We liked it with the mustard greens much better. I'd also recommend chopping the greens after cooking. Yummy! I could have easily just picked off the top layer, as the onions, kielbasa and cheese were the best part! I cut down on kale and didn't use the rest of the stock over the top. It definitely sticks to your ribs! In short, this was fine, but nothing special. I did not have a ricer but just hand mashed the potato. The next time I will cut the onion and kale up a bit more. I also used turkey kielbasa and it was just fine. I used turkey kielbasa to cut down the fat factor and it was still great (just had to add some oil to saute the onions in to make them extra carmelized delicious). I also didn't have enough munester cheese and used sharp cheddar with fine effect. I wonder how gouda would be...hmmm... It took me a little longer than 30 minutes to prepare, but boy, is it worth it. If you like good, warm comfort food, this is your ticket. His remark was this" If you are thinking of taking that to someone's house for a potluck, forget it!" I thought it needed something...like maybe a more flavorful sausage or cheese. too many different textures going on in this dish. It would not make a good leftover, because of the broth with the mashed potatoes. Too much work for little flavor. There was a LOT of kale (and I cut it to 1.5 lbs) and it just didn't really have any flavor. My husband ate it but he was just being nice. I'm a bit dismayed by the extremely positive reviews for such a middling recipe. I was expecting more robust flavor but I was disappointed. On the off chance that I make this recipe again, I would beef up the amount of cheese that I used and possibly use a cheese with a sharper, more intense flavor; the muenster is way too bland. I would probably use spicier kielbasa or a jalapeno smoked sausage rather than plain kielbasa. Although the recipe doesn't say to chop the cooked kale, I would strongly recommend that you do so. The chopped kale will distribute more evenly in the riced potatoes. As I said, I thought the flavor was decent but don't expect to be bowled over. I suggest rolling the kale leaves and slicing into ribbons...easier to handle. Next time I would also experiment with either swiss or gruyere. To a previous reviewer, use a masher, but puh-LEASE--- do NOT put potatoes in a processor... you could hang wallpaper with the result! |
