I didn't have fresh tomatoes, so I used canned crushed and fresh basil. I also pounded chicken breasts out, dunked them in flour, egg, then the cheese. Everything came out great! Loved the roasted veggies!

I honestly didn't think this would work. I thought the cheese would burn, but it didn't. Based on a few other reviews, I did lightly flour the chicken first and dip in an egg wash before the cheese. It turned out fantastic! My picky kids had seconds. It's another Rachel recipe that will be a regular in our house.

I took me longer then I hoped that's the only reason I gave it 4 stars instead of 5. Also I was a little confused about the pepper flakes. But the dish was delicous my husband was very impressed. The potatoes were wonderful I'll definitely be using that as a side dish in the future.

I just got married, and needless to say ? I?m not a cook. So I?m trying to add to my repertoire. As a newbie ? I cut out the potatoes ? to many new things at once ? and made just the chicken. It was SOOO easy!!!! And tasty. My only advice is that make sure that your chicken breasts are no more than a ? inch thick. Mine where HUGE, and it took a really long time to cook. (Instead of the 7.5 min. on each side, it ended up being more like 15 on each side) But oh well, I?m a first time cooker ? I?m going to learn those things along the way. Also: I?m a salt addict and was tempted to add salt to the chicken when I was peppering it. But Ms. Ray tells us not to ? and boy was she correct! There?s plenty of salt with the cheese alone! And this is coming from a woman whose dream would be if pretzels and wheat thins started coming in boxes and bags labels ?Extra Sodium.? Instead of adding the tomato topping, per the recipe, I heated up jarred red sauce (ex. Prego, Classico?) and poured it on top right before serving. I felt encouraged at the end that I could handle this whole ? ?cooking thing,? and my husband seemed to enjoy the meal.  I am now a Rachel Ray follower after this experience!

Overall, the flavor was pretty good. I only gave it 3 stars because it took quite a while to prepare. It took me at least 30 minutes just to chop the veggies! The potatoes, peppers, and onions were really good. I pounded the chicken breasts so they were the same thickness throughout and it took a little bit longer that 7 minutes per side to cook because I had to turn the heat down to medium. When I had my skillet over medium-high heat, it burned the Parmesan coating but did not cook the chicken through. I ran out of shredded Parm after 3 breasts and had to use grated on the last one, and it actually turned out better and coated the chicken more evenly. The tomato-basil mixture was really a tasty twist, but I don't think I'll make this again.

The veggies were great but the parm crust got burned when the directions said to keep the heat on the pan high and cook for 7 minutes on one side. I cooked 6 on the other side and the inside of the chix was good but I had to cut off the crust because it was so burned.

Overall, this is a good recipe. I have simply liked other recipes of Rachel Rays a bit better. I found the chicken after cooking to be a bit dry and tough to cut.

The cheese cooked a bit faster than the chicken so I think I may need a not so hot skillet next tyime but the flavor of the cheese was excellent and the tomato/basil garnish added a freshness. Definitely a keeper.

This was a new thing for me. I don't usually do well with dishes like this, but it turned out great! The chicken was so moist and tender and it all had a great flavor! Thank you for a wonderful easy recipe. I will definitely make this one again!

I love this recipe because it's so good and so easy. My husband likes it too and the first time I made it said, "We should make this for company." Tonight, I'm making just the first part - those vegetables make a great vegetarian meal. I'll probably add the raw tomato-basil topping.

Before making this recipe, I scanned the reviews and noticed that dry chicken seemed to be the main problem experienced by most people with this recipe. I tried it, anyway, and did not have that problem. In fact, this dish is wonderful and tasty and the parmesan cheese coating on the chicken is a fabulous complement. Be sure to follow the recipe when it calls for making the pan very hot before adding the chicken -- and be sure to not overcook the chicken. Overall, it is an easy recipe. Just watch that chicken!

This is the second time I've made this version of Parmesan Chicken and it's still great! By following Rachel's instructions (one tablespoonful of oil, and medium high heat) the chicken had a golden crust and was moist and tender. Thanks for making dinner great! Mark Holcomb

This was very good. The chicken was delicious with the tomato basil sauce. The potato side dish was a great accompaniment. I didn't do anything different except flatten the chicken which made it good, but made the chicken cook quicker and didn't quite allow the cheese to come up very well.

