This has been a family favorite since we started making it after watching the show a long time ago. I omit rosemary but include chopped dried cranberries. I've been toying with the idea of making this with a small turkey. Any comments? uggestions on cooking times etc?

I made this recipe for the first time 2 years ago and since then I commit to making it at least once a year. I make it a point to share it with the unexpecting dinner guests. Each time I have presented at my table I get rave reviews, the flavors are great. Some of my closed friends hear the "goat cheese" and start to turn up their noses....ah, but the look on thier faces once the take their first bit is truly priceless!

This was a lot of fun to make, although I wish I could see Wolfgang debone the chicken again! :-) I used feta cheese and sundried tomatoes with fresh parsley and didn't make the mushroom sauce. It was delicious!!

Wonderful flavor and very impressive presentation. I was fortunate to have a butcher de-bone this for me. The first time I attempted it, the "butcher" cut it in half for me and sent me on my way to de-bone it for myself. I guess, depending on your area, morel mushrooms may be easy to come buy, in my area, they were $20.00 an ounce, so I substituted a variety of mixtures and it worked out just great. Even for a week night dinner, just get it butterflied and de-boned first and have a great dinner, that's quick and elegant.

I can't really speak on the recipe as written, but here is what I did: I didn't have time to prepare a whole chicken, so I brought cutlets, mixed the goat cheese as described (w/ the addtional of garlic) and rolled them, securing w/ kitchen twine. I browned them in the pan, roughly 8 minutes on each side, then transferred to a 400 degree oven while preparing the sauce as written. My boyfriend absolutely loved the dish and asked to have it added to the "try again" pile. I hope to have some time one weekend to prepare the recipe as written as well!

I give most of the recipes I try four stars if they are fairly simple to prepare yet yield delicious results. The herbed goat cheese (I too mixed mine with minced garlic) gave this chicken an added depth of meaty flavor reminiscent of lamb and earned this dish five stars for treating my partner and me to a fabulous new test sensation. I?ve butterflied and cooked chicken before, but after seeing this episode, I really wanted to try deboning and now that technique has also been demystified. Though the deboned chicken looked kind of mangled when I finished, the meat tightened up after cooking and it really was possible to cook the chicken quickly, though mine took 20 minutes in the oven not 10 as shown on TV and in the recipe. Next I?ll have to try making deboned barbecued chicken on the grill. Removing all the bones allows the chicken to cook quickly while the moisture is retained. And BTW, Wolfgang Puck has become my go-to person for Sunday dinners. I catch his show early on Sundays, head off to the farmers market, and then spend the afternoon cooking and creating delicious meals from his recipes! Thank you, Wolfgang!

This recipe has become a favorite in a short time. The chicken is moist and has a ton of flavor. It was the hit at every dinner party I have hosted so far. It also worked well with Borsin for those who did not care for Goat cheese. Removing the bone was a challenge, but well worth it!! Thank you!!!

I made this dish the other day and it was really great. A little bit of work but well worth it. Great flavor and the mushroom sauce was out of sight.

This is a great recipe. Deboning the chicken was hard so I might use boneless pieces the next time. Also, couldn't find black trumpet mushrooms, chanterelle works well. The cooking times were not accurate, I had to leave it in the oven for 30 minutes. All that said...This is the best recipe!Very flavorful and the chicken was so moiste! I served with couscouse, Yummy!

I used chicken breasts instead of the whole chicken and used Borsin with chives and shallots instead of the goat cheese.Watch the salt if you use Borsin it tends to be salty. Served with egg noodles......

I used feta cheese. Turned out great. The chicken served five and I added to the mushroom sauce. great flavor. My family loved it. Definitely a weeknight favorite.

My family loved this recipe. I added some minced garlic to the goat cheese mixture and boned and stuffed the chicken the night before. When I came home from work the next day the meal was ready in a flash and the presentation was awesome. You have got to try this.
