I love this soup! I like to substitute fresh spinach for the escarole. No need to sautee -- I just put a 10 oz. bag of pre-washed spinach in with the simmering broth until it wilts. I sometimes include cooked ground turkey breast as a healthy, hearty addition. I try to use a good quality, organic chicken broth.

My "nonni" made this soup for us all the time. It tasted just like hers! Definitely rinse the beans (the sodium is a bit high) and I reduced the amount of broth for a little heartier meal. I also added about a 1/4" of chicken broth when I added the escarole, I felt it cooked the leaves more evenly and quicker. Good modifications: omit beans and add bowtie pasta and sausage or mini meatballs. And I LOVE escarole, so I always add more to this recipe. Skip the "pinch of salt" and use light/ fat free broth to make it even healthier!

We make this soup at twice once a month when we're too tired to make anything complicated. It's so easy. Sometimes we add two sweet Italian turkey sausage links to add more flavor.

I make this every week now. I've decided to keep all of the ingredients in my fridge & pantry. I usually only need to purchase the escarole. We're all told to eat more beans and this is a great way to do it. The parm is the secret to the great taste. I make a big pot and take it to work. It's so much healthier than a sandwich and much more filling. Add a crusty loaf of Italian bread and you're all set.

I jazzed it up with shallot, red pepper flakes and some mushroom stock(1cup mushroom and 3 c chicken=4 total cups)and a few chopped mushrooms in the sautee process...it still sucked! I only use very quality/expensive oil and parmesan riggiano, very disappointing, wonder why so many people like this!

This is incredibly tasty and very simple. The first time I made it just as the recipe reads. The second time I added a can of fire roasted organic can tomatoes, and I put a toasted crunchy bread with parmesan cheese on the top. With that, it was "over the top". Very, very good!

I've made this many times and have shared the recipe with friends..they all love it! The ease of prep/cook time is outstanding. The only thing I've tinkered with is adding an additional can of beans,and usually double the garlic. The possibilities sre endless...

This is excellent, made with vegetable broth. I used 2 1-inch pieces of good parmesan, cheese and rind, for maximum cheese flavour. Let the soup simmer a bit longer to melt the cheese and it makes the soup creamy and flavourful. Fast, simple and tasty.

I've made this soup three times now and am still amazed that a recipe so simple could taste so wonderful. I've made it with spinach and with escarole and find its a matter of taste. I've also substituted vegetable broth for my vegetarian friends. It always turns out great! Even my picky brother-in-law asked for this recipe!! Way to go, Giada!!

The flavor of this dish is incredible and it was surprisingly filling. I added some precooked asiago cheese and spinach chicken sausage and substituted fresh spinach. I was the envy of my co-workers when I heated the left overs for lunch the next day.

My Mom made this soup practically every Friday in the wintertime all through my childhood. Enjoyed it everytime and look forward to making it now. I haven't even tried this recipe yet but I know it's exactly the same. My Mom called it by it's Italian name for greens and beans.

I have made this many times and each time it has come out GREAT! I also use baby spinach leaves and add shredded chicken from a roasted chicken instead of just escarole and beans. What a wonderful soup!! I only had chick peas on hand and regular chicken broth (omitted salt) so it was a bit salty but still had great flavor. Escarole was very colorful. Can't beat the prep/cook time, will make this often.

Loved that it was so easy and quick. I used a 1/2 lb. of regular kale instead of escarole as that's what my local store had. Still worked out great. I added a small touch of nutmeg to complement the greens, this added a nice flavor. This is an easy, healthy, and inexpensive dish to make that will be a staple for my family this winter!

This soup was really yummy once I added a few things to it. When I finished making it by what the directions said, I didn't like it. It was bland and just tasted like chicken broth. Not good! I decided to add 1 tsp each of oregano, basil, and parsley. I also added half of a chopped onion and a 1/4 of a cup of cream. I used an extra can of beans and extra garlic and it turned out really delicious! My husband who is mostly a meat eater really liked it. It is definately a keeper!

I made this recipe with spinach instead of escarole because that's what I had on hand, and it was really good! The only thing I would do is add maybe another clove of garlic because mine was a tad bland.

I made this soup in no time with swiss chard and it is delicious. The only change I made was using one can of regular broth and one reduced fat and sodium. Just enough salt. I also added pepper. I will make this many times.

I regularly make a version of this but with swiss chard or spinach and usually sauteed onion. For a main dish meal I add italian sausage. I tried this as is but used fresh spinach because that is what I had. It made a nice light quick meal.

A very good soup when you don't have a lot of time. Because of its simplicity the most important part of this soup is the broth. If you have the time to make a homemade btoth rather than using store bought broth it makes this soup twice as good

I made this last night and the hubby said it was not a keeper (frown). I actually liked it a lot! As a female watching her weight I love to find flavorful recipes with little fat (read no butter, meat etc.) to munch on. I made the soup with Crouque Monsieur on the side (Ham and cheese sandwiches using Gruyere for the cheese). He like the sandwiches but wasn't digging the soup...said it tasted to much like her Winter Minestrone recipe I made a couple weeks earlier. Personally I think without a little meat my husband was not goin to be happy. Regardless I'm serving it up again today for lunch and will keep the recipe to make lunches for me during the week. I doubled the garlic (I'm A garlic lover) and topped with a little diced tomato flavored with salt and pepper and I loved it! Flovorful, budget AND calorie friendly...what more could a girl want! Thanks Giada!