It is a great idea, if it only worked. The cheese does not stick to the chicken, but it will stick to your pan!! It does flavor it though, and I have no idea still how she got hers to stick on tv..Good dish, just dont expect it to be like Rachels.

This was a good recipie and really easy to do. The only thing was that it was difficult to keep the cheese on the chicken and also when first putting the chicken onto the hot pan, the cheese tended to brown and become crusty.

I was short on Parmesan cheese so I used 1/4c. of bread crumbs and 1 1/2c. of cheese. Instead of the raw tomato sauce I made a cucumber/tomato/basil salad all from my garden and served it as a side. The flavors were all there. Loved the potatos. I gave it a 4 instead of a 5 b/c I hate frying.

This recipe is soo good- everyone I've made it for loves it. Just make sure you have a good non-stick skillet..spray your pan with cooking spray and use EVOO and it shouldn't stick.

This recipe was so yummy. And on top of that, it was quick and I like quick after a long day at work. I think the best part about it are the potatoes and how fast they cooked. You can make these potatoes with any other recipe for a side dish. This is a must have in the recipe box! PERFECT :)

My husband and I started the Southbeach diet and were looking for recipies to keep the diet interesting. We remembered seeing this chicken dish and tried it. (without the tomato/potato sauce). This chicken dish was easy and awesomely delicious whether I was watching my carbs or not! the paresan was crunchy with such great flavor on the moist tender chicken. you have to try this chicken.

I served this at a dinner party and got rave reviews. It was so easy to make and the parmasan chicken with the tomato/basil salsa was awesome! I used thin slices of chicken breast and dipped them in egg to hold the cheese better. I also added panko bread crumbs to the cheese for an extra crunch! Yum!

The parmesan cheese is the most expensive part of it (besides the chicken), but how unique! I can tolerate a little heat, so I only used half the crushed red pepper it called for...and the potatoes were too hot. Otherwise, great, great, great.

The chicken turned out EXCELLENT. Just like Rachel said.. a little EVOO in the pan, and the chicken cooked like a dream. The parmesan cheese was golden and crunchy (I really packed it on) and the chicken stayed nice and juicy. Tomato and basil really isn't my 5 year old's idea of good... so I let the chicken cool just a bit, cut it into cubes, and tossed it in with a salad and Good Seasons Italian dressing. I have made this twice in 2 weeks and will continue to keep this in our dinner choices! Kraft now makes shredded parm... it is less expensive then getting it at the deli (at least where I live) and it worked great. Thank you, Rachel!

This was great and very easy... Make sure your pan is not too hot or the cheese burns... but it was great hav emade more than once- The kids love it if I put their favorite jared sauce on it ... we call is spaghetti chicken.... The original recipe is a hit with the adults.

The recipe says to cook the chicken over med-high heat... I cooked mine closer to medium than med-high and the cheese still blackened almost immediately. It looks nothing like the beautiful chicken from the show and tastes like burned cheese. I love Rachael Ray, but this was disappointing.

I just finished making this meal not even 10 minutes ago and I love it!! I haven't sat down to eat, but have nibbled and it is so well seasoned. The chicken worked out perfect, I didn't have any problem coating it or it sticking to the pan. The potatoes are filled with so many flavors it's unbelievable. I did add 1 additional thing to the potatoes that wasn't in the menu and that was some garlic powder. I also didn't put anything on the chicken. I am just going to eat it the way I cooked it. I am definitely going to tell some friends about this recipe.

I thought this dinner was delicious - full of flavor and color. I used thin-cut chicken which I liked better. You get more of the seasoning/cheese flavor. Also, I substituted a yellow bell pepper for the green c. pepper. I just don't like any type of green pepper. Anyway, the meal was very colorful and tasty. I'll definitely make this again.

