What was left failed to adhere (had the thinnest possible starch coating) and made a big mess in the oil. tried twice and no change in results other than a bunch of wasted ingredients. The mini man burgers worked great however and are a new favorite when I can find the small buns. The mix only made a thin coating on the dogs, so it gave them a crisp outer shell. But there was no corn flavor or traditional cornbread coating. So good, but definitely not better than a regular corn dog. Also, at 375 our corndogs became brown at only about 60 seconds, so the internal hot dogs ended up being lukewarm at best. I was starting to make your Corn Dogs for lunch one day and ooops I noticed that I had very little flour. I had maybe 2 tablespoons of flour left and stuck. Looking through the cupboards I realized that I had some "KRUSTEZ" PANCAKE MIX. So I replaced the flour with the pankcake mix and WOW WEE, It was AWSOME!!!!! The Corn Dogs came out light and fluffy without taking away from the flavor in any way. The first batch was just a little bit salty so on the next round I left out the salt and it made all the difference. Not ordinary corn dogs, but a whole division of corn dog that I never even knew existed. These babies had style and grace and spice. Well, I ran out and bought a deep fat fryer and all the ingredients. I thought it was super easy to make and they tasted great. I would give these three tips to anyone who cares to read them. 1: I found 4 to 5 minutes in fryer to be a bit too long. I recomend going by color rather than time, unitl you figure out how long it takes in your fryer. 2 to 3 minutes and mine were ready for consumption, and yes, I was using the same temp... hell I even had the same model fryer AB used in the show. I wonder in elevation and/or humidity play a factor. 2: You've got a lot more batter here that you need to make 8 corn dogs... I think we were able to make about 20, and we still had some left, which brings us to the next tip... 3: This batter is not just for corn dogs people. We cooked chicken strips in it. We cooked halibut it in. And after all that, we thickend up the remaining batter with a bit more flour and made sort of Hush Puppie. All delicious. I'd suggest reading reviews to get tips. But, once we got the hang of it - boy were they wonderful. A deep fryer would have also helped but we managed in a large dutch oven. My father, who's heart doc would not approve, drove to my house to down a few without my mom knowing since he loves corn dogs. The jalapenos add a bit of a kick, so don't add them if you're weak of heart. When the batter wouldn't coat completely, I would do an initial coat, then put in oil to just set it a bit, the coat again and they turned out just like the fair! For those of you who said the batter was too thin, maybe you used the wrong size creamed corn can. When I went to get the creamed corn, I automatically grabbed the "regular" size can, but this is a SMALL can of cream corn. The batter was not runny and once you let it set, the baking powder caused it to expand a bit and it was nice and thick. And while you have that oil going, just beer batter some onion rings and throw them in the oil while you're making the corn dogs and you've got a complete meal! Good job Alton! Check the sodium. I think this recipe is meant more for lower-sodium hot dogs, which one wouldn't probably pick up normally. The amount of salt has to be reduced. The coating is thin. Smaller diameter hot dogs tend to work better, but I find double digging in general gives a better coat. Keep some flour on the side, and roll the hot dog around in it after the first dip. I image the creamed corn makes the batter wetter than what I had, so it sticks better than what I had. I had to use a spatula to get the hot dogs coated completely. I also used a Fry Daddy deep fryer so I cut my hot dogs in half and it worked really well. We had really thick chopsticks and they were a great idea, much better than the popsicle sticks my daughter complained about not having for this meal. Your fryer, choice of fat, flour and meal brands, buttermilk type (fat% & brand), creamed corn brand, jalapenjo type and onion processing method all play a bigger part than the show and recipe dictate. A $10 food processor will eschew any tears from onions but can yeild more flavor because they loose less liquid. The distinction between sweet and hot Jalpenos is key, an extra sweet jaly will do no damage and add flavor, but an extra hot will ruin it for the faint of tongue. Also the batter texture must hold the onion, pepper and corn kernels to the dog, while still only lightly coating. Experiment with these factors as well as turkey, chicken, pork or beef franks, the more savory the batter the less fat you may need in the dog (Turkey & chicken - low, Beef and pork - high). Bottom line: When I followed Alton's instructions to the letter I was annointed a corn dog hero. He rules. Since we have kids, I halved the cayenne pepper and dropped out jalapeno peppers, but if you like it really spicy, you could keep those in. Unfortunately, I had a VERY difficult time getting the batter to stick to the hot dog, even after trying coating it with the cornstarch in several differen thicknesses. I finally ended up letting it soak in the batter for a minute or two and then putting a large serving spoon under the dog to keep the batter from dropping off until I could get it in the deep fryer. Since it was difficult to get it to stick, I had to give it a lower rating overall. The leftover batter made TERRIFIC hush puppies, though. I've long been a fan of A.B.'s 'man burgers', but these just came right up next to them. I followed the tip below about slowly pulling the hotdog out of the batter while twisting. Seemed to help. The first ones were a bit greasy. After a few attempts, what I discovered is that I left them in too long. They weren't burnt or anything. They were nice and golden. But I found out they got just as brown with less time. The last ones were just perfect. Minor modification: I did not put in jalapenos because I dislike spicy food. I did put in the Cayenne pepper, but it had no spicy taste in the final outcome. Get your temperature right. Mine didn't come out too hot, but I think that is because I cut out the center portion of the pepper before mincing it. (See AB's chile episode) It came out with a fruity jalapeno flavor, but no heat at all to speak of. I am going to trim the chile less aggressively on the next batch to turn up the heat. I put it in the oil for a minute and then redipped it in the mix and it ended up being totally covered. Hope this helps! I didn't put in quite as much caynne pepper or the jalapenos because I didn't have them, but still turned out very well. I did find that the tempreture was just a little high and cooked the outside too fast, leaving the very middle of the dogs cold, but don't go too low either or the batter just doesn't cook up so well.
