If you're bound to, like I was, try this recipe prior to the occasion. We were all very disappointed (after all the work and expense). My neighbor tried it -- we made the brine together and I'm considered a very good cook. My expectations far exceeded the outcome, but I still love Wolfgang.

First let me say I love WP. I rave about him to everyone. Imagine my disappointment at this recipe! Are steps missing from the recipe? Was I supposed to rinse the turkey after brining? The recipe doesn't say to do that. But the turkey was like an oversalty ham. The gravy was unusable. The skin was so salty it ruined my taste for everything else I made. I would never do this again. Believe me - I followed the recipe to a "T".

Loved the Wolfgang Puck Thanksgiving Turkey episode on TV, however website recipe is difficult to follow. Recommendations: (1) decrease amount of salt and brining time, (2) do NOT incorporate pan drippings into gravy or resulting product will be inedibly salty, and (3) add the term "unsalted" before each reference to "butter". My family disliked the gravy due to sodium content (that's never happended before) -- I should have just used stock created from neck/giblets for gravy base and discarded all pan drippings. Prep time and ingredients are too costly for disappointment.

I used to dread eating Thanksgiving turkey. The only thing to save me was gravy. But this turkey is fanstastic! I eat out a lot and this is right on par with what some of the best restaurants can produce! I can only eat Thanksgiving dinner now if I cook this turkey. :)

I saw this recipe demonstrated a year ago....it looked like a lot of steps but the end product appeared VERY tasty on TV. I did it myself and it did take time, but it was the absolute BEST turkey I ever made. I came back again this year to get another copy. Everyone is looking forward to this tasty turkey.

I made this recipe as stated and it wasn't very popular with my family. Though it was very moist and juicy the flavor of the cloves was overpowering to us. Tried recipe again without cloves and ginger, used a little poultry seasoning and herbs (rosemary) in the brine and it was delicious.

I have made this receipe the last two Thanksgivings and plan to use it again this year. My family agrees it is the best turkey they have ever eaten. The brine has a strong oder but it does not overpower the turkey flavor. Very moist!

This is the absolute best turkey I have EVER eaten! There is a lot of prep work involved, but if you follow Wolfgang's directions, your turkey will be a hit. I have used this recipe twice already and it gets better every time. The pan gravy is just phenomenal. I can't say enough good things about this recipe!

This was the best turkey that we have ever had. It was a bit time consuming the day before putting the brine together, but cooking it was a cinch. My hubby isn't too crazy about turkey, but he loved this. Even the outermost layer of breast meat was moist and not dry at all. I did not use the drippings to make gravy with as I felt it might be too salty. I was very worried about the amount of pepper, cloves and salt used, but I needn't have worried. PERFECTION !!!!!

A very delicious bird juicy and sweet. And the gravy this produces is to die for. Unfortunately this brine as well as other (like Alton Browns) ends up coasting much more than the bird itself. (But for the holidays I think its an ok expense). An option to think about...instead of the maple syrup, try a can of frozen concentrated orange juice to make a Honey-orange brine.

We use this brine EVERY TIME we make turkey. I don't know why we only did the baste method before. Once you use this brine, you will NEVER make turkey any other way! I believe it would also be good on any other meat. Beware of the pepper, it will make you sneeze, but I wouldn't take anything out. :)

This is the best turkey recipe I have ever made. However, I used the brine mix from William Sonoma (since I had already purchased it) and continued with Wolfgang's recipe, i.e., added the honey and maple syrup, etc. Stock and gray were exceptional. The turkey was so moist, tender, and flavorful all the way to the bone. Not difficult and worth every step. Comes out of the oven looking like a picture from a magazine. Perfection! Everyone loved and I will definitely make this a Thanksgiving tradition!! Thank you!

Outstanding turkey! This is the second year I?ve prepared my turkey this way and it is always a hit with my family and friends. I double the recipe because I cook a 25 lb bird and I use a cooler to brine it in. So spread the word about this recipe, that way everyone?s Thanksgiving turkey will moist and perfectly seasoned!

I have been making this recipe for 3 years and everyone loves it! Even people who aren't big fans of turkey think it is the best! It is well worth the work. Once you've had this recipe it will be hard to eat plain turkey again. I do not, however, make the gravy.

Not an inexpensive brine by any stretch of the imagination, however, WELL worth the expense. The maple & honey, plus the cloves and ginger, along with sweetness from the apples stuffed in the turkey infused the drippings with an incredible flavor. What a fabulous gravy it produced!I received compliments on the turkey from family members who have never been so forthcoming with anything I've made. (I didn't do the compound butter under the skin - figured just too many flavors already in the mix, and the bird was moist none-the-less.) Between the apples I used in my dressing (Rachael Ray's Stuffin Muffins) and an apple cranberry struesel topped sweet potato dish, I certainly didn't need any dessert. Now who can say that about Thanksgiving dinner??!

