're wondering, the natural sweetness of the sweet potatoes shines though anyway. The chipotle and adobo sauce do not overpower it, they just add another interesting dimension.
