This is by far the best rice pudding I have ever made. I used Grand Marnier insead of Rum. I have made it twice thus far and know that I will keep this wonderful recipe in my "favorites" box. Also, the Vanilla Bean is well worth using....especially if this desert is made for special occasions. My family oooed and aaahed!!!!yummy!!!!

We love rice pudding, and I've tried many recipes. Most use cinnamon, and some in my family are allergic to cinnamon. This recipe is unique in its use of orange and rum. Absolutely wonderful flavor combination - the best we've ever tried. This is the gold standard now at our house.

the sauce and rice tasted wonderful, but I couldn't get the pudding to thicken. I tried it again with 1/2 heavy cream and 1/2 milk, but still didn't work. Maybe less cream than 5 cups, or maybe I'm still doing something wrong. I'll keep trying to perfect this since it has an amazingly great taste

This recipe is great for people who usually don't like rice pudding. This is the only rice pudding that I will ever eat. The orange makes it refreshing and the vanilla makes it a hit! love it.

We were a cinnamon and raisin rice custard family, then we were hooked on cuban style rice pudding with lemon and cinnamon and anise... now my husband is asking for Giada's version every week! The texture was smooth, not too runny at all, and the orange and rum flavors were subtle but fantastic. I imagine that it would turn out a bit runny if you used regular long grain rice or skim milk, but if you follow the recipe exactly, you won't be disappointed.

I've been trying different recipes for this type of rice pudding for years and this one, beyond a doubt, is the best I've ever tasted! This is my first time using the arborio rice for pudding. I didn't have any vanilla beans but used a few drops of pure vanilla at the end of the cooking period. The pudding was rich and creamy and the rum and orange combo was superb!

found that it wasn't rich enough so i changed recipe a little instead of5 cups of milk i used 2.5 of coconut milk 2.5 of whole milkand then 2 teaspoon of captain morgan spice rum whoa!and then used orange zest that's it. no segments(try it)other than that it came out great

It takes a while to make, but it's a wonderful refreshing and fulling dessert. I had to use vanilla vodka instead of rum, but it came out just as nicely. The orange zest makes all the difference.

this pudding is very refreshing, and not to heavy. It would be just right with a fruity white wine after a heavy dinner. for the person below who gave it 2 stars for not having enough rum flavor is being a little harsh. With the exception of baking (where you have to be exact for it to come out right) recipes are just a guide. if you want more rum flavor add more rum, or try using a better quality one. if you want it to be more sweet add more sugar. too thick? add a splash of milk. everyones taste level varies, but unless its to the point where you have to spit it out, no recipes deserve a two lol

Thanks so much for the recipe. I have been trying to make arborio rice pudding for years but it was too thick on rice with no pudding texture at all. This recipe finally gives me the correct amounts of milk needed to create the perfect texture!! It's great comfort food. I omitted the rum and added 1.5 cups of coconut "milk" as a substitute for some of the milk. My family loved it!!

Too expensive for everyday family(vanilla bean-$10.00 for one. Then even though all your recipes are fabulous this one tend to be runny even though I cooked it at the required time. I gave it a 3 because it was excellant taste.

This is not one of the better rice puddings that I have made or tasted. I found it too thick and not creamy enough. Also the grain of the rice had too heavy of a consistancy. I could not really taste the rum; also added rasins as my only change. The orange did have a nice flavor, but I won't make this one again.

This is the best rice pudding recipe I've tried, and I've even tried another one with rum. After trying other recipes, including Barefoot Contessa's, I just thought that rice pudding wasn't for me. But I love Giada's version. What really sets this apart is the orange zest (but don't put in extra! A little goes a long way)and rum. I also like that Giada uses milk instead of cream; cream makes it richer but not necessarily better. Like other reviewers, I also liked it served warm. I heeded their warnings and found that it didn't need to cook as long as the recipe states. This all means that I can have it simmering while I cook dinner and it's ready by the time I'm ready for dessert. So it's an easy and quick dessert as well.

I prefer mine with the orange zest & orange segments, but I also make it without the oranges for my hubby and kids. I usually just make two versions and I add a little more milk so that it stays loose and creamy during refrigeration. It's quick and easy and very refreshing!

