I sliced one pork chop into 4 slices and pounded it very thin. This was FAB!!! I make it for guests and they love it. Hint: rinse the capers to remove most of the saltiness. I would however recommend less salt. The lemon and the capers add a lot of saltiness naturally to the dish so less salt would have been more to my liking. I use less butter and capers. I also use chicken rather than veal because of price and quality (its difficult to get good veal cutlets).
