This was the first risotto I have ever made and it turned out delicious! The only thing I found with this recipe is that the rice didn't start absorbing any of the liquid until I turned the heat up from a simmer to about medium low heat. Great recipe!

Giada does it again! This relatively simple recipe was the hit of my most recent dinner party. The savory flavor of the porcini mushrooms paired perfectly with the sweet peas and salty parmeggiano romano. Served with a simple tri tip roast, this risotto was the star of the evening. Perfectly creamy and delicious!

Risotto is a favorite in our house, but most recipes are pretty fussy (lots of specialty ingredients) so I don't prepare it as often as I'd like. This recipe, on the other hand, is a snap, because I almost always have peas and mushrooms on hand (not to mention lots of Parmesan cheese!) It's super-easy to prepare and is a wonderful accompaniment to beef dishes, or hearty enough to stand on its own. Another outstanding effort from Ms. De Laurentiis.

This is one of my favorite recipes from Giada. I've made this twice and it came out perfectly both times. I highly recommend making the Arancini di Riso recipe with your leftovers!

This is soo good and fun to make that it's become a staple in my home. My boyfriend's friends come over and are disappointed if they don't find any in the fridge. For a little texture, I use twice as many fresh mushrooms and leave them in large chunks.

giada's recipes are consistently good. this risotto is great, and i made a few modifications. i didn't have any dried porcini on hand so for the mushrooms, i used one pack (8oz) of white and half of a pack of cremini. i found that 6 1/2 cups of broth were plenty also. enjoy!

This was the best risotto I've ever tasted. My future mother-in-law said I should open up a restaurant, but I have to give all the credit to Giada. The recipe was easy to follow and produced great results. The white wine really pulled all the flavors togethre and accentuated the dish.

This was my first crack at risotto, and it was wonderful. I used chicken stock insead of low-sodium broth, and was glad I did. I used the recipe from her cookbook which called for less broth (5 3/4 cups) and it was plenty. (I also had to add a good bit of salt, but that may just be me.) Another amazing recipe from Giada! This will become a staple in our house. Thank you!

I made this last night as a side dish to roasted chicken and asparagus. It was a bit tedius but it was sooo worth it in the end! I added more mushrooms than what the recipe called for and omitted the peas. I also added some fresh parsley at the end for some color. It was very tastey and definitely a keeper! I also had to use more liquid than 8 cups. I'm not sure why, but it still had a lot of bite left to it when all the broth was gone so I added some water to get it to where I wanted it to be! I definitely recommend this! Worth the effort!

I love risotto, and was so excited when I saw this recipe. This was my first time making risotto, and this recipe is sooo easy. It took me exactly the time that it says it would. Next time I make it I'll chop the mushrooms & garlic while the onions are cooking, to save on prep time. The onions also don't need to be cooking for 8 min, even just 3 min is fine. The juices did evaporate as soon as I put in the mushrooms, and I just sauted them for like 2 min. The rice (I used 2 cups) cooked in 30 min, make sure you continually stir it so that it doesn't stick to the pan. I used all the broth. Next time I might try asparagus instead of peas, and baby bella instead of white mushrooms. I will be making Arancini di Riso tomorrow.




Would make it again.

Overall it's very good. Lot's of mushroom flavor with a tad bit of alcohol. It was a bit salty for me since I ran out of low-sodium broth so the other half of the broth was used with regular sodium broth. My husband says the rice was a bit on the hard side. I may just add water 'til softer next time. I'd try this again.