This rice pudding is the best! I had never had rice pudding before I made this recipe, so when I tasted it, I was very surprised. It is soooo rich and creamy that I would recommend anyone who makes it to make only a fourth of the batch. The riceness of the cream makes it so you can only eat a few tablespoons at a time. Serve it with orange segments and it helps cut the richness. I would definitely recommend it to anyone who wants to make a good impression!

This was a lovely receipe! It did take longer than the expected - but it was still lovely. I did note that next time I would add a little less sugar - it was really, really sweet - but I also added some groud cardamom and it added great flavour to the dish! Enjoy

I have made this recipe many times and it is one of my favorites. The only problem is that I could eat it all on my own, but try not to. I substitute Madagascar Vanilla Extract instead of the vanilla bean but will definately try using the vanilla bean one of these days. I can't imagine it getting any better!!!! Giada's recipes are always great...

I made this for a dinner party and doubled the recipe for 8 servings. It did seem to thicken fairly well while I was simmering it. However, once it was refigerated for 6 hours, the rice seemed to settle towards the bottom 2/3 of the cup. I ended up stirring each cup before I garnished it with the orange slices. I also don't think it was as thick as it could be. My guests raved about the flavor, but I wasn't blown away myself. This dish takes some time to babysit on the stove and I don't think the effort is worth the result necessarily.

I enjoyed this very much although I did not use a vanilla bean or the dark rum because I didn't have any. Instead, I used a little pure vanilla extract and vanilla flavored rum and it was fabulous. My husband didn't care for the grated orange peel in this but he is VERY picky eater. Will definately make again.

This is by far one of the easiest and best desserts I ever made from the food network. I even left the rum and vanilla bean out and substituted vanilla extract instead and it was still delicious. The important ingredient is the orange zest and slices...it sure adds that extra something to a pretty plain dessert.

This recipe hails as so simple that I could commit it to memory while watching Giada make this; and within minutes after the show, I was eating rice pudding. Next time I make this, I will shorten the time it thickens at end. I believe this is one of those recipes that is done about 5 mins. before it looks like it is. That way it will remain moister even when it sets. The only work involved is stirring.

This recipe was too easy for words. I didn't have DARK rum so I sub.light rum and threw in some grand mariner or however the french spell it. Then for added flavor some cinnamon. For beautiful presentation I layered smaller orange pieces on the bottom, middle and then garnished on top. Yummy! Great recipe Giada!

I've made this a couple of times, and thought it was decent. I definitely preferred it warm, especially with the creamy texture of the arborio rice. I thought the orange zest was really over-powering though. The second time I made it, I cut the zest in half, and still found it to be strong. I would rather have a stronger vanilla and rum taste with a hint of orange, so I will probably cut it down to 1/4 tsp of zest in the future.

I have tried my hand at a few rice puddings and they are just never quite what I am looking for. This is so perfect in texture and flavor. I will admit I was a bit reluctant to try as I have had this recipe for years and just now tried it. I am used to the good old cinnamon and vanilla flavors and just wasn't sure of this combo, but it sounded good enough to print. Now that I have made it, I wish I wouldn't have waited so long! So refreshing and addicting...better than the cinnamon. Use a good fresh, soft vanilla bean which is a far better deal if you buy in bulk online. You will pay $10-$12 for 1 bean in a grocery store and it will usually be crusty and old because no one wants to pay that money and they just don't turn over. Get used to using them and buy in bulk for a dollar or less per beautiful, fresh bean! Worth it! Mine took maybe 20-25 minutes TOTAL to get to its' final destination, so a bit less then recommended and it was perfect. I had to take it off as it was getting quite thick and would have been ruined in the recommended time. Can't wait to run this one by my dad who is a rice pudding fanatic! :) Oh, and we couldn't wait, so we ate it warm (actually a bit hot still) and it was good, but the serving I had for breakfast was cold and the flavors were more distinct...I thought better. Gotta go eat my last helping now for my late night treat! This will be a regular in this house! Enjoy!

This rice pudding recipe is one of the best ones I have tasted. All of the flavors compliment each other very well. The recipe states to cook the rice pudding 5 to 10 minutes longer to thicken but mine took about 15. It was wonderful. I will definitely make this recipe again.