I made this dish complete with potatoes and all. 1. The Cheese did not stick very well BUT IT TASTED FABULOS!!!!! Loved the "crust" it formed. AND I made little mounds of it (the cheese- as she suggested) and ate them as appitizers! Nice with the salsa. 2. I made it with Cilantro instead of basil bcs I forgot to buy the Basil...still turned out great. 3. I could not find the potatoes anywhere so I made with SMALL very small red potatoes and cooked as she told, BUT took more like 30+ mins to cook than 20 ish mins. 4. The Chicken took more like 10 mins on each side ON HIGH to cook. My hubby and I cooked together and even doing that thier is no way to cook this in 30 mins. BUT IT WAS GREAT!!!

My daughter and I love our veggies, but my husband can't stand anything outside of potatoes! What's great about this dish is the ability to seperate the vegetables from the rest after cooking. My daughter and I get all of the great flavors and fresh vegetables, while my husband gets the flavor and none of the texture that he hates. Very fast, very tasty!

I am a novice cook and I felt nervous almost the whole way through while I was cooking. Turned out I had nothing to be nervous about! My roommates and I loved this and the chicken cooked perfectly! I would definitely recommend using an egg wash on the chicken before pressing it into the cheese. Oh and I mixed some Italian bread crumbs in with the cheese and that was a great tip too. So thanks Rachael Ray and thanks to all those who reviewed it before me and gave me great advice!

I'm usually a huge fan of Rachael's recipes, but the parmesan cheese didn't stick to the chicken at all. I made sure that the pan was good and hot like the recipe said, and I wasted a lot of expensive cheese to create a very hard to clean pan with cheese stuck like glue to the bottom of it. The flavor of the chicken was fine, but I won't make this one again. Sorry Rach.

This combination of tastes is wonderful! The chicken is incredibly easy to prepare. As the recipe states...so not add any additional salt...my mistake the first time around. A cool variarion is using crushed or diced canned tomatoes slowly heated with dried basil and marjorammif time is an issue. The potatoes should be prepared about an hours earlier than the chicken so that they can be served together.

The potatoes and peppers mix was excellent, the different flavors mixed well and each bite was a little different. The chicken, however, was a bit dry and the parmesan cheese didn't have much of taste after the 7 minutes of frying. Next time I'm going to bread the chicken, cook for 5 to 6 minutes on each side and add the parmesan at the last minute. Hopefully that'll keep the flaver. Followed by banana cream pie made the meal excellent!

My fussy boys really liked this. The chicken was moist and the cheese formed a nice crust. Followed another reviewer's suggestion and dipped chicken in egg first. The potatoes and the tomato/basil relish also very good. Will use the tomato/basil for bruschetta, too.

I was skeptical of this recipe due to the lack of seasoning for the chicken and the instructions to only use the parmesean cheese. Followed the recipe to a T and it was wonderful. Who knew life could be so simple. The chicken was juicy and had a great flavor. I used both chicken breasts and boneless chicken thighs. This is so simple even a kid could do it. Will definitely fix again. Also the potatoes, peppers and onions were a big hit. Thanks

This recipe was absolutely fantastic!!! The only change I made was that I dipped the chicken in egg first, then in a mixture of shredded parmesean and provolone cheese. I topped it with a store bought bruschetta and I added chopped tomatoes and basil! My family loved it!!! One suggestion..do not touch the chicken until you see it turning brown otherwise the cheese will stick to the pan.

This recipe was fantastic, and very easy to cook. Plus, the foil tip for broiling the vegetables was a great one - cleanup took no time at all! My husband and I loved it, and it's one of the fastest full meals I've ever had. I used a little more olive oil and made three large chicken breasts in one pan. The peppers roasted a little faster than the potatoes, even cut into relatively small pieces. In the future, I might try either broiling larger pieces or just throwing them on a little later in order to make everything cook evenly.

the chicken is outstanding but the real star of this recipe is the baby red potatoes. the pepper and oinion mesh so well and baking them at 500 realy gives them a nice crusted skin and almost mash texture on the center.

I've now made this 3 or 4 times. Each time, I realize things that I could have done to make it better. Add some breadcrumbs to the cheese mixture, makes it easier to saute. Also, you want high heat, but turn it down a bit once the crust has browned. Otherwise, it'll end of burnt.

