found this recipe by accident and we all love it! Was never one for black bean anything, but this changed my mind. So quick and easy too. Flavor is right on. It's better than anything I've had in a Mexican restaurant.

I had some fresh corn and wanted to make a sassy side dish. I served this with pan fried catfish and mashed sweet potatoes. We loved it. I'll use this easy recipe again!

This one goes in the "keeper" file. I wasn't so sure the first night, but we had leftover so I took some to work the next day. WOW! The flavors had melded overnight and it was awesome! Granted, as someone else noted it lost some of the lime zing, but the way the flavors had come together was tremendous, and I wouldn't have wanted it more "limey". I did make some alterations/additions. I had doubled the recipe due to the number I was feeding. I used twice as much lime juice and 2 more teaspoons of hot sauce, as even the double recipe would call for. I also added a green pepper, 4 green onions, 3 roma tomatoes and several tablespoons of chopped fresh cilantro. I found the amount of salt used really made a difference in accenting the flavors as well. The mix of colors was just beautiful, and the flavor fantastic. Thanks!

I love this salad! I have made it about 4 times since I found this recipe. It is tangy without being too over powering. It's also very easy to whip up at the last minute. I do agree with some of the other reviews that Cilantro does add a great little extra boost to it.

You missed the boat on this one. I made it as written for a group of friends at a barbecue. But it was really muddy--yes, I rinsed the beans. It needed something fresher. And it was screaming for cilantro!! I added cilantro, a little more lime, some seeded sliced English cucumber and an avocado. It was edible, but there was a lot left over and it went down the sink.

Wow! This was amazing, after reading all the reviews I knew it would be great, but it was even better than I thought it would be. I added half of a jalopeno, half of an avocado chopped up and cilantro and it was unbelievable. I used Franks Red Hot Sauce too. Mt boyfriend who is picky with raw veggies scarfed 2 sevings down before he finished anything else. You will not be dissapointed!

What can I say about this recipe? It's super simple to make - it looks gorgeous and tastes fantastic. Never have I encountered such and easy, practically do nothing recipe that came out so darn delish! This recipe takes about 2 minutes to make and people rant and rave about it. You can also put it in a low carb wrap with cheese and melt it. Yum-O! Otherwise, enjoy it as a side dish, or with totilla chips. This is a winner and a keeper.

Like other reviewers, I sauted the onion and red peppers. I used two left over cooked ears of corn, cutting the kernels off and mixing them into the pan. Then added the beans etc. I also added a handful of cilantro which added color and flavor. I great recipe if you adjust it a bit!

This dish is the answer to what to cook on the days when it's too darn hot! It's so versitile, make extra and eat it all week! The longer it sits, the better it tastes! I have put it on romaine lettuce and topped with chipotle ranch dressing for a quick salad. Put it on grilled chicken, in burritoes, stuff a fresh tomato from the garden with it, or dip tortilla chips in it. I added smoked paprika to the recipe for more smokey flavor. This is a new summertime staple in our house!

I made this dish for my post-graduation party--it was so easy and the flavor was excellent (but a bit spicy). I used roasted red peppers instead of regular ones, and added in some fresh chopped cilantro right before serving it. Great with chips as a dip!

I love this recipe because I really hate cilantro and this is one of the few versions that omit it , yet still has *wow* flavor and impact. It is always a hit for the football parties and I always have to sneek a small portion off for us since everyone gobbles it up! It is even better on day 2 after the flavors marry. I loved the salad except that the onions were way too heavy. I would make it again but with half of the onions. I ended up adding a can of diced tomatoes to compensate for the overpowering onions...it helped.

I've made this numerous times, and find myself craving it. When I don't have chipoltle chilies on hand, I use some chipoltle chili powder, to keep the wonderful smokey heat. I have also made a vegetarian version by using soy "ground beef" instead of turkey- still delicious. I also always just mix the shredded cheese with the rest of the filling, so you get cheese with every bite rather than ending up with a glob of stringy cheese on just one side.

I make a similar recipe, only i omit the hot sauce and i put in 1 teaspoon chopped calantro and diced leftover pork, and spoon it on nacho chips. a big hit at my parties

I love this. I have made it several times with great results. I prefer it with tortilla chips, but it is great as a salad as well. I agree with earlier posts that suggest tomatoes and serving it warm. Only complaint I have ever received is that it was too "raw".

I love this salad. I am doing Weight Watchers and this salad is a low pointer and now with core it is really a free food. Not only that it is good for you. I added a chopped avocado, I juiced the lime over it before mixing into the salad. It was a wonderful addition.

We really liked this dish. It was a nice and easy way to eat some veggies. As one of the previous posters mentioned, I also added some celery to the dish and it was delicious. My only suggestion would be to somehow add some more flavor to the "sauce". It needed a little something, but i don't know what.

I made this recipe for the first time a few nights ago and everyone wants the recipe. It's a fast, simple, and inexpensive recipe. It's also a great "what can I bring" dish. You throw everything together before you leave the house and it is ready when you arrive at your destination.

We had a mexican themed party and I made a double batch of this. People scooped it with tortilla chips, ate it as a side dish, and used it as a salsa on their fajitas! There wasn't much left and I got many requests for the recipe - it was almost embarassingly easy! ;-)
