Just so you know for when you make it... they couldn't hold up to the heat in the oven while covered in cheese sauce and it came out like a soggy mess...even after 5 min. I did love the flavor of the cheese sauce. Great idea to add salsa verde to it. The cheese sauce did seperate a little though..eventhough i used low temperatures. Using cream/milk should solve this problem Instead of boiling the veggies i grilled them which gave a nice grill taste which i enjoyed. Another negative would be after you put the nachos in the oven; they turn to mush. I had to get extra chips to scoop up the gunk that it turned into and yes i was light on the cheese sauce just for this reason but it still happened. This would be a 5 star recipe if you fixed those two major problems. I used bbq chicken also which was great. I look at a lot of reviews on here and i can't see how people can give some of them 5 stars. I added it inside and on top of them. Instead of jack I used a mix cheese of cheddar, jack and asiago. And, instead of chicken broth I used a vegi broth. It was delicious and will definitely make it again and again. After trying this recipe (particularly enjoyed the Tomatillo Salsa Verde!), and having it be a hit, I used the cheese/tomatillo sauce just mentioned to accompany the chicken/chorizo burrito filling and black bean filling from Rachael Ray's "Build Your Own Burrito Bar" party episode, and added Emeril's Mexican Rice. I wasn't able to use all of the chille cheese sauce because my platter was too small, so make sure that you have a very large platter. But if your only cooking for a few just freeze the remaining sauce and making the nachos in the future will be even easier!!
