A friend of mine had served this and she had made the following addition and change: she added a bunch of flat leaf parsley (added at the end to the food processor) and she halved the red peppers before placing them on the baking sheet and then peeled them after they were roasted - I used jarred but I swear I can always tell the difference!

I decided to make this even though I was a tad short on the red onion and roasted red pepper and it still turned out fabulous! I also used jarred peppers like some others did. I intentionally left out the tomato paste, fearing it might taste too much like tomato rather than eggplant. To those who claim this recipe is bland, I'd make sure to season your veggies heavily and maybe up the garlic. I'm making it again very very soon! Delish!

Another good one from Ina. I added a few red pepper flakes to it and drizzled olive oil on it when I served. Compliments all around ... would make a good sandwich spread also.

I tasted an eggplant spread at a Green Market held in my town and loved it, but didn't want to spend $5.00 for a small container. I found this recipe and made it that day. I loved it. It was even better than the one at the green market! I am making it again 2 days later.

I loved this recipe. It was so easy and so yummy. I didn't even dip anything in it, I just ate the spread. I bet it would be great over pasta. I used canned roasted red peppers and just put them in the blender with the onions, eggplant and garlic. MMMMMMMmmmmmmmmm.

I added more red peppers, in fact I used canned red peppers which made it super simple and only grilled the eggplant, onions & garlic. It got rave reviews.

I made this for an appetizer, but we loved it and had to force ourselves to stop eating it! I agree it needed just a bit more flavor, so I added 1/2 teaspoon of red pepper flakes. Perfect with baked pita chips.

What a great recipe. I was worried that it will turn out bland so I added one extra clove a garlic and a little more pepper. The spread was gone in two days. It tastes just like the one I buy at the Middleastern surpermarket by my house, except it's better, fresher and costs half the price. It's great on eggplant sandwiches too. Great and easy recipe. As a matter of fact I will make it this weekend for a bridal shower.

This is the easiest and best all purpose dip/spread--useable in all situations. My heavy meateaters love it and I can serve it to them and the vegans simultaneously! Ina Garten always delivers with recipes that are relative simple and always elegant and super flavorful. This is one of her best!

I made this as a starter to dinner but didn't have the tomato paste so I added in sun dried tomatoes instead with a great result. This dip is slightly sweet and creamy and goes so well on a pita. I'm making it again for a party next week.

This is the best dip EVER! I serve them with toasted pita chips which I toss and toast with Olive Oil, Salt and Oregano. I constantly make this and everyone raves about it!

I found this to be very tasty. Served it with Mediterranean crackers. Room temperature is best. Careful on the tomato paste, may over power everything else if any more is added than called for.

I wasn't entirely sure how this would taste but I was pleasantly surprised at the combination of the eggplant and red bell peppers. The peppers were not overwhelming at all. It does make quite a bit so am using the extra on sandwiches this week. It was a great spread and will make it again!!

took this spread to a Mediterranean Feast and people scraped the plate.. and I had doubled the batch. It was a great hit... and not sure how it made it out of the house since we could not stop "tasting" it. I added red pepper flakes, rosemary, thyme, and basil to the recipe and roasted the garlic whole.

I am a good cook, so you can trust me! This is a great receipe. I made 3 servings instead of 1 Ina suggests. We had friends for dinner and i served this spread with crackers before dinner. It was gone and everyone in a room asked for the receipe. They did not believe how easy it is; looks and tastes like you spent long time to cook it. Healthy, delicious, flavorfull! thank you so much, we all love it!!!

I made this for our family Easter barbeque, with a couple of slite modifications. Instead of tomatoe paste I used sun dried tomatoes packed in olive oil. Also I added fire roasted red peppers. It went over really big, everyone really loved it!!!

The recipe using Tomato Paste is getting rave reviews. It was copyrighted in 2002. She also has a recipe from a 1999 copyright in which she uses tahini and only one red bell pepper. I'm am doing this spread for Easter and would like to know if anyone has tried both versions and what do you prefer. You can view both versions by entering it into a recipe search on this website. Thanks for helping.

I found this dip prepared in my friend's fridge while I was looking for a snack. I couldn't believe how great it was. She told me that it was one of Ina's recipes and I wasn't suprised. Everything I make from her recipes is always fantastic.

My friend gave me all these eggplants this summer and I didn't know what to do with them! I saw this on Ina's show and tried it that night for a party!!! It was sooo sooo good!!! Definalty a keeper! Don't be too scared when the veggies come out of the oven very dark...the are supposed to be that way!!! Very flavorful!!!

I made this spread for a spa day with my girlfriends, little did I know they had a dislike for eggplant. I used two jalapeno peppers to kick it up a bit and absolutely loved it. I ate it for the next week (my family didn't care for it). Great on hot pasta!

This recipe was a cinch and turned out better than I couldve expected! My husband and I loved it so much, we decided to make it our main course! I added parmeggiano and romano cheeses and served it with toasted pita chips rubbed w/ garlic and parmesan. OH MY! I'm planning on serving it at my daughter's bday party since we enjoyed it so much. This is perfect for entertaining (just as Ina said) becuase it cries out to be made ahead and refrigerated so the flavors can meld in the fridge. Trust your instincts on this one, and modify based on your own tastes and what you have on hand. I had a rather large eggplant so I used two red peppers and one yellow plus a roughly chopped jalapeno, seeds and all. Then instead of opening can of tomato paste for just one tablespoon, I had some leftover Romesco sauce that was a delicous flavor note. I also mixed in some chopped parsley to add in a last note of color and freshness. Brava, Ina!

Looked very tasty on tv, and easy to make. Turned out DELICIOUS! I used on grilled chicken sandwiches, as a lowfat, tasty spread instead of mayo. Good way to get your veggies in- maybe next time I will use other veggies (zucchini). I didn't have fresh bell peppers, so I used jarred roasted red peppers & turned out great.

The roasted flavors were excellent - and so, so easy! I used this stuffed in pita with light swiss cheese for lunch a couple of days. I will definately make this again. I did not, however, need to cook it quite as long as recipe calls for.

This recipe is ultra easy to make. We have eaten it as a topper on toasted French bread spread with a little goat cheese, and also as a topping for freshly cooked pasta. The flavor definitely gets more "pronounced" as time passes. I added a small box(single serving box size) of raisins before processing, and also some flat-leaf parsley. We topped our pasta with this as a sauce sauce and toasted pignoli nuts. A newfamily favorite at our house!

I saw this on TV awhile ago and totally forgot to try the recipe out. However, I saw it again today and couldn't resist trying it. I was a little anxious about the taste, especially since on of the reviewers found it tasted kinda bland. After pureeing the ingredients, I tasted the spread, and found it a little bland. But, I reseasoned it with salt and pepper and added a little more of tomato paste and found it very tasty. And I left it on the counter to eat later on and found the taste got better and tastier. Maybe it takes time for the flavors of the veggies to meld together. I will definitely make it again. Next time, may add some red pepper flakes for additional kick!

This spread is wonderful, easy and delicious. The roasted, smoky flavor is great on baked pita triangles.
