This is the best salad I've eaten in a long time. I agree with the others that it is best the next day (and the day after, etc.). The dressing is so on target, it really complements the salad. Way to go Rachel!!

This recipe is so easy and is wonderful in place of a "lettuce" salad.

I took this to a family gathering and it was the ONLY dish that was empty by the time folks were done. I watched people who claim to hate any type of vegetable go back for seconds and in one case, thirds!! I love this recipe and I thank Rachael for it!!! Brandi Burlington, VT

It was easy & healthy but wasn't anything too special. I don't like spicy food and would recomend the larger dose of tabasco.

Love that Rachel Ray....she is a wonder in today's cooking. A wonderful way to get your "veggies"!! I might add a little garlic next time. Next time will leave the skins on the tomatoes-- less juicy, but still moist. Might replace green pepper with red pepper..or..combine both. As you can see, a great recipe for creative add-ins or replacements.

Better with time

I always enjoy Rachael's recipes. This one took me by surprise. It wasn't very good the first day. In fact, the large pieces of veggies and lack of flavor were disappointing. However, by day three, YUMMO, as Rachael would say.

Yummy Gazpacho!!!!!

This salad was so easy to make that my husband did all the chopping. The taste was unreal. The best part is that it is so good for you, you don't feel bad about eating all you want. Thanks Rachel!

Always a Hit

I've made this recipe several times, and it is always a hit. If you want to save a little money, you can substitute a regular cucumber for the seedless without the salad skipping a beat. There's such a nice balance between the citrus, red wine vinegar, and tabasco I wouldn't change a thing. If your fortunate enough to have leftovers, the salad is even better on day two.

So easy and great taste

Fantastically Simple!

This was SOOOOOO good! I doubled the recipe. Instead of doubling the red onion, I added Vidalia onion. I also used a mix of green, yellow & orange peppers and added a tablespoon of minced garlic. Talk about yum-O! Even my hard-to-please husband (he usually just says "This is okay") raved over it. I agree with the other reviewers that allowing the salad to sit overnight contributes to the taste.

Great Salad Alternative

I love salads but get bored with the same old greens. I also LOVE gazpacho but my husband was never a big fan, I finally found something we can both agree on. He Loves this recipe and it's just a chunky gazpacho. If there's any left over I puree it and have a classic gazpacho for lunch the next day.

My favorite salad!

I have been making this salad for a while and have to say, it's a keeper. Awesome when tomatoes are in season at the local farmers market. I do use extra Tabasco in it. The longer it sits the better it is. An addition I have recently made is to cube up day old bread, toss with olive oil and bake on a sheet pan to make croutons. When they are still warm grade parmigiana cheese over them. Toss into this salad and you have a sort of Gazpacho Panzanella. Really good stuff! Thanks Rachael!

I brought this to my sister's house for Easter dinner. Since there were about 20 people and about 15 who tried it, I decided on minimum heat. All who tried it enjoyed it. I made it two days in advance as another reviewer suggested and I believe it added to the taste. Quite good!!

This is a great, simple, tasty and obviously very healthy dish. It's a perfect summer dish since the veggies are so fresh and it's best served cold. Of course, it works any time of year. You really can't go wrong with this one...and that's coming from someone who usually stays away from onions. Also great to have around the house for snacking.

Simple and delicious

This is a great salad, I used Roasted Garlic Extra Virgin Olive Oil and it gave it an extra kick to the flavor of the salad, This is a nice change to the regular green salad. And if you are a Diabetic like me, this is a fantastic side dish, it goes great with a fish dish.
