I am born in Trinidad with a Bajan grandparent. As a child my mother frequently made this meal (sometimes she substituted the flying fish). I have said all of that to provide a background on my expertise of this recipe. Cou-Cou need to be molded in a plastic bowl then flipped upside down so that the roundness shape of the bowl appears on top. Please amend this recipe, I feel like food network should only give the public authentic recipes.

Delicious fis dish with flavor and a bit of heat!!!! Looks very appealing on the plate .Great for dinner party fish cooks quickly. I used snapper in mine. I just loved it!!! Andrea Wong Rancho Cucamonga ,Calif.

I am from Barbados, and I just want to ask where did u get this!!!This dish is about simplicity and flavor. Im so tired of peole trying to recreate a classic didhes from the carribbean!!!!!