Make no mistake -- this risotto was awesome, and I WILL be making it again. But I have my gripes. Okay so first of all, this took two hours start to finish. Granted, I am a bit of an amateur cook and this was my first try at risotto. But it took forever. In addition, there was no way in hell I was going to add more onions (two cups) than rice (one and a half cups). As a matter of fact, I got sick of chopping onions after about 1/3 of a cup. So I stopped. The directions are a little unclear. When I added the onions, mushrooms and garlic to the butter/oil mixture, the juices did not quite seem to want to evaporate. Consequently, the rice did not "toast" when I added it, because everything was still quite moist. Finally, after standing over the stove stirring for a little over an hour, I decided "this risotto is done, whether it likes it or not." I only added three (MAYBE four ... but no more than four) cups of broth. Certainly not 6 to 8. But after all was said and done, with a nice bottle of pinot grigio (which smelled heavenly when I added it to the risotto), this was an absolutely delicious meal. And there are TONS of leftovers. Well worth the trouble.

You cant go wrong with Giada. My husband told me he did not like risotto but once he tasted it he loved it. I used half chicken stock and half mushroom broth. It made the risotto so rich and yummy. It went perfect with the Chicken Marsala that I made.

This was my husband's first experience with risotto and while he thought it looked thoroughly disgusting in the pot, he really enjoyed it. In fact, he doesn't want me to make any of the other recipes from this episode to use up the remainder because why mess with it when it's already so good? I used a low-sodium chicken broth and found that I didn't need to add any seasoning at the end. I will certainly make it again but I took away a star because toward the end of the cooking process I found that the risotto was really sticking to the bottom of the pot and getting gummy and burned . . . probably not the recipe's fault though

The mushroom flavor is wonderful and the whole dish is just layered with yummy flavors and subtleties. Be careful not to overcook - I went for 40 minutes w/ 8 cups of liquid and found that the risotto turned to mush and didn't have that aldente bite it should. Next time I will do 30 minutes and maybe 6 cups of liquid.

Genius. I love this recipe! I must say that I've never been the best at making regular rice, but there is nothing "regular" about this risotto. It came out perfect my first try. My fiance' is not a mushroom lover and he gobbled it up. We were both so impressed with this dish that I had to stir cool 2 cups immediately and make Arancini di Riso. Guess what? Jackpot twice in one day!

We just finished and enjoyed the risotto. It was fantastic, this was my first time making risotto and I must say that I have always been weary of messing it up after all that work. It only took approx. 45 min to make, easy to prepare and was absolutely delicious! Even my 2 year old picky eater couldn't get enough. We ended up using regular chicken broth(not low sodium) and I couldn't find dried porcini mushrooms so instead we used a dried mixed mushroom package. It turned out perfect. It only soaked up about 6.5 cups of broth. Can't wait to make her suggestions for the leftovers.

This was incredible! My daughter is vegetarian so I used a boxed organic vegetable stock from Swanson which had the same amount of sodium as the low-sodium chicken broth that the recipe called for and it was great. It was very filling and the reheated leftovers were even better the next day. And yes, risotto takes a bit of time to make but well worth the effort!

If you substitute the porcini dried mushrooms for dried chanterelle. I made this with dried Porcini mushrooms the first time. I think they smelled and tasted funky, almost rotten. It was much better with dried chanterelle, more mild flavor. And I love mushrooms by the way.

WOW! This was my first try at risotto and it turned out excellent. It had a rich, creamy texture (if you like it really rich, use lots of parmesan cheese at the end)! It was so hearty and filling. I would definitely recommend this recipe. I used dried mixed wild mushrooms and I tore fresh basil pieces at the end to give it a fresh and authentic Italian taste and appearance. Veryyy goood! Yum

I began tasting this before it was done, and wasn't thrilled, but once I added the cheese and peas at the end it turned out wonderfully. I guess the timing depends on the arborio rice used, mine took a little over an hour to reach the creamy state, but worth it. I think next time, I'll use baby portabellos, I can't get enough of the mushroom flavor. Thanks Giada!

This is a must try. Everytime I make it people are amazed at how good it is. I have had a hard time finding the porcini mushrooms which really make this dish stand out but I have made it without and it is still good.

This was my first time making Risotto, even though I am Italian. I made it for Thanksgiving last year and it was a big hit. Creamy and delicious !! This dish is a breeze to make !

