I made these this afternoon, in a huge hurry. They were so easy to put together and tasted absolutly fresh and wonderful! My husband even loved them! I used butter flavored cooking spray to cut out some of the calories of the butter. They were phenominal!

This a great and easy dish. I did not have phyllo but had all other ingredients (actually I used fresh spinach). I served it over pasta and it was unbelievable. All the flavors taste great together. I wish I had some toasted pine nuts and I would have added that also. Thank you!!

Very quick and easy to make. I used puff pastry instead because I had it handy, scooped out the top then replaced it on top of the filling. Looked like something out of a magazine and tasted just as fab.

This dish was excellent! My husband was looking forward to leftovers the next night. I used puff pastry instead of phyllo and added, shallots, carrots, red pepper, fresh basil and parsley. Then I served it with a thyme basil creme sauce. It was sooooo good!!!!

Used fresh spinach and also added some shallot and roasted red pepper like some others. The phyllo was a pain in the tush but worth it in the end. Leftovers were fab as well. My wife and I love these flavors anyway so this is a great and quick way to incorporate them into a delicious and satisfying meal.

My whole family loves this dish. I make it very often. Sometimes, when I'm short on time, I just buy a rotisserie chicken and cut up the chicken breasts, and just add it into the spinach & sun dried tomato mixture & heat it through (I save the legs & thighs for another quick meal). I use low fat feta, it tastes just as good to us. Very nutritious dish!

This is an awesome Recipe. I was having special guests for dinner so I wanted something really special as well as make them feel very special as a guest in my home. They were sooooo impressed at that they thought was the trouble I went through to make them feel like royalty in my home :-) For all the tips many of the other reviews contained - they were an exceptional tool as I prepared this meal. The best tip - remove the phyllo dough two hours ahead of preparation. I would encourage you to simply try it and serve it with the Chic Greek Salad.

The individual portions made for a fun presentation and were really tasty. Phyllo dough isn't as hard to work with as I had thought. I added just a bit more salt and more chicken. Great recipe that I'll make again.

I have made this several times, and have gotten to where I just make Phyllo triangles to save time, but the cups make a much nicer presentation. I also use some cream cheese as part of the feta measurment (did this once when I ran out of feta, and it turned out Very good)

Delicious. I made this for Shakespeare in the Park with friends. Loved it! I suggest you serve it immediately. I made it too early & then had to reheat it, so it got soggy. I didn't add the 2nd box of spinach & only used 1 1/2 of the feta. It was a little too salty but if I'd added the extra spinach it probably would have been fine. I will try this again for the next family party. Thanks Rachel! Great recipe.

I made this filling to go in phyllo cups for an appetizer but filling was bland and unappealing, texture rather dry. So I had to add a lot of seaonsings to jazz this up and allowed to flavor overnight. Next day was still not very good so then added a base of cream cheese and more seasonings. It was then ok but no "wow" factor to justify all of these 5 star reviews. Would NOT depend on this for a main course unless you like bland and unexciting foods and my question then is Why are you searching Food Network for recipes then?

There is no way you can get a recipe that is any better than this for chicken. Even if you don't like all the ingredients they taste great when they are done in this dish!!! Way to go Rachel!!

I've never worked with phyllo dough before. Like other reviewers (I should have read them first) I put too much butter on the phyllo so they came out greasy. The dough kept breaking while I was brushing on the melted butter. It baked very quickly and came out okay. I kicked up the filling a notch by adding lemon juice, garlic powder, roasted red pepper, and Montreal Grill seasoning to the chicken. I found that 1 box of spinach was enough.

Another wonderful recipe from RR. I made this for a Sunday family dinner and it was a huge hit! I highly recommend this recipe. I actually changed the recipe a bit and only cut the phyllo in half to make two cups rather than six. They were delicious and elegant.

Easy to make, keep an eye on the phyllo it cooks really quick. I burned my first batch. The phyllo cups are hard to eat, but I used the 12 cupcake size, and they probably aren't big enough. I found that if I used more layers of phyllo it was easier to handle (cut) as a finished product.

When I made this dish, I made just the chicken and sun-dried tomato part and left out the phyllo cups which was fine. I'd never cooked with sun-dried tomatoes before, but found out that I loved them! The feta cheese and spinach mixes wonderfully with everything. My husband loved it too and he's not a big chicken fan.

My husband loves this. We now call them "spankies" after the spanokita (or however you spell it) that it was patterned after. I never thought my husband, dad, and son would eat anything that had feta, sun-dried tomatoes and such, but they were a big hit. I will have to make these again, again, (by request). They are really good.