First I have to say that I LOVE the PuckMeister (in a very ManlyMan kind of way). The PuckMeister is the best classically trained chef on the FoodNetwork in my opinion. His show is great and I can't understand why it's only on at 4AM once a week! I actually stay up to watch him. Why is he not on more often and at normal hours?! As for THIS recipe, well it was very good. Everything came out perfectly. My only complaint is that all the wonderful flavors completely masked the mild natural flavor of the Turkey. Everyone in my family LIKES the natural flavor of Turkey and it just didn't seem like Thanksgiving without that Flavor & aroma. It could have been any bird and you'd never know the difference. For that reason, I will not cook a turkey this way again. Maybe I'll try Alton's brine recipe that has less added flavorings next time. I want to point out also that if you cook a turkey correctly (use a thermometer), you don't need to brine it to produce a moist result. As for the Gravy ... it is the BEST gravy I've ever had. I'm normally not a big fan of gravy but I couldn't stop eating this gravy. Make sure you season it well with fresh cracked B. Pepper at the end.

I thought my old way of cooking a turkey was the best. This year I was brave and thought I'd try something different. Boy am I glad I did. The tureky was so moist and delicious. I made a chicken with his recipe, in order to try it on my Thanksgiving turkey this year, and it was absolutely delicious, it almost made me feel sorry not having done it in a turkey, the recipe sounds a little complicated, but once you start and if you have place everything is needed handy, it runs rather smoothly. Great flavor, and I am definately adopting his gravy recipe as my own from now on.

I made this turkey, it was only the 2nd time I had made a turkey in my life. It came out so good that my mother in law who has made a turkey for 40 years told me that my turkey was better than hers and she meant it!! Its a lot of work, but worth it. If you want to please your guests this thanksgiving.... I only had one change, in which I covered the Turkey with 2 bags to keep the moisture in. IT was fabulous, your family and friends will be talking about your turkey for the rest of the year.

I started using this receipe about 3 years ago, we used to alternate who does thanksgiving every year, now everybody bring a dish and all I have to make is the turkey, I love it!!! My husband would never eat turkey, he would just have one forkful to be polite, but the first time I made the turkey this way he had 2 helpings!! It's moist and very juicy, I usually use a 20lb bird so I add more water and seasoning, I use a covered storage container to brine the bird. It's the only way I'll make turkey. Make your own turkey stock for the gravy, it's truly worth the extra effort. I usually make that a day or two ahead of time. Happy Thanksgiving!!!

All the flavors are wonderful together. The sweet from the syrup, the savory from the herbs. The herb butter under the skin gives the skin such a wonderful taste and crunch. YUM!! I've used many brines and they all work well to make the turkey moist but this recipe knocks it out of the park. If you want to use stuffing in the cavity like I do instead of the fruits and veggies that'll work too. be sure to use a thermometer if this is your first time using a brine though; The turkey was so moist the first time I thought it wasnt cooked all the way until I checked the temperature.

The best turkey I have made in a long time. The brine smells really sweet and not all that great. The abount of salt was intimidating. It seemed like a lot. These things aside, it was moist and tasty. I have tried a lot of other recipies in the past and have never recieved a result or the compliments I have with this one.

I made my first turkey last year and when I saw the show which showed how to make Brined Roast Turkey with Pan Gravy I felt I could accomplish this dish. As my family came over they smelled the food and where very excited until they found out I didn't use the same ingredients used in the usually spanish family dinners. When it came time to eat everyone had a hasty look on their face until they tasted it. Everyone loved it and asked me where I got the recipe from and if I could give it to them. So my first Thanksgiving came out great thanks to a great recipe.

I have been cooking turkeys for years, and they always have been delicious. However, this was an incredible turkey. Every bit of white meat disappeared that night with family and friends begging to take some home. Moist, tender, and the flavors in the meat were awesome. We have already had this turkey (by overwhelming majority vote) for Thanksgiving, New Years Eve, and now it has won hands-down for Easter dinner. It was not difficult to prepare, and I have already started to incorporate some of the prep and cooking techniques into some other recipes. A Five Star recipe. !!

