The mushroom caps made an excellent "bun" and the roasted peppers with cilantro is a must. I used a sharp cheddar (didn't have the "smoked" on hand) and it worked fine. I did not even miss the bread. Also, instead of using ground beef I used ground turkey breast (99%fat free) and substitute the cheese for kraft fat free! I also made my own roasted peppers. This is a good recipe for those who are on Weight Watchers. I did like the idea of serving them on portobello caps--very dramatic. However, for an everyday meal, I would rather use regular buns. Also, if made as the recipe calls for the burgers are huge and take much longer to cook through than the recipe indicates. I loved the Macho Gazpacho salad though. It's a very cool, flavorful, and colorful salad and is particularly good in the summer months. It has just enough spice to add a good flavor without it being too spicey for those (like me!) that can't handle too much spice. Can be made without the jalepenos too for just as good a flavor. The smoked cheese brings the whole thing together. My husband isn't suppose to eat cheese and he says it's just not the same wihtout it. Maybe I put too much onion in..but the hamburger didn't hold together at all.. any suggestions? maybe an egg white will help bind this together next time. Also, the taste was pretty delicious, but I would definitely go lighter on the chili powder and add other extra seasonings. The jalapeno combined with the chili powder made it too spicy. Nice presentation though.
