I had some fresh bell peppers and was looking for a frittata recipe to use them in. While this one calls for zucchini I thought I would make it with the peppers, garlic & spinach. I also blended dried basil in with the eggs. It was amazing! Blending the eggs was a crucial step to the texture. I served it with salad and it made a perfect dinner.

I wanted to find a fun way to incorporate my garden's abundance of zucchini into a fresh recipe, and this was just right. It was the first time a frittata actually fell onto the plate and didn't get stuck, and it was cooked perfectly. I may add some shallots next time, instead of garlic (not a huge garlic fan in the morning) but with the garlic, it was fabulous. I let the crushed clove sit in the olive oil for just 1 minute and then removed it before adding the zucchini.

hubby and son were having burgers so i decided to give this a try for my dinner and as soon as husband tasted my dinner he ditched the burger idea WHAT A HIT will def make again.

I made this twice so far for two different events. People raved about it and it was so easy. The eggs in the blender really add the right lift to the eggs.

I found this frittata very easy to make, but I would make sure you have everything washed chopped and ready to go, including the egg mixture, before you start cooking. I also added fresh mushrooms and tomatoes. The parmesan cheese makes the dish!

We're on the world tour of omelet and frittata recipes (low carb dieting), and this one is excellent. Difficulty rating is "medium", but I thought it was very quick and easy to make. Well liked by my husband, who usually doesn't care for zucchini.