I found this recipe to be relatively easy and full of flavour. My roommate first made it for me after seeing it on the show and I've made it myself a few times! Eventhough this recipe uses phyllo, which is a little tricky, because of how you're using it, if you end up cracking of slightly mangling a sheet it really doesn't matter.

This was a very good recipe and makes a very pretty presentation. It is deffinitley not a 30 minute meal due to thaw time of the phyllo dough. Recipe also did not indicate that the chicken should be cooked by itself first and then sliced and added to saute with the onions and garlic. Overall, I loved this recipe and will deffinitley make it again.

My boyfriend made this a couple weeks ago for me, then I made it for my sister. When he made it, he only put 8oz of feta in and it was salty enough. When I made it, I did not salt the chicken when I cooked it. I put 10 oz of feta in and did not salt the phyllo cups and I thought it was just about right with the saltiness. This is a delicious recipe. I would actually recommend making more than six large phyllo cups since you have it out. I love the flakiness and don't overload my cups (which causes them to crack and fall apart). I had leftover chicken mixture and put that in a wrap for work the next day.

We LOVED the phyllo cups with chicken mix! GREAT! Great flavor and easy and fast to make! I do think my phyllo was a bit smaller, cause they didn't quite reach up to the top of the muffin wholes on the 6-muffin pan... hmmm.... I also wish the recipe would have told you to THAW the phyllo before trying to use... having never worked with phyllo before, I tried unwrapping it straight from the freezer and ended up ruining several sheets. Then, since I had the rest of the recipe started, I had to microwave defrost the other sheets. Still not the easiest to work with. EXCELLENT taste, though! A+++

I had a half a bag of fresh spinach and some rotisserie chicken in the fridge that needed to be used, so I ended up making this dish in less than 15 minutes. Didn't have phyllo on hand, so served it over instant brown rice. Absolutely delish! Also crumbled in some queso fresco instead of feta. I don't know how it could get any better, but I can't wait to try it the way it's "supposed" to be made! Thanks, Rach!

I used mini pre-made phyllo cups found right next to the sheets of phyllo dough in the freezer section. They made perfect little appetizers for a party! Just make sure you cut everything into very small pieces, especially the chicken (or you could omit the chicken and possibly add artichokes). Everyone RAVED about them!

Excellent, I even cut the fat by using spray butter flavored canola on the phillo. Instead of whole fat feta, I mixed 1/2 fat free with 1/2 whole fat. It still had tons of flavor.

This recipe is very easy (as long as a kitchen is near by). The phyllo dough isn't too hard to handle and preparation was short. However I have to walk to a kitchen outside of where I live so it took about 15 min. extra to prepare.

I dont do the phyllo cups, we put it in peta bread and have with a tomato, onion and cucumber salad or just on its on. Have frozen whats left and then defrost and have a quick meal when I don't feel like cooking.

In an effort to low cal this option, I omitted the phyllo/butter combo. I sauted the chicken, garlic and onions, added washed off sun dried tomatoes and included half the feta cheese. Once heated through I put this on a bed of fresh spinach. It was the most tasty chicken dish I've had in ages... and easy too!

I am always looking for easy ways to present my food in a creative ways. Serving the chicken mixture in Phyllo cups looked great and the Phyllo added a nice texture and flavor. This recipe was easy and tasted great! I used 4 sheets of phyllo dough, though. They made a sturdier shell for all the filling. This would make a good party appetizer in mini muffin cups, also. You'd need to chop everything a little finer, though.

This was very last minute so I didn't even use the pastry in the muffin pan. I just used the chicken mixture and ate that by itself. It was still delicious. Very fast and easy. It was a big hit with my husband, too.

I tried this recipe without the chicken, and increasing the sun dried tomatoes and spinach a bit. I too found the philo a bit hard to work with - and the one I bought needed a 2 hr thaw time, definately not a 30 min meal! [I don't know if all philo is this way, or just the one they have at my grocery store]. I found the recipe was a bit salty - probably won't add salt to the philo the next time I make this. Fresh spinach worked great. I also used dried bagged tomatoes, rather than that in oil, which worked OK.

This went together pretty quickly. I've never worked with phyllo dough and I was a little intimidated by it, but it was very easy to use. I used fresh spinach because I had a huge bag. I also used boneless thigh meat chicken, because it was cheaper. That was a mistake, as it made the food a bit greasy. So, thanks Rachel for this impressive looking and tasty recipe.

So easy, so flavorful. I threw in some chopped kalamatas just for fun but the recipe stands beautifully on its own. Not to mention, the whole phyllo cup idea is a great trick. (For a side dish recently I made a spanakopeta filling and baked it in phyllo cups...way easier than trying to wrestle with the traditional phyllo wrap).

