It is quick and delicious and dinner was ready when he arrived. The flavours were amazing and the chicken really tender. It tasted like it had simmered all day. I used regular raisins and some dried apricots. The couscous also had alot of flavour. This will definately become a staple meal in our house. He LOVES it! The kids love it too! When I cook it, I double the prunes and raisins, add some saffron with the spice blend, then stir it well before I let it simmer for a good long time. I often let the sauce reduce to thicken it up. I serve it over Basmati rice instead of couscous. It's good with walnuts as a garnish as well. It may not be a 30-minute meal at my house, but it is a favorite! I love Indian food, and the idea of using spices in such an inventive way is something that i've grown to appreciate (something that your average American doesn't usually incorporate into everyday meals). This was so quick and easy to make... and the best part was the mingling of all the exotic spices and fruits (like a great dance). That they would be such good partners in such a small amount of time was somewhat surprising. My boyfriend and I both tried it together and agreed that this has become one of our once a week "have-to, need it" meals. My only tweek would probably be something to give it a little more kick (maybe more spices all around, or just a little more of one ???). VERY VERY YUM! The couscous cooks quick so a very easy and impressive meal. I added butter to Couscous for taste. I didnt bother with the chutney, as the chicken itself was sweet enough from the prunes and raisins. I also added a littler flour(wondra) to the gravy when I reheated it to give it a little thickness and shine. My company loved the meal and there were no left overs, which is the highest compliment to a recipe. I made sauteed zucchini as a side dish and a second side dish of garbanzo beans mixed with chopped onion, roasted red pepper, olive oil, salt, pepper, a little vinegar and Adobo seasoning, served at room temperature.