It took me 45 minutes to make, but that is good for me. I'm not as practiced as Rachel. The Parmesan Crust was wonderfully tasty. The potatoes and peppers were very good. I loved the combination. I would leave out the tomato basil garnish next time though. It looked very pretty but I wasn't crazy about the flavor.

Please do not listen to this recipe as a cookie sheet does not work with the olive oil spilling over the sides in the oven. Smoke filled my entire kitchen because of the poor instructions given with this recipe. If anything, use a baking or casserole dish. The chicken, however, was phenomenal.

i loved the preparation, it was fun & easy to prepare. BUT, even tho the chicken was moist and delicious, all the parmesan burned to the pan, making for messy cleanup. I had fun making the meal, but the chicken bummed me out. i will definetly make this again, using a better pan and more quality olive oil, i guess....

I experiment constantly which is not something my husband is thrilled with because he like coming home to a meal he knows he will like. This experiment worked though!!! We have the chicken a couple times a month...or more! My 1 year old loves it too. I do set the sauce to a simmer while the chicken is cooking, and serve it on the side. Also the chicken doesn't reheat well, so don't make enough for leftovers.

This recipe is up there with my favorites. When cooking the chicken make sure the pan is really hot so this way the cheese doesn't stick, also I found it easier to put a egg wash on the chicken to help the cheese stay on. Other than that the meal was awesome, i made more of a sauce then just some diced up tomatoes, either way its good. The potatoes came out really tasty. I was planning on taking left overs to work but my family ate everything. I will definitley make this again, and i recommend it to everyone!

Parmesan did not stick to chicken, chicken was tough, potatoes did not crisp and the amount of basil in the tomatoe sauce was a bit overpowering. Quite a surprise as I do like all of the ingredients and my cooking skills are well above average. My family's comment was that they would not care for it as a repeat recipe.

I make this at least once a week because it takes me less than 20 minutes. I skip the potatoes and sub in some steamed veggies and I used thin sliced chicken breast (scallopini-esque) because it cooks faster and the cheese seems to adhere more easily. Excellent speedy meal.

The chicken was delicious! Everyone in the family LOVED IT! It was difficult to get the cheese to stick but well worth the trouble. Everyone also loved the potatoes. Great recipie. The only draw back is it took me a lot longer then 30 minutes to get everything prepared and cooked--the potatoes need longer in the oven.

but it turned out GREAT! The smell of the cheese cooking wasn't great so I dumped the cheese in the trash after the first batch was cooking. Totally regretted it because it was juicy and delicous! Even my husbad loved it. The cheese is really salty but the raw sauce toned it down perfectly...this is a keeper! Make to use SHREDDED Parm not GRATED!

I love the flavors in this dish. I'm a huge fan of Italian food and this gives me a lot of those great flavors, but without the pasta so it spices up my cooking. I found it pretty easy to make too without a lot of expensive spices and other ingredients that I don't typically have in my refigerator or cabinent.

I really enjoyed the chicken even though my cheese stuck to the pan and was difficult to clean. I did wash my chicken then applied to cheese without drying it. I will try drying it next time prior to adding the cheese. The tomatoes were yummy with the freshly cut basil. The potatoes were spicy but very good!! I will make this again!! If anyone has any tips to the cheese sticking to the pan please let me know.

I made this dish and enjoyed it alot. I had to cook the chicken a little longer than the recipe specified because of the size of the breasts but they came out great nonetheless. What I did to add extra flavor though was to top the chicken breasts off with the extra grated Parmesan and I then topped that with the tomato and basil. It gave it a great boost of flavor. I will definetely make this recipe again.

I followed the recipe for the chicken and the smoke from the cheese set off the smoke detector. I had to turn on all the ceiling fans on the first floor. I also had to open all windows and the front door because I was determined to follow the cooking instructions to the "tee". I was finally forced to turn down the electric burner to medium heat when my daughter ran into the kitchen choking from the heavy smoke. I must admit the cheese did make an attractive crust but it tasted burnt and salty. I still love the show and watch it religiously.