My Italian mother use to make this soup but without the beans. This version is tasty, but I did substitute the escarole with fresh spinach, less bitter taste. I Also used extra beans and pureed them in a blender and added to the soup. I think this made it much better. Mom would approve!

The recipe doesn't tell you to cut off the tough ends of the leafs, but Giada says so on the show. You should do it because those ends are a little bitter. Next time, I will try spinach. Other than that, the soup was very good.

We usually love Giada's recipes. Followed this one to the letter, but upon tasting, found it to have no depth of flavor. I would agree with others who commented before me that adding sauted onions/celery with garlic would be an improvement. Also, some spicey sausage or proscuitto would help.

I've never had escarole until I tried this recipe. The ingredients blend well together making a nice light broth, and the mild "bite" from the escarole gives it a good contrast. Will definitely make this often.

Not only was this soup delicious, it was so easy to make. My husband devoured it. I recommend using the real block of Parmesan instead of the other variety. It truly makes a difference in the flavor of this soup. I also liked that it was vegetarian but I didn't feel like it needed meat. My husband usually won't eat it if there's no meat in it, but it didn't seem to matter at all to him while he gulped down 2 bowls. I will be making this again and again! Thanks Giada for another exceptional recipe!

So easy my hubby made it. We sprinkled freshly grated parmasan cheese on top and on our seconds we dribbled fresh lemon juice on top with the cheese. The lemon juice made the entire thing sparkle with flavor. Oh yes, fresh escarole was not available and we used G's suggestion and sub'd spinach, great choice. We did cook it a bit longer as we like the beans well done. It was great as let overs. Next time we'll triple it to ensure leftovers. Add a salad, crusty bread and fruit for dessert and it makes a quick and easy healthy meal.

Absolutely Wonderfull!! I love this recipe. It was soo comforting, and wonderfully filling. This is my favorite recipe from this show to date! DO NOT, i repeat, DO NOT leave out the parmesan or you will ruin the recipe! It seems like it wont change much if you leave it out, but I did once because i was out, and i really couldnt eat the soup without it!

Dear Giada, My 12 year old daughter,(Alisha)and Myself watch your show all the time. We are always looking for something new to try out in the kitchen. Alisha is a Diabetic, Type 2,(Insulin Dependant) so, she is limited to the things that she eats or more important how much of it she eats. It is hard enough to feed our children healthy with todays T.V. commercials. She is home from school today with the Flu and that means I am home from work too. We watched your show this A.M. and we decided we wanted to try your soup. We went to the store and we used bag spinich instead of Escarole and let me tell you we LOVE this recipe. How simple can it be! Best of all, she loved it and now she is sleeping with a full tummy after not eating anythig for 2 days. I was going to rate this soup a 4 until I reheated the leftovers. The flavors were intesified and melded so perfectly. This soup is so easy and cooks in a snap. Very tasty and the parm is definately the secret ingredient that shouldn't be omitted. Once again, Giada provides a WINNER. If you can't have her cook for you personally, at least we have her recipies.

My husband is Italian and grew up eating escarole soup. This is Sicilian style (with beans), he wasn't used to having the beans, but enjoyed it. Next time, for a stronger soup flavor, I will leave out the salt and add a chicken boullion cube. The greens turned out great, we enjoyed this "blast from the past" :)

Since my hubby's Mom pasted away, he does not like trying other peoples bean soup. This was one of his Mom's classic dishes. But, I tried it and he loved it, he even asked for it again. My wife and I love this dish. We have made it 4 times in the last month alone! I changed a few things. We bought one big 48oz can of chicken broth. We also use 4-12oz cans of the GN white beans so we have plenty leftovers. Topping of your bowl of soup with Kraft 3 cheese (Parmesan, Asiago, Romano) in the can makes this dish fantastic!!

This recipe really only takes about 15-20 mins from start to finish. For something so quick and easy it has the most wonderful, rich flavor. My husband was raving about the smell while the garlic and escarole were being wilted. And the piece of parmesan just adds the right amount of cheesy flavor. Definitely a keeper and one I'll use over and over! Perfect for guests, since it's not your everyday soup recipe!

A great variation of this classic soup can be made by sauteing a couple of oil-packed anchovy filets with the garlic (don't worry-they dissolve into the oil and DO NOT give the soup a fishy taste - only a distinct depth of flavor), then, after the soup is finished, add a flaked grilled tuna steak or a drained can of albacore tuna (not the chunk-light stuff that looks like cat food). P.S. Remember to save your Parm-Regg rinds to flavor soups...

The escaroled is surprisingly good in this soup. I thought that it looked like another head of lettuce, but it seemed very different in the soup. Although I make it with prepared chicken broth, a homemade broth would add a greater dimension to the recipe. This is on our family meal rotation plan. Anyone can make it and its a welcome meal.

I had a bowl of escarole soup at an Italian restaurant a few years back and loved it..... when I found a tried this recipe it reminded me of that delicious soup. And the best part..... it is as easy as can be. Once your escarole is washed and cut up ... the hardest part is done. Great find !!