This risotto was so easy to make, and so delicious. I couldn't find dried porcinis anywhere, so I substituted dried chantarelles instead, and it's just as good. My husband isn't a rice person, but he ate most of this dish!

This dish is fantastic! I made it for my boyfriend and I and we both loved it, and he doesn't usually go for mushrooms. It was very easy (even though it does take a little while). I made a few alterations to make it a bit healthier and it was wonderful: 1. I cut the butter in half to only be 1/8 c (1/4 stick). 2. I only used the 10 oz of white mushrooms. 3. I used 1/2 c cheese (vs. 2/3 c). It was so creamy and delicious--a definite keeper!

This was not as hard to make as I thought it would be. I would make risotto again using the basic recipe. I think the mushroom flavor was a little too intense for me. I like mushrooms, but maybe not so many. Try it.

If you read the rest of the reviews you might be inclined to leave out the wild mushrooms or cut back on the onions or peas. Don't. This recipe is so incredibly flavorful and delicious prepared just exactly how it is written. Thank you so much Giada! Love your book!

Recipe was excellent and extremely easy to make. It only took 20 minutes as I halfed the recipe and was using Orzi. I felt like I was back in Italy but didn't have to pay for it. Excited for tomorrow to try the deep fried balls of leftovers!!

Don't change a thing! (less onions is ok though, but 2 cups is fine) Don't skip the peas, intergral part of flavor and color. Worth the extra 10 minutes stirring for the awesome result! I used dried Mushrooms, use the soaking water (after you strain it) add a little chicken stock paste (from Costco) and YUM!!!!

This was the first time we made home made risotto and we will definately make it again. It was so creamy and had a wonderful mushroom flavor. My husband who doesn't like peas even enjoyed them in this recipe. We made the risotto balls the next day and those delicious with the melted cheese inside!

Risotto always appeared too difficult to make, but Everyday Italian's Giada made it look so easy. Amazingly it turned out nicely rich and creamy! And it wasn't difficult although it did take time and attention; I just turned on the music and pulled up a tall stool while pouring and stirring. I love the porcini and pea mix. The recipe was a little intimidating, even after watching Giada & her friend make it several times, BUT IT IS SO WORTH IT! It took some time but ended up being very uncomplicated & yummy tasting. The amount makes enough so that I was able to have leftovers for the Arancini di Riso and Risotto al Salto recipes (which was my intent). The peas gave it a very pretty appearance as well as adding to the flavor. I recommending trying this recipe especially for insecure cooks like myself :-)

This is a fabulous recipe but took much longer than the time indicated. Lots of leftovers and I can't wait to make the rice balls that are made with them. Allow at least an hour and lots of stirring... normal with homemade risotto.

This recipe is wonderful.. I have never eaten risotto, let alone made it.. it was very easy after I had all the ingredients prepared. I had to substite morel mushrooms for the porcini because the supermarket wqs out of them... I also didn't have enough chicken stock so I used some beef stock mixed together.. after adding the peas and cheese, the risotto was creamy and delicious.. I can't wait to eat it with hot crusty bread and a salad.. a must try for everyone

I really don't know what to say other than a Meat and Potatoes man loved it and asked me to look for other such receipes. This is a man who just cant stand "FRU-FRU" food. The timing is right on. The only thing I would change is the chopping of all the white mushrooms. Keep a few sliced whole. As a nice touch and look. The texture was amazing. I loved it and the flavor. Thanks

You have to try this! Don't be afraid of the amount of mushrooms used, it's not overpowering. Just right! The cheese makes it creamy and the balance of the woodsy porcini mushrooms and the brightness and sweetness of the peas complimented each other. I was up north making this recipe and drove 40 miles round trip just to buy the peas because I forgot them and it was well worth it!

I loved how rich and creamy it was. My entire family enjoyed it and I look forward to using the left overs for the fried mozzerella balls. I did not however,enjoy having to constantly watch it by the adding of the broth (busy with kid's and such)... But it was worth waiting for!
