The creole seasoning was something I'd never tried before and it did seem to make a difference. I didn't want to make my own essence so I used one I had in my cabinet (Tony Chachere's Creole Seasoning) and it worked just fine. I felt the overall marsala flavor of the dish was muted. Next time I would either increase the ratio of marsala to stock or just leave the stock out all together. I have followed this recipe exactly the first few times but mixing the Essence was time consuming and I didn't think it keeps well. After awhile, the Essence is just not as strong as when it was first mixed. So, I wanted to find a shortcut. Someone here mentioned that you can use the Emeril Cajun seasoning, the kind you can buy from the supermarket, and it would taste just as good. Well, the supermarkets near me do not carry the Emeril Cajun seasoning but they have the Southwest seasoning, which I think is the next closest thing. So I experimented and it turned out good but I thought it needed more seasoning so I increased it 1-1/2 tablespoon instead of just 1 tablespoon. I also seasoned the chicken with a little bit of salt and pepper before drudging in flour with the Southwest seasoning and the end result was great! This recipe is SO TASTY and DELICIOUS! It's a favorite with my friends, neighbors, and family. This dish is requested quite often and it's fairly easy and great presentation at dinner parties. I just love it! My final test on how things come out is my boyfriends approval. Mind you he will eat anything but if he finishes it that's another story. I seasoned the chicken not flour(for conservation and flavoring purposes),used 2 and 1/2 more of the recommended wine(dry)and stock, added a pinch of salt and pepper,added shallots(onions), substituted baby bella for cremini mushrooms,used only 1/2 of the remaining butter at the end, and the rest; an Excellent dish served along with garlic herb baby red potatoes and sauteed red/green peppers.