I substituted sugar for syrup and honey, pepper and garlic for herbed butter and long overbrined my turnkey, but this meal was a killer in two ways. It almost( well not really ) killed me making it and it tasted good enough to kill. Let's face it, turkey is usually bland and forgettable, which is why we make it only twice a year, but this was delicious. The piece de resistance was the pan gravey made from wine. Again, I used local generic red and white instead of Madera and whatever and again, no problem. The gravy was the perfect compliment. I can't wait for the leftovers.

We just made this recipe for Thanksgiving and it came out delicious! I worried about the brine being too salty but the turkey came out just right. I cut down the amounts of the cloves, ginger and a few of the herbs just for personal preference. The flavor and moisture were wonderful! It's a lot of work, and a lot of ingredients but we will definitely make it again.

This turkey was the first one I ever made on my own. My mother thought I was being pretty ambitious as I was only 16. But I loved to cook, so I gave it a try. Surprisingly it was fairly simple and easy to understand. And the turkey was so juicy, moist and full of flavor. It was like no turkey I had ever had before. I've made it every year since.

This turkey took patience to cook, but in the end in turned out wonderfully. Everyone said it was the best turkey they've had. It was very moist and every bit of it was gone by the end of the night.

Made this for Christmas dinner. I brined in a huge pan (designed for deep frying turkeys)so I needed more water. So I also increased the salt and spices. I monitored the bird's internal temperature during baking to make sure it didn't get over cooked. The flavor and moistness of the meat were completely outstanding. The bird was a beautiful brown - where I usually have trouble with overbrowning in spots. I am so grateful that Wolfgang is willing to share his cooking knowledge us. No doubt, that recipe took a lot of work to develop.

Being from Sweden, I've never really come in contact with turkey much, since the meat is generally regarded as dry and boring if you ask most people here. Being basically an american national course I've always wanted to try making a whole turkey myself though, because 300 million people can't be wrong can they? I found this recipe through google, and with all the great reviews it had gotten, it seemed like the perfect recipe. It did take a lot of work. Me and my brother probably put in 4-5 hours work making it not including cooking time. And let's face it, the brime contains more pepper and cloves than most chefs use in an entire year and that can be really intimidating for someone with little turkey experience. But let me tell you, it was all worth it. People were awestruck, most of them had never had real turkey, and this meal blew them away. I'm getting calls several days after thanking me for that dinner, it's all they can talk about. Thanks mr Puck for that amazing recipe.

I made this turkey last year for Thanksgiving and I will be making it for Christmas this year. Last year my family said it was the juiciest turkey they had ever tasted. They talked about it for days after as they made sandwiches from the leftovers. I made this recipe with a 20 lb turkey and it still came out wonderful. The biggest challenge was finding a container big enough to hold the brining turkey. I ended up using a plastic storage container and it worked great. I didn't adjust much for the bigger turkey, just had to use more water and a little more of the spices for the brine. I roasted it until it read 165 and it was perfect.

This Thanksiving my sister wanted to do something a little different. The turkey came out to be very juicy and tender. I did not use 2lbs. of kosher salt because I felt like it would make the turkey too salty (2lbs. is a lot of salt). My only recommendation is to reduce the amount of cloves used (they can be very overpowering and strong). I probably would not recommend this recipe for the perfect turkey.

I wound up brining my 12 pound turkey for about 15 hours and I was a little concerned that, with the very strong brine, the turkey would be too salty or something. It turned out perfect. This recipe turned out the best turkey I have ever roasted. I used the brining method and also the butter and fresh herb rub under the skin, but stuffed the turkey with a family recipe. No one could get over how moist and flavorful this turkey was. My turkey was the main attraction for a change, not the side dishes. I found that the turkey cooked quicker than usual so it was done well ahead of time. After letting it rest uncovered for 30 minutes I wrapped it up in heavy duty tine foil for an addittional 2.5 hours until it was time to carve it. It was still hot and moist and delicious.

I used the brine recipe but used a different stuffing and roasting method (separating and partially boning and stuffing the legs). I have used other brine recipes but this is the best. The flavors were complex (the turkey almost tasted smoked); one or two guests thought the clove flavor was a bit strong but the overall verdict was that this was the best turkey everyone had ever had. I had made brined turkey before so was familiar with the process. This recipe had alot more sweetener that I had previously used and the results were much better. I was a little nervous because my bird was 12lbs instead of the recommended 10. I cooked it a bit longer and when the thermometer registered 165 degrees I figured it was done. Everyone loved it. Oh man, this was the best turkey I've ever tasted in my LIFE!! My sister said the same, it was a hit 100%. The color was like a dark violin, shiny dark brown and beautiful. This is a great recipe in that you can pace yourself, and not do all the work in one day! I began 3 days ahead of Thankgiving, wasn't so frantic by "zero" hour.
