I have been baking different carrot cake recipes for over 25 years. This was one of the best yet. I prepared the cake for my Christmas luncheon; everyone enjoyed the cake. My mom called to see if I had any left over. My husband also loved the cake. I was skepical about the cocoa but I used it; it was fine, of course. The cake wasn't too sweet, it wasn't heavy and I loved the color and texture.

This Carrot Cake is absolutely fabulous , scumptious for your guest to try during the holiday , You'll make more friends than ever they would be willing to leap montains for a second slice. Actually you should have this recipe already printed out for them as they walk out the door.

This cake took quite some time to make but overall it tasted pretty good. Grating 4 carrots to make my 3 cups took A LOT of elbow gease. The frosting was tasty. I preferred this cake warm with coffee which is how I had it for dinner. it tasted better that way than when I had it earlier in the day. Still not the kind of recipe I was looking for but I tried it because it really had no 'spice' to it. I like carrot cake but not a big fan of spice cake.

First of all, the cream cheese frosting was to die for-excellent! Although the cake was very good/moist, you really couldn't tell it was carrot cake. It lacked that carrot cake taste..

My husband is a very picky eater and loves carrot cake. He really liked this recipe, which wasn't difficult to make either. The only suggestion I have is to chop the pecans a little more than listed. We wished the nuts were a little smaller. I also didn't use the nuts in the cream cheese, and I highly recommend that as well. The other reviews were right about the icing...by far the best.

This has to be the best cream cheese frosting recipe ever!! Perfectly flavored and not overly sweetened. (Unlike Emeril's recipe which calls for an entire box of powdered sugar! Gross!) The cake was very moist with great carrot / pecan flavor. One small change I'd make - reduce the oil from 1 1/4 c to only one cup total. The frosting pulled up much of the outside layer of the cake making for a somewhat unsightly frosting job. I would definitely recommend this recipe to anyone looking for an outstanding carrot cake recipe. Rave reviews from all 15 recipients of this cake.

I didn't really like this cake, it was ok. it did not have that not flavor and tasted to much like peanuts from the peanut oil. it was also to dry. The frosting tasted kinda funky. i won't be making this one again.

This cake is very easy to make. However, I made it twice and the second time I backed down the baking soda to one and one half teaspoons because you could taste the soda in the first batch. I also baked it at 325 the second time and it came out much better, maybe it's just my oven, but that is what worked best, less brown and the nuts do not blacken as much. Icing is very good, best cream cheese icing I have ever had. Everyone loved the cake.

It is delicious!!! It the best carrot cake i ever eaten!!! I did my chages though...I didnt use tha muxh butter for the frosting, jus a couple of tbsp, and I used regular vegetable oil and it tastes delicious. In fact I made a huge change in this cake to make it a healthy cake, but that is a secret...i plan to make another change tom ake it even more nutritios...however, it is delicios just as it is!

This cake was by far the best carrot cake i've ever had! i love the color that the cocoa gave rather than the typical bright orange fake color. delicious. The three layers also made the perfect icing distribute fantastically...truely my new favorite cake:)

The cake was moist and the frosting was incredible! I had a hard time tasting the carrots but the overall flavor more then makes up for it!!!
