Of course I knew we enjoyed it, but the real test came when I prepared it for the in-laws, well, "seconds" is always a compliment for me, especially coming from a "meat and potato" type fellow. I did a cross-check here before making it. Good thing I did - the book version calls for a second layer of polenta at the bottom of the dish which would have been way too much (that prepared polenta is expensive, too). I thought this was good - not great - but I'm hoping the leftovers will get better overnight. I also substituted a Mexican seasoning blend for the chili powder. WOW! I added chicken sausages because I knew my son and husband would complain about no meat. It would have been have been fine without it. I froze the leftovers. Today my son was looking for them and was disappoinged they were in the freezer. That's how good this recipe is. I also made the quesadillas. What an easy way to do these! Thank you Rachel Ray! You are my heroine. I'm going to buy all your books now. It was a delicious dinner...and lunch...and dinner again This was my first time cooking with polenta and I will be making this dish again. We actually discovered that the flavors mingled overnight and tasted even better the next day. I will be making this as a cook-ahead dish that I can just heat up on busy nights. I would use roasted red bell peppers next time. If you start the roasting right when you start the recipe, they'd be ready by the time you throw the casserole in the oven. My husband is a rabid carnivore, and didn't complain about it being vegetarian. He also wants me to make it again soon. I had to leave the polenta as I live in a small town and out grocery store did not have it, however, next time I am in the city, I will pick some up and added. Nonetheless, this dish was really good even without it. The Quesadillas turn out really good, but like Rachel Ray says watch you heat as I had my grill a little to hot and my tortillas were a little brown, but were just as delicious. My mom is VERY PICKEY, but she LOVES this recipe. She said anything with cormeal (polenta) is good. It is so easy to make. It is very filling and I love it with cheese melted on there. Try some other cheeses like, white cheddar or swiss, or 6 cheese blend. KEEPER. I HATE zucchini and squash, but it looked so good when Rachael made it that I had to try it! It tasted every bit as good as it looked. I switched up the recipe a little bit though...instead of baking it in the oven, i sprinkled the cheese over top and let it melt in the skillet. I also didn't add the polenta. All my grocery store had that day was "organic" polenta, whatever that is, and the word organic always scares me a little! I didn't miss it though, this dish was fantastic! I'm normally not a fan of chili peppers, but I included them anyway and still enjoyed it! I must agree with others when they say its much better the 2nd or 3rd day. The only modification I made was I used half an onion instead of a whole. Plus, I didn't garnish. Next time I make this, I'll plan on eating it the next day only.