This was wonderful! I didn't make the phyllo cups. This was a weeknite meal, the cups would be great for a dinner party. The recipe was soooo easy and quick. At the end, since I wasn't using the phyllo cups, I wanted a bit more moisture so I added a dash of marsala wine and incorporated it right before tossing in the feta. Incredible! My "food snob" (discriminating) husband commented several times during the meal about how good it was. I will certainly be making this again, both for company (with the phyllo cups) and for my family. Concerning the ready-made phyllo cups, I haven't been able to find ready made phyllo cups aside from very small appetizer size. I would love to know where to find "cupcake" size pre-mades. At any rate, make the dish, you'll love it!

I made this without the phyllo cups and we LOVED it. I made it for my husband and myself last night and liked it so much that I ate the leftovers tonight! The only thing is that like a lot of Rachael's recipes it took longer than 30 minutes -- but it was worth it!! Definitely a "keeper"!

This is gorgeous and delicious! My boyfriend and I made this for dinner and it took us less than 30 minutes. It was supposed to be a simple Sunday dinner with the family, but with how beautiful the presentation turned out, we ended up cracking open a few bottles of wine! This recipe was FANTASTIC! My husband couldn't get over how delicious it was! When I made it for him, he said that he felt we should be at a restaurant instead of home! And that was after I had to alter the recipe slightly. Our grocery store doesn't carry sun-dried tomatoes or phyllo. So, I used large wanton wrappers and roma tomatoes. I just added the tomatoes at the end so they wouldn't be too mushy! Great recipe, I highly recommend it and look forward to many more!

I am cooking for two, so I decided to skip the cups and make this into a regular spinach pie. I layered the filo on the bottom of an 8x8 pan, baked for a short while (light brown), added the filling and topped off with more filo and put it back into the oven until golden. The filling is unbeatable.

I have made this recipe a number of times now since I first saw Rachael make it and it has been a hit every single time. The first time I made it I used the phyllo cups, but that was the only time. This dish is really enough on its own without the cups, and I think it would even be good in wrapped in lavash or sun-dried tomato tortillas. What a great way to get in your dose of spinach!

I love the filling in this recipe. I love chicken, spinach, sun dried tomatoes, and feta normally, and these combined tasted great. The filling was so easy to prepare. My only complaint about the recipe was making the phyllo cups. I'm a relatively inexperienced cook and completely inexperienced with phyllo so I found them a little difficult. They turned out okay but I'm not sure I'd want to serve them for guests. I thought the filling would taste great in a wrap or pita bread, and I think I'm also going to try the pre-made cups as suggested below.

I made this and substituted the chicken for crab meat. Very good. I also made it the way Rachel did just as good. An even quicker tip... Substitute phyllo dough for phyllo dough cups. Pepperidge Farms makes cups. You take them out of their package, and put them in the oven, and while they are baking you make the filling. Ready to eat in half the time.

I tried this receipe this week for the first time. I was impressed with the distinct flavor the sun-dried tomatoes and feta cheese added. The phyllo cups did burn a little around the edges, so I will reduce the temperature for my oven. My husband and I really enjoyed it. Rachel certainly helps add new tasty ideas to my kitchen.

This dish was delicious and different, and I'm sure it will become one of our favorites. My husband loved it and couldn't get over the impressive presentation. It was the first time I used phyllo dough and even though I tore a few sheets (which I'm afraid I just discarded) and cut the sheets into the wrong size for my muffin tin, the cups turned out crisp and delicious. It was fun. I did make one change to the recipe--I used 1 bag of fresh baby spinach (for 2 servings) instead of the frozen. The fresh spinach wilted so fast I don't think it increased the recipe's cooking time at all and we loved the flavor.

It's not quite as authentic but you can use Pre formed Puff Pastry cups from freezer section instead of Phyllo. Similar form and texture, but goes directly from freezer to sheet pan/oven in less than 15 seconds or less

This recipe is truly great! The tastes and texture are refreshing and filling. The best part, next to the wonderful taste, was that my familly did not complain about all the vegetables they were eating! Everyone was so excited with the look and taste of the phyllo cups that no one minded the spinach. Terrific! My only negative comment goes towards the making of the phyllo dough cups. I found that too much butter on the dough made it too flimsy to work with and shape into the muffin tins. Also, be careful not to put too much butter on the dough that will come to sit inside the muffin tin. My experience was that the dough at the base of the muffin tin did not cook all the way, because of too much butter, and the dough sticking up out of the muffin tin began to brown or even burn too soon. However, after figuring out the right amount of butter, it was all worth it. The meal is really a very tasty treat and great way to get vegetables into dinner guests that ordinarily would avoid them! Thank you!
