The almond paste was way too sweet. It didn't go over well with my family with the exception of my husband. He LOVED it. Only took about 15 minutes to turn golden brown, so watch it carefully. I toasted almonds and sprinkled them on top of the glaze for some extra almond crunch. Would do this again and garnish with a sprinkle of powdered sugar for a "snow" effect and maybe some whole raspberries on top for some color. Otherwise, was delicious! Upon her first bite, my mother in law's smile immediately changed to a frown followed by her asking me where on earth I got this recipe. It was very messy to make, and the almond paste provided a challenge (however, due to my frustration, I used a lot less of it then the recipe called for, and that may cut back on what some other users described as a "too-almondy" taste). I know some people might question the use of crescent rolls for a pastry, but this is a SEMI-homemade recipe, and I happened to like the taste with the raspberry and the icing. It is really sweet though, so I'd only recommend it to someone with a serious sugar tooth! Delicious! I am only a bit confused about which side should I place the bottom and top layer, because I had a slight problem closing the cake. Anyone who has eaten marzipan knows they are very sweat and don't taste very well when they are backed, and to even think of adding sweet jam is disgusting. I substituted this filling with delicious sugar free apricot preserves and diced some dried apricots to cover the preserves. I only did one thin glaze of powdered sugar and covered that with blanched and diced toasted almonds. This recipe was a huge hit. Everyone kept asking who made it and others rushed to get some. I did not use the fruit on top nor did I use the Almond paste. I used cream cheese instead of the paste and in the icing I used Vanilla. I have read the other reviews and do not understand how it turned out bad, maybe it was the cream cheese and vanilla that made the different. Most importantly try this recipe for your self and use the ingredients to your liking. I will make this again and again!
